  • 椰丝椰糖糯米球(椰丝球)是我很爱吃的传统小甜点。它的口感和味道都很丰富,一口咬下去爆出带有焦香味的Gula Melaka (马六甲椰糖)。搭配外面裹着的椰丝甜甜咸咸又香香,几乎没人能抵挡这小球的诱惑啊!这期就和你分享如何简单的一次做出三种不同的口味的爆浆三色椰丝球,还有需要注意的一些小细节和心得。
    椰糖漏出来
    一次包太多放室温没煮的话,椰糖就会开始从底部漏出来。所以一批一批(大约8粒)的包馅料和煮熟裹椰丝。除非你是两个人分工合作。一人负责包,一人负责煮,那么就可以同时进行啦。不然就是你已经很熟练了!如果不幸遇到这个问题的话,在裂开处沾一点水和粉。像人生那样不怕有裂痕
    修补Soh Soh一下就圆滑了,再放进去煮是还可以挽救的哦!
    没爆浆的口感
    把椰糖捣碎或用刀剁碎。这样椰糖比较容易煮得融化,吃起来才有爆浆的口感。还有,先用中火煮到它们浮上来之后再转中小火继续煮,需要三不五时搅拌一下给它们翻面,避免它们煮不均匀。这也是确保椰糖能煮到融化。整个煮的过程大约是10分钟,你可以适当的调整时间的长度或火候。

    Ondeh Ondeh (Klepon) is my favorite traditional dessert. It's rich in texture and flavor, bursting into a toffee aroma of Gula Melaka (coconut palm sugar) in one bite. With the shredded coconut wrapped in sweet, salty, and fragrant, almost no one can resist the temptation of this small ball! In this issue, I will share with you how to make three different flavors of Ondeh Ondeh at one time, as well as some points that need to be paid attention to.
    Coconut Sugar Leaking Out
    If you wrap too many at room temperature without cooking, the coconut sugar will start to leak from the bottom. So batch by batch (about 8 pieces) of stuffing and cooking. Unless you are two people working together. One person is responsible for the wrapping and the other is responsible for the cooking, then you can do it at the same time. Otherwise, you are already very skilled! If you're unlucky enough to run into this problem, dab a little water and flour on the crack. Like life, not afraid of cracks. Repair and knead then it will be smooth again. It can be saved by putting it in and cooking it again!
    Without the Bursting Taste
    Mash the coconut sugar or chop it with a knife. In this way, the coconut sugar is easier to cook and melt, and it has a bursting taste when you eat it. Also, cook them on medium heat until they float up, then turn to medium and low heat to continue cooking. You need to stir them often to turn them over to avoid them being cooked unevenly. This also ensures that the coconut sugar is cooked until melted. The whole cooking process is about 10 minutes, you can adjust the length of time or the heat appropriately.
