How to Make an Easy Vanilla Pound Cake with Sour Cream and Cream Cheese - NO FAIL!

    How To make this Super Easy, No Fail Vanilla Pound Cake. Recipe is listed below and there's a secret ingredient... Sour Cream! I also added cream cheese for good measure 😩😩. You already know it's bomb! You can't add that much decadence to a cake and have it not be good.
    If you watched my original pound cake recipe video then you know that it was my grandmother's famous recipe. This one is the result of me trying to answer some of the questions I got in the comments about technique. A lot of you were worried that if you didn't do things perfectly the cake wouldn't turn out right. Don't know how to properly cream butter and sugar? No problem. Not sure when to add the eggs? Got you covered. Want to know what happens if you lower the sugar? I tested it. I tried doing all the things that could mess up this cake and it still turned out beautifully, so when I say no fail... I mean it!
    RECIPE
    Butter - 3 1/2 Sticks
    Sugar - 2.5 cups
    Flour - 3 cups
    Eggs - 6
    Cream Cheese - 1/2 brick/4 oz
    Sour Cream - 1/2 cup
    Baking Powder - 4 tsp
    Vanilla - 2 Tbsp

    You can bake a pound cake successfully at 325 degrees and that will control the over browning and will make a more moist cake. Most recipes call for 350 degrees which I discovered was a bit to hot. Baking at a lower temp. means it may need to bake longer but your cake will be prettier and more moist.

      I started baking it at 335 and that works well for my oven.

      Start with cold oven and bake at 325 for one hour in a half.

      ​@@belindajohnson4593that what I'm going to do mines because when I'm baking it's 325 it's still not all the Way done inside in it's brown to Quickly, in I don't want it's to be dried out so I'm going to do it this weekend to see how it's goes ❤

    I made this Cake soooooooo delicious Mmmmmm.....I use 1and 1/2C. of flour and 1and1/2 C. of almond flour....1and1/2C of sugar and 1C of Monkfruit sweetener ..VERY DELICIOUS!

    👋🏽 I made it last night its very good yes the butter shines💫 its flavor also I used Almond and Vanilla. I think both the cakes hold there own in flavor but this one has a better texture due to the extra butter.

      For personal preference I agree, but I think both have their place. If you need a more dense cake (which sometimes you do) the other one is better. And I think the other one is a more traditional pound cake but this one is my favorite. Lol

    I don’t normally write reviews, but I felt really compelled to leave a comment. Y’all, this is truly a NO FAIL recipe. If I can do it, ANYONE can do it. The reason I went with this recipe out of all the other recipes is bcuz I had exact same ingredients indicated in this video and the hand mixer thingy. I don’t cook and I don’t bake, but somehow I found myself watching sour cream cake videos - I had all the ingredients and I was like why the heck not, right? I followed the recipe to the tee-there was a lot of batter and I was starting to worry-I tell ya, mixing all the ingredients was a FULL arm workout. It really made me want a stand mixer. Anyway, baked it at 325 degrees (in the video, she had it at 335 degrees) - first time baking it so I was afraid I was going to burn it cuz gosh, u bake it FOREVER! I didn’t know baking a cake took that long! I baked it for an hour and twenty minutes and OMG! It came out PERFECT!! I would probably put less vanilla extract - in the video, she poured it in there so I did the same, lol! Too much vanilla extract leaves kinda of an after taste? I dunno, I’m thinking I may have put a little too much vanilla extract. I’m so proud of myself! I just had to share my excitement - as u can tell, I’m super excited and I can’t contain it! Thank u for sharing this recipe!

      For something a little different try making a powdered sugar & milk glazing with just a little bit of vanilla & drizzling it over the top & drip down the sides as a little topping surprise...Or even adding a little softened cream cheese to the glaze making sure it is thin enough to pour a drizzle over the top & sides of cake ....( can even add a little food coloring to the glaze for contrast & to make it more interesting looking ).... 👍👋👋👋

    Hello Danielle, it looks yummy! I have that cake pan too and I use wax paper in the bottom of it. I take the tube part out and line the bottom with wax paper never lose any cake batter 🙌🏾💯%

    Great job! When with , the general rule is to lower the oven temperature by 25 degrees. metal and sheets absorb the oven's radiant heat quicker than, say, aluminum . Because the heat is absorbed quicker, the exterior (top, edges and bottom) of the baked good brown .

    This’s cake baked so high and pretty! I did cream the butter and cream cheese for 5 min and added one egg at a time. I was scared sorry. I also added almond rum and lemon extract.This cake is absolutely amazing. Thank you for sharing this.

    OMG!!! I just made this. I made 2 mistakes. I only use 3 sticks of butter and 3 cups of sugar and I forgot about the cream cheese. I was wondering why it was still on my counter BUT this is the BEST pound cake I've ever made. I already called my neighbor to share. Thank you. The crust is off the chain too!!. It is so moist!! Again 😊

    Hello friend, I am a new viewer to your channel, and this cake was off the chain. I made it this morning, it was full of flavor and moist. I do think I would try it next time with less sugar because I am diabetic, but in terms of flavor and texture, you got it right. Can't wait to see what you do next , all the best.

      So happy to hear that it worked out for you. You can definitely lower the amount of sugar. You could probably also use a 1:1 sugar substitute for at least half of the sugar.

    Sis did you ever try adding applesauce to substitute for the eggs? Applesauce makes the baking goods very moist too!

      I've tried it in other recipes when called for but never in a pound cake. It'd be interesting to see if that would work.

      I am going to try your recipes minus the eggs. I also use coconut milk and oat milk. Your cakes look so delicious and I can't wait to try it.

      I didn't get a crunchy top on this cake because it's softer than my standard pound cake recipe. This is more like the Sarah Lee pound cake. If you want a crunchy crust use the southern all butter pound cake recipe fr my channel.

      I always use salted butter and add salt. There's so much sugar that you need the salt to balance it.

    This was perfect, I used a half a stick of crisco for the the extra butter and adjusted my oven rack to the second level and baked it at 350 for 1hour twenty minutes it was perfectly delicious

    May 2024 I am very late to this party, but glad I viewed it. The possibilities are endless as Danielle said. I like the idea of reducing the sugar. Maybe even reduce the butter too back to 3 sticks? What about using a combo for the liquid (two at the most) - cream cheese, sour cream, milk, buttermilk, or heavy cream?

    I made your original recipe. I use vanilla and cake batter extract. Sometimes I only use cake batter extract and it comes out great. I bake pound cakes on 325 for 75 minutes. Thanks for the recipe.

      You're welcome! To avoid making it dry, just bake it for less time and/or at a lower temperature.

      Yes, absolutely. My grandmother used Swans Down cake flour more often than not. I use regular AP flour every time though and my cakes turn out just as good, so while it's not necessary you can use it.

      @@DanielleLaShawn... That's me too...I don't know if it's that I'm more comfortable with the AP flour (my preference here lately is White Lily) or what. When I first used it, I thought I'd done something wrong cuz my pound cake was NOT dense, it was soft. And I mean, it was falling apart soft, wouldn't hold up for nothing! Flavor was still on point, but that softness did not make me happy! But the more I used it, the more I started to like it. Now, when I'm looking for recipes, I'll snub the ones that use cake flour & look specifically for the ones using all-purpose flour instead. I may give this a try though 'cuz my fave combo is cream cheese & sour cream (just haven't been too sure of how much of each to use; your half-each just might work tho) 😉

    That Vanilla extract will make your cake have a bitter after taste, not to much, measure

      @@DanielleLaShawn I had a regular bunt pan and the batter spilled over as it backed but the cake was good and very moist. I waited over 30 minutes and attempted to remove it from the pan and ended up breaking it. It still was good though.

      Yes, you can really use whatever liquid or dairy product you want... Sour cream, cream cheese, milk, cream, etc.

      Nope. 3 tsp of baking powder is what I typically use. This recipe makes A TON of batter.

    Use a bundt pan! So much easier!

      This recipe doesn't fit in a standard bundt pan. You can use one and then make cupcakes or something with the extra batter.

    I've ALWAYS used 325°. 3 sticks butter, cream cheese and sour cream. Never have used milk. 6 eggs, and I like apf not cake flour. Also 1 teaspoon baking powder. Cream butter,cream cheese and sour cream and 2 1/2 cups of sugar. Then the eggs 1 at a time. Always a successful cake

      8 oz total of sour cream and cream cheese. But MOST of the time I use EITHER /OR. DON'T OVER beat once you start adding flour. Also I prefer a hand mixer! Stand mixer has bigger chance of over beating. Good luck😋

    I wish i could post a picture, but this cake was delicious and turned out a beautiful golden brown. My oven runs a little hotter, so i baked it at 300 degrees! Thanks for experimenting and sharing!

    You sure know your pound cake. My grandma was so picky with her. I wish you discovered a wonderful keto pound cake. I think it’s the taste of the almond flour that makes it not quite great. I’m looking for another keto flour that might do a better job.

      I've never tried Greek yogurt but any dairy products should work fine. You want 1 cup total between the two so you could do 1/2 cup of each, or 1/3 and 2/3, or any other combination.

      I don't but you can just use the same recipe and replace some of the flour with cocoa powder. That will give you a chocolate pound cake. You can also add chocolate chips for a double chocolate pound cake.
