Pasta Grannies share 93 year old Peppa's recipe for pici all'aglione

- PIci are hand rolled spaghetti from Tuscany, and 93 year old Peppa helped to popularise this pasta by helping to organise a sagra or food festival celebrating them at a time when 'cucina povera' wasn't esteemed. The sugo all'aglione means a sauce made with the garlic typical of the area around Celle Sul Rigo where she lives.
These italian grannies must have the best patience in the world making all that pasta.
Yep. I am 22, and when I make pasta at home, it's so much work. It's literally a workout for your arms, especially if you don't use the machine (it's faster, easier, but the texture is smoother and thus it doesn't absorb the sauce properly.)

My nana was from Sicily and passed 2 years ago in her 90’s...I really appreciate this as it makes me feel she is still close 😊

Vicky, i'm using my tag line again, pastagrannies win best recipe of the week on youtube. Food looks great, i like those homemade thick pasta noodles, the taste and texture. I'm assuming that with the addition of tomato paste and tomato puree' , that this is a slightly sweet sauce dish. Plus i like the fresh garlic and top notch olive oil. Another winner by the pasta grannies, God bless you all , ladies

I think this will be the first dish from the book I'll make. Lots of garlic and no cheese? Check.
Beware that aglione is a particular variety of Tuscan garlic that is a bit sweeter, more delicate in taste and naturally lacks the chemicals that make regular garlic hard on the stomac and stink the breath. If you're not using it, you may want to use less garlic overall.

Oh my god, never seen how to make pici. As an Italian who knows how to make his own regional kind of pasta. It seems laborious. But wonderful.

In nothern Italy (Vicenza), they call this kind of pasta "bigoli". One traditional recipe is with a duck tomato sauce : in dialect "Bigoì all'arnia".

You must go to Rogliano in Calabria and find my Zio Peppino.. i believe it was his daughter who cooked us the most eye-popping gnocchi I ever had. It's a very small village so they are easy to find. Buon appetito!

@viodio tutti Easy to leave out the egg. The sauce looked lovely and I enjoy finding recipes that can either be easily veganized or are "accidentally vegan" - sorry Burlats, if that offends you or seems silly.

Aglione is a special kind of garlic. It has a weaker flavour in comparison with normal garlic (that in Italian is spelled only aglio).
If you want to try the recipe don’t exceed with garlic.

@@eliserich1063 Roast in its skin in the oven, peel, and use it. It can be kept in the fridge in olive oil. That's the sweeter way but not bland. Blanched garlic loses its delicate perfume and becomes very bland, saturated by water.
Very simple recipe yet delicious and good for a weekend gathering with family specially when everyone is engaged! Though I prefer the fresh tomatoes instead of the canned... Just a preference of a healthier choice.

Several reasons: they are very active; don't eat pasta every day - and if they do, then the other meals are more snacks than proper meals; their diet does not contain any processed products; and the portion sizes are smaller than what we expect in the UK/States. best wishes, Vicky

I made handrolled spaghetti the other day. I didn't know they are called pici! My late sister's name was Peachy so I should be able to remember this pasta's proper name. And I'll try to use her damp hand technique next time. I seldom use garlic but I've found a way to mask it. Thank you.

@@pastagrannies Very good idea!! You know I might just be buying a few cookbooks this year from different good cooks and chefs to give out to family and friends as a cooking "library" for Christmas. So many of you in UA-cam that I follow have come up with cookbooks and I love all of them! Thank you.
@Elishia Montenegro just two days ago I made a pasta dressing with minced onions, garlic, ginger, seasoned salt and I added cumin. This dressing has vinegar in it. I used apple cider vinegar but thinking back I could have added a little lemon juice. And my perennial Evoo. It's probably better if seared jowl is used but I don't eat meat. My family especially my dad would have preferred the jowl. I used tofu. So to flavour the tofu I have to marinate them with teriyaki and soy sauces. Otherwise tofu is too bland. That didn't translate to what I imagined to be Asian flavour. It just seasoned the tofu.
@Elishia Montenegro Actually I did use crushed chilies with the dressing. Just a little heat and with cubed feta, wilted kale and preferably beer battered fried fish.
