Ceviche will always be one of my all time favorites! The acidity from the lime juice actually cooks the fish! You can actually see the fish go from somewhat opaque to white, it's wild! Thanks so much for the comment, hope you enjoy!

If you notice, he knows what he is doing. He basically marinated the onion so it is great when you do that. He didnt just put it in there without putting it in the lime juice first. The little bit of carrot is genius.

I switch the cucumber for avocado. It adds a smoothness to it that I really enjoy. Also add cilantro and lemon juice to go with the lime
