He always expects the chefs in challenges to cook their red meats mid-rare and most of the food they send out is cooked at that temperature unless otherwise specified on the ticket e.g. wellingtons, lamb, steak.
its rarely if ever the serves fault. the only times I have seen them get mad at the server role is during hells kitchens when they're acting incompetent as fuck

How do they get away with it for so long? Heaven only knows how long they would continue to get away with it if they had not contacted the show for Chef Ramsey’s help.
Simple. America has a very small business friendly goverment. Business friendly means low oversight and regulation. No oversight means not having to do crap properly.
Many terrible restaurants will "bribe" health inspectors with either $ or gift cards. In the US alone, health inspectors can make like $90k a year depending on the area they're assigned to.

I think this is the first one I have seen where he literally changed EVERYTHING. He changed the type of food, he changed the style, he changed the equipment and he got consultants to try and get the people there to change. Basically the only thing he didn't change was the location.

The English people includes the letter R sometimes in between words as a sort of bridge. But there could also be other ways of using it such as the one you mentioned.
