That is because the midi interface is playing the piano not a human.

It’s a problem when we don’t see the pianist - is it a pianist or is it just a Midi file? Ericastier, be careful not to think that everything that is played quickly is a Midi file. After a quarter of an hour here at UA-cam, I have found several videos, where we see the pianists, and where they play faster than in this video:
