I always put a bowl under the fruit while I section to catch any juice that happens to drip out. My mom taught me how to do this about 55 years ago…a great way to section citrus. Good job!
Thanks for the tutorial! As part of a pastry and baking arts course I attended, I had to produce perfectly pithless wedges for the final exam. That course introduced me to the technique called suprêming citrus.
North of Superior we do not grow citrus but mother nature has provided us with rhubarb blue berries raspberries and choke cherries free for the taking. I do have a crab apple tree in my front yard and use those with the rhubarb for butters. All other fruits we grow in gardens or buy at stores. Next year if the blue berries are good I will use them for canning. The raspberries have way too many seeds for our taste. Keep giving me ideas as I can use all I can get. thanks.
You didnt say what you did with the peels after... If you don't have a use for them you should put them in jars and fill with white vinegar and let sit for a couple days or weeks and use it as a cleaner :)
If you mean a water bath canner, they are quite simple, just a pot with a rack and a cover. The pot must be deep enough to get 2" of water above the jars. If you mean a pressure canner, buy a really good one, it is worth the investment. I like the one with adjustable weight for 5#, 10#, and 15#. Also buy one large enough to can at least 7 quarts. If you plan on doing a ton of pressure canning, then purchase the tallest one you can find. (They aren't cheap!). Buy a copy of the BALL book

I've never grown stevia from seed. What I did do was take cuttings from the stevia plant trimmed off the lower leaves and put it in water. It did take root. I planted the one that I rooted. It's now outside growing nicely in soil. I'm about to take cuttings off that plant to root some more. I plan to take cuttings so I can winter them. Then I'll have plants ready to go in the spring. I noticed it takes a good few months to get a nice root system. So keep the water changed and be patient.
In the pass there was once per year this time of the year one cow would disappear from the St Cloud area most the time the State would find half the cow near some gator hole but five cows that is a lot of meat 10,000 lbs that's 10 to 12 big box freezers if smoked, dryed and freezed enough meat for a year for 20 to 25 people (About two families)

when working on say 2 jars left to can is it okay to put say a towel on the bottom of the pot to can the 2 jars since I don't have something that small to put on the bottom. I know they can not touch the bottom of the pot. thank you Mercdes

My mom made canning seem so much harder. U made it seem so easy! I love getting peaches and nectarines in the summer but the best peaches only last a few weeks. I’m gonna try this this coming summer :) thank you
No it shouldn't be a problem but you could do what I do. I keep jugs of water for my canning so that the chlorine dissipates and calcium settles to the bottom since my water is also very hard. Also make sure to use some vinegar in your caner water. Blessings!

Zest all of that citrus fruit! Goes great in drinks and baked goods. Or dehydrate the whole peels for potipourri. I also use for cleaner (fresh or dehydrated) and fill a jar with vinegar. I can't grow citrus in our area so I have gone to the wholesale market and got organic older stuff for REALLY cheap and canned it. Pineapple is so great canned in it's own use. Thanks

I need some help on getting started in canning. Anyone have a minute ? What type of cooker do I need and a good place to buy ? Does the cooker come with the jars ? I have about 25 tomato plants so I plan on a lot of tomatoes. The same for eggplant witch I plan on marinating and can if possible ?

I imagine it would be the same as other citrus, but I was curious if you have tried it....you seem to have done *everything*!
Aww thank you! I love doing it that way, you get more nice segments, more juice to save and can and much less headache! If you can the fruit with any membrane or pith, BAH! it's bitter! this way is fast, easy, yummy and you get to keep the peels for cleaner or candy making :) Love ya!
I love this idea! I really want to try canning, and have never done this on my own yet and feel a bit overwhelmed about the process and food safety. Are there any books you would suggest? What tools are absolutely necessary, pretty durable and affordable? Also where is a good place to buy?
a canning pot with a rack is useful, but you need some sort of tongs such as canning tongs to take the can out, the jars and lids, search up vids for 'how to can' on youtube, usually the vid will show a jam, and i suggest thats where you start is jams and jelly. also everything must be boiled to be sterile, so all the lids, jars, funnel, and everything that touches any of the food or jars or lids
All American pressure canner, and Wisconsin Aluminium Foundry pressure canner, are excellent makes. All made out of solid aluminium blocks. (Don't use aluminium for cooking, just canning.) All have the adjustable pressure weight. There are other brands but most are made of pressed metal and I'm not fond of them.

They're OUTSIDE of the contents of the jars...and if you remove them from the jars after canning, they really don't detract from the looks of the finished product. Do they stain the inside of your canner or something?

just wondering - not being picky - but do you wash your oranges/grapefruits before you start peeling them since you can't wash or rinse them after peeling like you can an apple (I was told once that you can't process apples with the peels left on) and how about those orange peels - any use for them??? can they be canned and used for anything??? thanks - love your videos
jmarylastone .....with a vegetable peeler remove the skin from the pith .dry out in a cool oven until hard then reduce to powder and bottle. Flavouring cakes etc
Great video. I have one question. My cousin has a salsa type dip that has fruit (strawberries, kiwi, etc.) PLUS peppers, etc. The items are chopped very small -- 1/4" to 1/2". Is it possible to can fruit/peppers that are that small or would it get too mushy? Is there something else we should know?
She collected all the juice from cutting the fruit. If you noticed, the cutting board is sitting in a rimmed baking sheet.She also probably juiced the little bit of fruit still attached to the peels.

You can also put salt on them to make preserved lemons, grate the rind for Lemon Pepper seasoning, or candy them in a simple syrup for a sweet treat.

If your family likes sweetened grapefruit, let them try salt instead of sugar. The salt reacts with the acid and makes the grapefruit sweet.

You can avoid the extra work by soaking the sections in pectin enzymes overnight. It's available in homebrew stores.

Can you pressure can frozen vegetables ?? Would you need to thaw and cook them first ?

Yes you can. But to be honest dehydrated is much better and takes a lot less space and weight. Blessings!
