Canning Mandarin Oranges

- Yes, you can preserve citrus by canning it! How sweet is that! And how easy, once you get the fruit peeled and ready. These mandarin oranges are a high acid food and can therefore be canned using the water bath process. What a sweet treat to have preserved and ready on your pantry shelf in times of emergency when spirits need lifting and bold flavors are needed. Although some of the vitamin C is degraded in cooking, other nutrients are still in place, making canned citrus nutritious as well as beautiful and delicious. Try it!

I love how during a canning lesson you also teach how to be humble. How to be self reliant & sufficient. How to “wake up now” so to speak. I appreciate the kind candor you and Jim represent, the special family guests & their respectful fact based teachings. They’re awesome! Thank you for what you do! It’s keeping quite a sizeable community healthier!
God how I love her, she’s just precious, her and Jim both…❤
Thanks! Jim
There is a process using Peptic Enzyme that will dissolve the membranes before canning. It is like what is used in making wine. The Inquisitive Farm Wife has a good video on using it when canning Mandarins.
Pam I wish you could see this, and your other videos, through a newbies' eyes. You and your husband are gold. The most important info you've shared is SAFE CANNING, and I'm grateful for it. This is my next fruit preservation project once I complete the Christmas jam, another 4-ish gallons of apples and something blueberries. My husband is a sucker for citrus, especially oranges.
You are the Best Teacher .... you have given me the Confidence to go forth Canning 🍊🍊🍊💗💓💙💙
Wow, thank you! And you can do it! Canning is a wonderful skill, and so necessary in these uncertain times.
I feel the same way, I’m 70 years old and have never canned, although my mother canned everything!
You acturally got 5 1/2 in that jar. So in this case squauty pints will do just as well as the tall pints. These are much cuter. Never thought to canning cuties. Great idea.
I can a citrus medley that my family loves. It has grapefruit, mandarins, Cara Cara oranges, blood oranges, and Pomelo in an extremely light syrup. Because most of what I use doesn’t peel easily, I use Pectinase. It really helps! I peel everything the night before canning, put it in a pot with a mixture of pectinase and water, and stick it in the refrigerator overnight. The next morning all the pith has resolved off. A good rinse later and I’m ready to start filling jars.
I bought some of that after this video--a tip from a viewer. It seems to work very well.
"Even though they said easy peal...they lied" 😅😂😭 i love you even more
LOL!
I’m new to canning and have learned a lot from you. Thank you for sharing your knowledge in such a kind and professional way.
You are so welcome, and continued success with your canning.
So glad to see this video from you!! I wanted you to know that I am making your pie crust for my pies this year! I will try these mandarins soon. I have prepped for the first time this year thanks to you and others.
That is fantastic! Good for you!
I just finished watching her pie crust video!!
Your great Rose!!!! Thank you! For sharing and caring!
Cannot wait to can these. I would never have thought of canning citrus. 💐
This is so fabulous. I’m excited to try these.
You are such a great teacher. Thank you so much!
You're very welcome! Thank you for watching.
Another great video! Been canning up a storm for the last two months and have tried a bunch of your recipes. Thanks so much for putting all the time you do into explaining things so well. Hope you and your husband are having a wonderful Thanksgiving! :-)
You are so welcome! We had a lovely Thanksgiving. Thank you. I am so glad the our videos have been useful for you.
I truly enjoy watching your videos. You’re such a great teacher!
Thank you so much!
Great i love mandarins 😌
Thank you so much. You always lift my spirit when I watch you. I am going to do this-have cute little squawtty jars too!
Me too. Even the music lifts my spirits.
Awesome! Thank you! And I think those squatty jars are so cute!
What a wonderful idea!
Thank you! 😊
My canned mandarin oranges look so pretty on the shelf. Thank you for teaching us with all these wonderful videos.
Kay: Thank you for watching our videos. Jim
Hello again....tuned in tonight and low and behold you were demonstrating canning mandarin oranges. I just this morning had the idea to can some myself, so will be doing so tomorrow. I too noticed the statement easy peel and said just as you did....they lied to us. Can’t tell you how much that I enjoy your videos. I too believe we must be prepared food wise as who knows what is around the corner for us. I am beginning to think that I might be part squirrel, with all this stashing of canned foods. Thanks again.
Thank you for sharing. Part squirrel is a great way to describe many of us, so you are in good company!
I Love your canning sessions. Thank you for this.
You are so welcome! Glad you like them.
Thanks for sharing your knowledge.
I was wondering about the peels and see that video is up next. Love this! I have been canning everything the past few days... It has helped me while I grieve the loss of my dog just over a week ago. I am a new subscriber, and glad I found you. Thank you, and happy holidays!
Welcome to our channel. So sorry about your loss. I am glad you are finding solace in doing something beneficial for you and your family. Happy holidays to you as well.
It has been good therapy for me as well. You have to pay attention- no going off into self pity land, because you have steam to time! Sending you love ❤️
So happy I found your channel! I have learned so much!!!!
Awesome! Thank you!
Ma'am, _thank you so much_ for sharing your knowledge! From a young couple seeking to learn as many traditional domestic skills as we can to survive what is ahead of us, my wife and I appreciate you so much. 😊
Now I am excited for when mandarin oranges are back in season. They look beautiful!
Thank you--and they are so good!
I'm so excited! Thank you.
You are so welcome!
You are such a good teacher! I’m going to try these. Happy Thanksgiving
Thank you! You too!
You are one of my most favorite youtubers. ❤ You give me confidence in canning and always remind me of the important steps for safety. I have tried many of your ideas. Jim does a great job filming!! He camera shots are really important to me when I am learning a new skill. Also, (maybe I missed it), but does anyone know if RoseRed has done steam canning?
Thank you for taking the time to post this and other! You're genuine desire to teach is very apparent. Canned 10 lbs of mandarines today! :)
WooHoo! You are so welcome! And that is amazing work!
OMG. I’m so glad I came across your channel. I love your videos- you are an amazing teacher. I was just talking about canning oranges so the timing of this video is perfect for preserving some of clementines we get at Christmas time in Canada. Thank you!
You are so welcome! I'm glad the video was helpful. thanks for watching.
I was just stressing about what to do with our bumper crop of oranges and found your video. It is TRUE that when the student is ready, the teacher appears. Thanks so much for your videos. They are timely and well done. Susan B @ Willow Crest Farm. Cypress, Texas
Glad it helped! Four of my six children were born in Texas--two in Houston and two in El Paso! We are going to do another video on canning citrus showing a new product that I am now researching that will help dissolve the membranes so it won't be so much prep time! Stay tuned!
I love all your recipes! I love how clear you are! Thank you! Cindi from Oregon
You are so welcome! We love Oregon. I have taken research groups to Newport several times to study the tide pools. Such a beautiful state!
I love the way you explain things. Canning some cuties today
😊 thank you!
So excited to can cuties today. Thank you for your great tutorial!!
You are so welcome! This was a fun canning project.
What a fabulous idea! the fruit in our trees are juuuust starting to turn color, I cant wait to try it! Thank you for sharing. :)
You are so welcome! Have a wonderful time canning your citrus! We are going to do another one on canning citrus very soon using a product I just learned about that will help remove the pith and membranes, so watch for it.
I am a new subscriber and just love your channel. I went to a food pantry and was given two huge bags of small oranges. I started thinking that oranges are high-acid foods and decided to search if I can use my water bath canner to preserve them. Oh I am so happy right now!! Thank you so much.
Thank you!! We grow satsumas. I am looking forward to using this recipe!
I've really enjoyed watching your videos. I've freeze-dried Mandarin oranges and just started canning after watching your videos! You have inspired me so much and even my hubby was inspired to pickle okra from our garden. I purchased a couple of bags of Mandarin oranges to can tomorrow! AND....thanks to you, my first experience with pressure canning was doing raw chicken! Now I've put up 25 pints of chicken as well as 8 pints of beef chunks! You are the best teacher! Blessings to you and your hubby!
Thank you, it sounds like you and your husband have really gotten into canning. We appreciate that both you and your husband are watching our channel. Let us know how your adventures in canning progress.
@@RoseRedHomestead Food preservation has been a wonderful project for us to do together. Dan was slicing kiwi fruit to freeze-dry this morning as I was blanching cherries to see if I will get a better result with those in the freeze-dryer.
I am finally getting around to canning some mandarins! I need to get the syrup ready. I found some Halos (very easy to peel) on sale for $2.99 for a 3-pound bag. I decided to section them and had enough for 4 pints. I used a straw to push out the pith inside and it worked pretty well, but then I decided that I would rather have the sections. If they are affordable this week , I will get another bag. Thanks again for helping us put good food on our shelves.
Here it is July 5, 2021. I have two bags of mandarins to bottle and found this video. Timely for me. Doing this tomorrow. You talked about empty shelves and it has been quite an experience for most people. Myself, I have always had items on hand, mostly to save time. Enjoyed your comments at the beginning of video.
Thank you! Thanks for finding us.
Thank you for this video. I can’t wait to try this.
Hope you like it!
Brilliant!
I would have never thought about something like this. This is something I am going to have to try!
They are so good--and look so pretty in these squatty pint jars! I think you will really enjoy them!
We’ve never had a bag of cuties not go bad… problem solved. What a great idea! Thank you 🙏
Have just made another batch! AND came across a recipe for candied mandarin peels, working on that now and hope it turns out. Thank you for giving me courage and inspiration to try some new things!
Sounds great!
I have been wanting to can and finally purchased the supplies and a water bath canner. Watching. Your videos have made everything so simple for me. We just canned our first batch of these little cuties and we will be doing pineapple before the week ends. Our large family thanks you for helping us move toward food independence and security. Next month we will try our hand at pressure canning.
That sounds fabulous!
Just love these Pam. I’m lucky enough to have a mandarin tree that fruits prolifically. I also can these little beauties so that I have them ready to purée to make mandarin tea cakes throughout the year.
I just love canned oranges I need to try this ❤️
I hope you do--but find the cuties so they will be easier to peel! Thanks for watching.
@@RoseRedHomestead Thanks you for the advice I will do and your welcome I always look forward to watching your videos 💛
I read someone’s comment on a blog that they put their grapefruit in the oven for 15 minutes before they peel them, making them easier to peel. I’ll have to do more research on that.
Such a brilliant idea. My neighbor and i were discussing our canning and pantry today with this pandemic. Living up north, we dont get a lot of fruit to can, so this is a great idea. Next time we get to town i am grabbing some mandarins. Thanks so much, you two are great.
Thank you!
I like your videos. I am learning a lot on a variety of topics. I love how real you are. If something doesn't work as planned your not afraid to just let us know so we don't do the same mistakes :)
Thank you so much!
I just found your vlog, and I really love them! I have a mini homestead, not really self sufficient but getting as close as I can. I’ll have things to trade for what I can’t do myself. Thanks so much for all the great info and encouragement.
You are very welcome. I think preparing products for trading is really important.
Our granddaughter loves mandarin oranges. Every time she comes over she makes her way to the pantry shelf and asks to have a can of oranges. She has nearly finished them off so next time she comes there will be some home canned oranges waiting for her! Papa brought some cutie oranges home today so that will be the next project. Thank you for the inspiration and first class teaching. You’re a blessing!
You are welcome. Jim
I did this about three years ago, I need to do it again.
Lovely. I want to make some for Christmas presents!
They look So Beautiful !!! You are so right about being quarantined for a while again, I am always prepared living in South Louisiana and with hurricanes and after Katrina not having lights for 28 days. We make sure we are prepared. Thank You for sharing your canning gifts, such a joy watching you. Blessings !!! ✝️💟
You are so welcome. Wow--no electricity for 28 days. Glad you were prepared for that!
RoseRed Homestead Yes Mam i learned a lesson from not being prepared enough after Katrina hit. Now this old girl is definitely prepared. 😍 Thank You for your response, and taking the time. Blessings !!!
@@Linda-kq8ef Sometimes life teaches us hard lessons, but the good news is that we learn, and then do better next time. Story of my life!
RoseRed Homestead Amen !!! Good words of wisdom !!! ✝️💟
The store cans them, So I do too....last year 2021.. great for that " cake with mandrin oranges" ...
Thank you for another great video. I just came across a product called pectinase. It's an enzyme that breaks down the pith. You put the citrus in a bowl (separate the segments), cover with water, and add a few drops of pectinase and let it sit. The pith just rinses right off. I just ordered some to try...my elderly mother has a problem swallowing the pith. But it seems like a great use when canning citrus, which I would also like to try.
I'm excited! It never occurred to me that I could use my stock pot to do water bath canning! Citrus sounds so refreshing and nutritious! Happy Thanksgiving!!
So glad the information was useful to you. I think sometimes we get so used to doing things the "right" way that we forget that there may be more than one way that works! Watch for another citrus video soon that will demo a product I am just learning about that will make canning citrus even easier!
Very, very enjoyable Thanks 😇
I watched this video a few days ago, wow. yesterday I canned 14 pints of mandarins yesterday. They turned out beautiful. Thank you. By the time I got them cleaned I was getting a little faster at it, Ha ha.
Terri: Great job! Jim
Wow I can hardly wait to can some mandarin oranges, also pineapple. Thank you
This is brilliant. I use a lot of lemon juice and have been wondering what I could substitute if I had no refrigeration. Canning lemons could work. I'm still working my way through your videos and will be looking out for the candied citrus peels. Again, such excellent information and presented so we'll. Thank you Pam and Jim!
I've seen canned, pickled and salted lemons, good idea.
I was just thinking about my storage as well, wanting to put up mandarins and then your video popped up. I live in Florida and have many neighbors that have trees that drop their fruit . This winter I plan on getting a lot of free fruit to put up! Thanks for this video!!
That is awesome! What a blessing to have that fruit available!
Thank you so much for sharing your knowledge of canning. I would like to can some oranges and by the way, we had homemade canned cranberry sauce which you demonstrated. Delicious and I plan on making a few more jars this holiday,
That is fantastic!
Pam, I was intrigued about the idea of canning citrus, so this past week I picked up one bag of mandarin oranges to give it a try. After peeling and removing the pith, an unplanned trip out of town forced me to postpone canning. So, I placed the oranges in a bowl, covered with water; sealed them up. Went back three days later to process and to my surprise any remaining pith was very visible and came off with little to no effort. Processed and they look like commercially canned mandarin oranges. In the future, three days may be overkill, but a couple of hours may do the trick.
That should be fun to experiment with, Jim
This is wonderful!! You made it look easy!
It actually was pretty easy! Thanks!
New subscriber from Australia, I’m loving your videos, you are such an inspiration to me. Thank you for sharing 😊💕
Welcome!! From Australia!! Thank you for you kind comments. We are so glad to have you along on our adventures.
Made 7 pints of oranges today. Thank you for the video. Can't wait to taste then.
Sounds great! Way to go!
Yes, I need to do this! Great tip on keeping vitamin C on hand.
Yes it is. Glad you enjoyed it.
@@RoseRedHomestead canning more today. Always think about you when I can something you showed on video. Have a great weekend!
Thank you! I just got gifted a whole bag of these yummy's. Going to do this, in 1/2 pints since its just me eating them.
Those are so pretty!
Thank you! 😊
I did this last year with an abundance of free satsumas and they are so good! Just got another 5 gallon bucket of these luscious satsumas and will be making some more marmalade and canning sections again!
@Lisa: That sounds great! Jim
Just got a used Presto canner I need to practice on. Going to try some citrus too! I so appreciate your videos!
Have fun! let us know your results! Jim
I just subscribed, you are fantastic!!
Much health to you!
Again, thank you. My sister has grapefruit and orange trees, I will be canning both this winter to fill both of our pantries. As a side note - I wish you had been one of my Professors.
What a lovely compliment--thank you so much. USDA suggests canning oranger with grapefruit together, but grapefruit can be canned alone. Not sure why--I am trying to track that down. But how nice to have access to citrus trees in your family.
@@RoseRedHomestead I was going to ask about canning grapefruit. A friend has grapefruit trees and always has more than he can use and give away. I may get him into canning!
@@danniemcdonald4903 You can certainly can grapefruit and I hear that it is fabulous. Here is a link to the USDA guidelines about that: nchfp.uga.edu/how/can_02/grapefruit_orange.html
@@RoseRedHomestead Thank you!
I need to get some of those racks for my pots! When I water bath can, I use rings from the jars themselves. Just extra rings and I had stored. It works pretty well, but I'd much rather have some little racks like that. Another great video! ❤️❤️❤️
I’ve ordered the racks from A. Just measure the inside diameter of the pot, so you get the right size.
@@IMOO1896 And then hope you don't loose your rack, like I always loose them, oh and my glasses. Buy cheap ones if your house seems to eat things.
I always learn something new from you.
Glad to hear it! Thanks for watching.
Looks like fun! Can't wait to try it! Another fun adventure with Jim & Pam! Happy Thanksgiving! I will be making your cranberry salad very soon!!!
Thank you! Have fun with canning the mandarins. We will be doing another citrus video soon after I learn more about a product that will dissolve the pith and membranes to make the prep time much less.
I soaked my (pith peeled) orange peels in sugar for several weeks, then gently cooked them, and then put them into my yellow cake batter,
baked my cake and it smelled SO PRETTY 😍
I iced it with butter cream icing that I put more orange peel in.
I took it to a fellowship meal and had NONE LEFT !!!
Good thing I divided off some batter to make a small cake for us, so we could try it
I've just canned my first mandarins and they are amazing .... I did one thing different and used pectinase to take away the pith as our variety of mandarins had thick pith... it was the best idea, well worth it for a less bitter after taste!
That sounds great! Thanks for watching our videos. Jim
I’m going to try this. I did get cuties. They look delicious.
They are! We have really enjoyed having them.
Happy Thanksgiving and may God bless you and your family 🦃🦃🦃
Same to you!
Thank you!
Just got a whole bag of mandarin oranges and this popped up on my feed. Perfect timing as usual. Yay!
Last year I used a chemical that dissolves the membranes overnight. It’s MIRACULOUS! Can’t think of the name, but I’m going to use that again and then can the perfect segments!
🧡🧡🧡
I think its something like pectolaise theyuse it in winemaking
would love to know for sure what you used..thanks
Another of our subscribers sent the link--it will be somewhere in these comments. I'm not ready to use extra chemicals yet, but if it suits you...go for it!
@@carolynmoody9460 yes, pectolase.
@@RoseRedHomestead Pectinase enzyme is a natural protein that breaks down pectin. It’s used most often in wine-making to get rid of a hazy appearance caused by residual pectin. If you can use pectin with no objection, you can use pectinase. You should check it out- I loved being able to enjoy my mandarins (and grapefruit and cara cara oranges) without those tough and bitter membranes!
🧡
I bought 3 4 lb bags of baseball-sized navel oranges ($2.98 at my local Winco store). After peeling and coercing, I have 11 wide-mouth pints of navel oranges ready to process. Each jar has 3.5 to 4 oranges. Thank you for the inspiration!
Thank you for this video! I'm gonna make some, and I must say you have bueatiful hands. Noticeably so when you were stuffing the jars. :)
Thanks. The last time I canned oranges, I used a kitchen rasp to remove the rind and made marmalade. Thanks for the video. God Bless, Stay safe.
Sounds great! Thanks for sharing.
Thank you for so much for all your videos I have learned a LOT from them. I just made the canned mandarins. They turned out great! I discovered something while making them, quite by accident. I dropped one of the oranges in a bowl of water I had in the sink. When I took it out, I noticed the white stringy things were very loose unlike before. I took my thumb nail and rubbed across ridges on the surface of the orange, everything came off easily, so I finished the process by rinsing all my oranges to remove the white strings. Thought you might be interested.
Mishell: Thanks for the tip. We will have to remember that the next time we can Mandarin oranges. Jim
Thank you so much for this video Pam. I was wondering if I could can whole satsumas. My friend has a tree full of Satsumas which are so sweet and juicy this year, I guess we had just the right amount of rain this season; they are so delicious. My friend has generously allowed me to come and pick from her tree, so far I have gotten 10 gallons of those wonderful little sweetnesses. I made orange marmalade using your recipe and instructions so now after watching this episode on canning them whole I know what I will do with the remainder. BTY, I love the marmalade. My first time ever attempt at marmalade. Although it is a little more time and effort intense than jelly or jam, it is so worth it! I enjoy your videos immensely, you are absolutely the best instructor with your clear and precise details, and Jim does a pretty awesome job of videoing. Thank you for teaching this old lady new ways of canning. I like your artison bread also! Happy Thanksgiving to you and your family.
Happy Thanksgiving to you and yours as well. Yes, I am sure satsumas would also work. And your orange marmalade sounds fabulous!
I laughed when you said they lied about easy peel.... Loved the video. Thank you
😀 Well, they did!
I must say you are my inspiration. I’m 60 years old and this is my first year of canning. I have watched other canning videos but keep coming back to you. So now you are the only one I watch. Everything has came out great. But my canner doesn’t have a gauge so I’m not sure what I’m canning at. Any help with this? Love your videos.
Susie, if it doesn't have a gauge it should have a weight and the weights are calibrated at 10psi or 15psi usually. If you are at or below 1000 ft elevation use 10psi. Above 1000ft then use 15psi.
My Mother was very particular about having the outside edge of the fruit against the walls of the jars too. That’s how I learned to can also. It does look beautiful lined along the shelves.
I never would have thought about doing the Mandarins until I watched this. I wonder how much vitamin C is destroyed by the heat. It still is a nice treat to anticipate as a boost to the palate and up-lift the morale during stressful times. Good demonstration.
Thank you. Most of the Vitamin C in any food is destroyed by heat starting at about 80°F, which is why lots of products have it added after the heat process as in orange juice with added vitamin C. But I like you conclusion about it being a boost to the palate regardless!
I love this!! I too, am thinking of special bites in lean times. As a single person, I always think about how I might do something like this in the little 4oz. and jelly jars. Think of it.....a single tangerine in a little jar. Or perhaps 2 tangerines in a jelly jar. Would this work since this would not be a pressure can? Thanks for all you and Jim do.
How did you acquire so much knowledge! Exp after going to college and getting you PHD! I’m so impressed! I’m learning a lot! Stay awesome! 🙏
great!!!!! video.. Blessings
Thank you! You too!
Looks good. Would add a nice variety to the pantry.
Love "ALL" your videos. You are a very gifted human being. My question would be, after a year or so, how well did these little oranges do in long-term storage? I'm canning mandarin oranges today. Thank you.
