I have all ingredients in my pantry. I started cooking at 4:30 am. First Pico de Gallo. Then Mushroom rice with veggie broth. Next Quinoa Greek salad. I had a hard time finding Quinoa where I live. Ended with Vegetarian Enchiladas. I made dinner for us , then my daughter and son in law. Then my Vegetarian Son Your recipes are so easy thank you I couldn't have done this without your great recipes and help.
I have to say, my husband and I make this ALL THE TIME and it’s so delicious! It might be my literal favorite meal I’ve ever made in my entire life. Thank YOU for making such yummy food that is healthy!!!!!

I made it today using black beans and all frozen veggies (that's what I had available)-- corn, onions, bell peppers, and spinach. It feels good knowing that I can now make my own homemade enchilada sauce. Will make again. Thx for sharing!

This was delicious. I made a couple of changes. Used about half the oil and added nutritional yeast to sauce to give a cheese flavor. Did not use any dairy. I’ll make this again for sure.

Hi Swami- I think you should just skip the spinach. All good, the recipe will still be great!
