  • I love greek food! On this episode I make an AMAZING GYRO MEAT Sous Vide. This is one of the best recipes of 2018 for SURE! To go with it I also made a Tzatziki Sauce that just took this entire episode over the top. By far the best of 2018 so far!
    HOW TO COOK GYRO MEAT SOUS VIDE
    I cooked it for 3:30hrs @ (150°F / 65.5°C)
    * GYRO MEAT INGREDIENTS *
    2 lbs Ground beef (20% fat)
    1.5 lbs Lamb
    2 tbs Garlic Powder
    2 tbs Salt Powder
    2 tbs Dry Oregano Powder
    2 tbs Black Pepper
    1 White Onion
    * TZATZIKI SAUCE INGREDIENTS *
    2 cups Greek yogurt
    1 large cucumber
    4 cloves garlic
    1/2 Lemon
    3 tbsp chopped dill
    salt, pepper to taste and if you want spicy add cayenne.

      I do it like that, a variation on my grandma's recipe. Red vinegar instead of lemon, no dill, no pepper, olive oil until it's extra creamy and finely chopped spearmint and if possible, let it sit in the fridge for a while for flavour to develop.

      Also tzatziki is a little bit...different. We don't put lemon juice but vinegar. It needs olive oil and a lot more cucumber and garlic. Dill is also optional. For best results let it sit in the fridge for at least a day.

      greek here also, Theo is correct it's called doner and it's a total different recipe, also this is the lightest version of tzaztiki the real one is serve with a little bit of olive oil on the top and has three times more garlic NO DILL tho.

    Greek here, loved the video!! Just a few corrections:
    1) Gyros is pronounced : [ʝiros]
    2) Using minced meat in Gyros is banned in Greece as restaurants would tend to mix meats of unknown qualities. Real gyros is made using skewered slices of (traditionally) pork, often with a spice-mix dry marinde.
    Still this looked tasty af! Loved the table searing it makes for a great show. Will slightly adapt for parties.

      This is not how it is served now, but this is based on the original recipe that the Armenian refugees would have brought to Greece. (via Syria) Gyros with kima (mince meat) is banned in Greece (because during occupation they use mystery meat) so today they use real slabs of meat. (original method took more than a day) In North America they would call this Chicago Gyros.

      When I lived in Athens, all of ours were made with lamb. Or something else it would have been back in the mid 80's

    Just a tip on the Tzatziki. For the cucumber, remove all the seeds before grating. Afterwards, add the salt and put it in a strainer, the majority of the water will fall right out and you can more easily squeeze the rest of the water out.

      Great tip! The "Greek yougurt" i find in Norway has to be drained...i use a coffee filter..they do that in Greece also. Mostly i will just buy the Turkish youghurt it is thicker.

    Hey guys. Just made this today! I through my spices in my nutribullet grinder. Every thing was literally powder. I think that may have made the pepper a little over powering but flavor distribution was awesome. Broiling the slices reduced some pepperiness. Read up on meat prep and seasoned the meat about 2hours before I processed it into a paste and rolled it. Chilled it for another our before vacuum. This all made the meat hold more moisture and it looks exactly like the stuff i get from local greek place. You guys are my heros. Wife keeps yelling at me to turn my phone down.

    Ok so i made this but i changed it up a little bit. Instead of regular ground chuck, i used ground brisket point (i happed to have it on hand from a burger experiment and need to use it anyway), and i used 1 lb of beef + 1 lb of ground lamb. Also... i know it’s sous vide everything, but i actually smoked it with cherry wood at 150 for 3.5 hours while rotating it every 45 minutes and then kicked it up to 250 degrees until it reached an internal temp of 150. Just fyi, it cam out amazing. Thank you for the great recipe.

    I have never seen dill in tzatziki, but I like to top it off with some olive oil and/or heavy cream - which makes it super smooth. A nice variation that makes you wonder why you ever use cucumber, is grating down a granny smith apple instead. It is awesome!

    Hello from Russia guys! Thank you very much for your amaaaaazing work. I’ve been a subscriber for a long time, bought an Anova sous vide 6 months ago and I’ve even found a place where they sell prime picanhas in Moscow.
    Can you please make a temperatures experiment? For example taking three (or more) exactly the same picanhas and cooking them at different temperatures (like 127, 134 and 139 Fahrenheit). I mean you’ve been cooking New York strip at 137f once, and it came out perfect, so I think it’s going to be interesting to test picanhas at different temperatures and see which one is going to be the best

    Guga, try adding some finely-powdered dill seed and some finely-powdered dried lemon peel to the meat pâté. They are traditional Greek flavors that almost always go missing from non-Greek versions of the meat. Also, you should seriously consider switching to sea salt (no iodine, please) and then upping it to about 2% of the total weight of the meat mixture. After all, this is, essentially, a sausage. For that reason, upping the fat to 27% total weight is good, too. And if you mix all the seasonings into a slurry using a little white wine vinegar it will more evenly distribute throughout the meat and add a little juiciness and flavor to boot. Love your channel!

    I made it tonight. Turned out pretty well. I didnt have a great way to sear it so I cut thin slices and browned them on a griddle.

    Hello, great recipes, we tried here and its dellliiiiiicious, only one thing,I am able to slice thin only at the first and second burning (i used charcoal) and the meat start to crumble. Have any ideas to make it sliceable until finish ? how long is the meat grind at food processor ? thank you

    something you could try.. when I make tzatziki I use mint instead of dill, and punch up the lemon flavor by adding a little ginger... makes a bright refreshing flavor that compliments the gyro meat very well.... awesome job, made my mouth water and I swear I could smell it when you were searing

      That goes waaaaay too far away from the authentic stuff. The reason why it doesn't taste decent is the US ingredient are far inferior than the ingredients in greece. The yogurt in greece is on another level same with the spices
