  • Yiouvetsi means baked with pasta and Arni means lamb. This lamb baked with orzo is a very traditional Greek dish that’s frequently served in the winter and is great for holidays. It is more commonly served in the Northern part of Greece because the climate is colder. Since it is a more involved recipe, I reserve it for holidays and special occasions when we are entertaining a crowd.

    The word giouvetsi (γιουβέτσι) is a loan from Ottoman Turkish (in many other Balkan languages, not just Greek), and it describes a earth-ware pots and jugs. In the case of the dish, the earth-ware pot (originally) used for cooking it. So the term giouvetsi essentially describes a technique and a type of pot, not cooking anything with pasta. Besides orzo (kritharaki in Greek), another pasta called hilopites is also quite popular, and of course the dish can be made with any type of meat. In fact, today in Greece pork, beef, and chicken may be more popular everyday choices than lamb. Nevertheless, this was a very nice technique. I've never seen the sauce being blended. It makes it quite thicker.
