I've watched dozens of videos on rendering pancetta and ended up ruining it because no one told me that you start with a cold, non-stick pan. I finally figured it out myself. I'm very happy that you specifically pointed out that tip so that others are spared the heartache of seeing their pancetta ruined. Many thanks to you and Uncle Tony.
To prevent scrambling of the egg yoke … you can temper egg yokes with couple tablespoons of pasta water then add the pasta and mix

In fact, if one writes a comment, giving a tip, one is not doing it for the cook in the video, but one is doing it for people who maybe are not so knowledgeable and are looking for maybe some advice. I, too, have sometimes, as an Italian who knows the Italian cuisine well, happened to give some little advice and someone instead of thanking me, also criticized me. 🤷🏻♂️

I lost it when Laura said “don’t scratch my pan” when handing Uncle Tony the tongs 😂 literally me when my husband helps me in the kitchen. I love how she just keeps it real!

He’s definitely doing the Italian cooking dance 🕺 I love it! Can’t wait to make it. Pasta carbonara is my favorite. But I’m wondering how to make a bigger family portion?
In order to make your life easier, it's always best to make pasta dishes in portions; just like Thai noodles! It's easier to control. But obviously this is a headache when we're cooking for a crowd because nowayyyyy am I flipping a pan with 10portions of pasta to reach peak emulsification 😅
This maybe why we never see family meals without anything but a Ragu? Boil a pot sauce and a pot of pasta, mix mix mix and you're done!

I’m patiently waiting for the official recipe to show up on her site but also trying to piece it together from watching and listening to the video repeatedly. I think I got it except for one thing: what do you think is the amount of pasta? A couple of ounces maybe? It’s supposed to be a single portion.
