I'm a huge fan of Cauliflower and Chickpea Tacos. Dice up Cauliflower, add some chickpeas (season to taste), once done you can lazy mash it together then stuff it into the pocket of a tortilla nice and snug, with a topping of kaleslaw (Kale, carrot strips and radicchio). Top with a vegan crema, verde, and or pesto. Another winner is: Yam covered with black beans and quinoa, diced baby bell peppers, diced jalapeno, diced pineapple, avocado, add a little cilantro and wet the mound down with a Jalapeno Lime dressing.
@never I almost got caught up in the rush to grab an Instapot, but a chance visit to a Goodwill bins store snapped me out of it! There were so many heading to the landfill, I stuck by my old faithful Presto Pressure cooker! I don’t know why there were so many in the bins! Do they break easily? Do people dump them ( like Apple products) just to get the newer models?
I grate up yams and sautée them with onions and add black beans and add bbq sauce for vegan bbq pulled yam 🙃 I always see people talking about jackfruit as a replacement for pulled pork but I will never stop eating bbq pulled yam 🤤

I have a quick inquiry for you Mrs. Marie I'm relatively new to veganism (since Nov) so I have really dived into researching recipes, and techniques e.t.c and while doing my research I've noticed quite a bias from "real vegans" about plant based meat substitutes I have not been able to nail down the exact reason for the hate or criticism , so my question to you is do you know of any real negatives reasons health wise for refraining from using these products? with that aside very good content on your channel i am impressed thank you for taking time out of your life to relinquish your knowledge peace
negatives for meat substitutes is just that they are more processed and usually are high in sodium. i like to stick to whole foods and use them in moderation personally but everyone is different. i like to use tempeh and tofu because they are less processed and dont have any sodium so i can better control the sodium level in the recipe. pros for meat substitutes are that they usually have a lot of protein and they taste good. just a personal observation- i notice my eczema flares if i eat a lot of meat substitutes. but they sure are yummy!
Thanks for the recipes. As for me I will be trying the cabbage and sausage one. I don’t have a slow cooker but my electric pressure cooker has a slow cooker setting. As for the jackfruit, my son and I came up with a recipe for mock roast pork using the jackfruit. Rinse it, drain it and season it with Cuban seasoning( onion and garlic powder, cumin, oregano etc) put in a baking sheet or pan and bake for like 30 min then add some mojo to it and broil for 15 min. Serve with rice, black beans and sweet plantains. Wow. Cuban food is so delicious. Hope you try it. Tfs😊

To remove more of the salty brine from the jackfruit, put the crumbled jackfruit in a pot or saucepan and heat it in warm water first. Then drain and keep rinsing until the brine taste is basically gone. The warm water in the saucepan will draw out a lot of the brine. Just heat it enough to draw out the brine. Do not cook the jackfruit at this stage because then it will get cooked again in your recipe and may not have the texture you want.
Jack fruit looks very interesting. I watched a video recently about how to cut and prepare it after seeing one in my grocery store. So glad you featured it in a recipe for a vegan barbecue. If you're talking about buying a fresh jackfruit, trust me, you're paying by the pound and most of it is going in the garbage by the time you get the fruit out. You're better off going to the Asian store and buying the cans of green jackfruit with brine. Cheap and easy to have on hand too. My daughter bought a real jackfruit back in our beginning days, before we knew better, and it was a real waste of money. I'm not sure if that's what you were talking about but just thought I'd give you the heads up just in case
