I used to make the lentil ones for a gluten-free option for my mother, though I think it's needed to note they don't keep well in the fridge and lose their flexibility rather easily. Since they were so easy to make, I'd always make them day of and eat all of them to avoid the later unpleasantness. Made up a buckwheat, oat, and psyllium husk tortilla recipe instead and never looked back. I have been wanting to squeeze more protein in, so the beans might be a good idea that won't affect the flavor I currently like in them. I might use chickpeas instead of black beans though.
Yeah that’s a good point. I think most tortilla recipes are best eaten on the day. The ones in the supermarkets are full of weird ingredients to keep them flexible and extend shelf life! Chickpeas should work fine :)

Think you should ferment your batter beforehand, we need to make things easier for our digestive system, fermentation is basically pre-digestion, so you get more nutrients and feel less bloated 👍
