- Samali with mastic is one of the most delicious cakes in syrup, it is wonderfully drizzled in lemon syrup, delicious and full of aroma . You should definitely try it❣️ Also this recipe doesn’t require eggs, flour and butter.
Ingredients:
1 cup - 200 ml
Tray - 20 × 30cm
• 2.5 cups semolina
• 1 cup sugar
• 1 tsp baking soda
• lemon juice of 1/4 of a small lemon /for baking soda /
• 1 cup of yogurt
• 1 cup of warm water
• 1 tsp mastic powder (crushed into powder)
• 1/2 lemon zest
• Blanched almonds, to decorate
• 1 tbsp butter or oil to grease the tray
Syrup
• 2 cups of sugar
• 2 cups of water
• Lemon juice of a half lemon
. slice of lemon peel
• 1 cinnamon stick
For serving
• Ice cream
Method:
1. Mix the semolina, sugar, mastic, lemon zest, soda quenched with lemon juice, yogurt and water in a bowl
2. Grease a 20 × 30 cm baking tray with oil
3. Pour the mixture into the tray and flatten its surface
4. Cut into 18-21 pieces, decorate with almonds, or pistachio nuts
5. Cover the tray and let it stand for1-3 hours and rise
6. Brush with water
7. Bake at 160- 180 ° C, on the lower level in preheated oven until it turns brown about 45-50 minutes.
For the syrup
1. In a saucepan add the sugar, water, lemon peel, juice and cinnamon stick
2. Boil the syrup for 3 min on medium heat
3. As the dessert is hot, cut it quickly into pieces, wetting the knife in water each time so that the surface of the samali is not damaged
4. Pour the hot syrup over the samali, the syrup will be absorbed gradually
5. Let it to cool completely
Serve with ice cream
Enjoy!
