    Ahhhh, my Mother used to make a version of this! It was a good way to use up all the Green Beans, Zucchini and Summer Squash from the garden. She would also make little meatballs and cook it with the Ciambotta. Memories!

    Seven years as a medical student in Padova. Dialetto drove us crazy, and there were 3 separate dialects spoken in town, including one that was exclusive to our street! Your stories are amazing, and you are only a few years older than I am. They bring back memories, good ones, and some not so good ones. And how we learned to cook! I've never heard of ciambotta until this video. Provincial Italian ratatouille. In these very, very long days of lockdowns, Sig Pasquale, you are a breath of fresh air. Grazie mille!

    I remember when I was very young, my parents made this I thought they were saying jambotta everything....I thought it was a slang word, when I saw your post I saw the real name....it brought back so many memories....

    Love you Pasquale!!! When we visited my fathers home town of Reggio Calabria, we would bring bread, mozzarella, mortadella and wine on the train to Reggio Calabria. The whole train would smell of cheese and bread. Everyone eating panini’s. Best memories like you shared. Only in Italy can you have such fun! Thanks for sharing your stories of Italy. I love them so much!

      And everyone in the compartment is trying to put food in the little kid's mouth! Jewish kid from Long Island here, lived there for many years, never appreciating just how lucky I was to be adopted into that crazy land and culture. I love telling people to this day that I'm a converted Italian.

    This recipe is excellent and it came not only for people on the farm but also in the depression years and my Aunt would say when you have bread, you have everything . I love listening to these stories And I wonder how my life would have been if my grandparents had not migrated to the United States from Italy .

    Until a year ago when I decided to get fresh like my mother used to cook I had almost stopped eating Vegetables but now recipes like yours makes my mouth water. Thank you SO much.

    Hello Pasquale I just stumbled on your video how to make ciambotta I was so surprised to see it I grew up eating ciambotta my father's used to make it all the time until he passed away 9 years ago he was from San Gregorio Magno, Salerno about 50 miles south of orsara. every time I ask somebody about ciambotta nobody knew what that was I don't know what dialect or what but no Italians knew what that was. It brought memories back of my father. Thank You

    My friend’s mother just had surgery and she’s not feeling well. I’m making this for her. I make this anytime I’m not feeling well and it always helps. I love it with some homemade bread and my neighbor has a dairy farm. I get a nice unsalted sweet butter. If this doesn’t bring you back to life, nothing will! ❤️

    this is my favorite. The veggies changed as the seasons changed, but the pot of fresh veggies stayed the same. After cancer, this is what pulled me out of "the fog". 2 or 3 tablespoons and life was normal again. Pasquale, you are the only chef to bring this delicious dish to the table--so far. Thank you--thank you! It also freezes well, and because technology has improved, veggies are flash frozen, so although it's something of a sacrilege you can make this in the winter too using fresh frozen veggies.

    I never get tired of hearing the stories! They remind me of my grandparents they came over after the war. Starting a new life. But oh the stories! Don't take any of it for granted. Your father is awesome! SALUTE Pasquale!

    My mom always made this (sometimes she’d add- believe it or not- hot dogs.) She’d chop n fry the dogs in the olive oil first-then put them on the side- then dump the veggies to the pain. When the tomatoes & veggies were almost done she’d throw the dogs back in-It was so delicious! 😋

    In Romania we have this dish and is called ghiveci. It is usually eaten in fasting days. Also in Turkey is called Güveç.

    Made this today. Spectacular! It smells like a garden. The smell of onions, garlic, peppers, zuchinni, and eggplant cooking together should be bottled into cologne. It was fantastic. Thanks for the recipe.

    One of my all time favorites! I try to make it once or twice a year with all fresh produce. That’s what makes the dish.

      DONT FORGET SPAIN - SPANIARDS ... HALF OF ITALY WAS PART OF THE KINGDOM OF ARAGON FOR LONG TIME..... AND ALL OF US HAVE SIMILAR DISHES...MENESTRA ES CALLED IN SPANISH.

    One of my favorite dishes! I add garden string beans also...Yum..and eat with a crusty loaf of Italian bread or garlic knots.😊

    I just love you Pasquale! Your recipes are fantastic and your stories are the best!!! I have similar remembrances of eating on the trains in Italy. It was so much fun. The trains smelled like cheese and bread. We always brought food to make our panini’s on the way to my dad’s home town in Reggio Calabria. Mangia e beve bene Pasquale! That was my father’s name too. 🍷🙋🏻😋

    My grandma would cook this and would use anything in the refrigerator....mushrooms and corn also works nice in this dish.

    I also use carrot. When done I put on top on Spaghetti with Parmesan. So yummy.

    My Nonna makes a giambott but she just cooks tomatoes and onion and a little bit of garlic in olive oil and when it’s nice and thick she stirs in a few beaten eggs and a few handfuls of parmagiana or locatelli And we eat that with crusty bread. Boy is it good!

      My mom used to make the same exact way that you just described but she is from Argentina but my father would make ciambotta exactly like Pasquale he was from Italy

    Add some Maggi seasoning, 🐔 , 🍅 paste habenero pepper, and steamed plantains fory African taste buds and I would be in heaven.
