    Smoked Chicken Lollipops
    The chicken lollipop is a "frenched" chicken leg. The meat is cut loose from the small end and pushed down creating a "lollipop" look. The leg bone is left clean and creates the "stick".
    To turn regular chicken legs into lollipops you'll need a sharp knife and a pair of kitchen shears. Make a cut completely around the lower part of the leg just below the knuckle cutting through the skin and tendons. Push the meat down to the large end and pull the remaining skin and cartilage off the knuckle. There's a tiny bone right against the leg that needs to be removed. Remove this bone with your fingers or the shears, and trim away the tendons sticking out the top.
    To season the lollipops I start with a dusting of my All Purpose seasoning "The General". Next I layer on The BBQ Rub. howtobbqright.c... I give it a good dose for flavor and color. One last step is to cover the exposed bones with a small piece of aluminum foil.
    Let the chicken sit for 30 minutes at room temperature while the smoker is coming up to temperature. At the house and in contests I'm using a Yoder YS480 pellet smoker. It's set for 300 degrees running BBQr's Delight Apple pellets.
    While the cooker is heating, place a stick of butter in a ½ size aluminum pan. Go ahead and set the pan inside the cooker, so it has time to melt. Once the smoker is up to temp, place the lollipops in the pan with the bones sticking up straight. Close the lid and let it cook for 2 hours.
    After 2 hours the internal temperature should be in the 165-170 range. Dark meat is done at 175 and that's just enough time to glaze the lollipops.
    For the glaze I use Killer Hogs "The BBQ Sauce". howtobbqright.c... Be sure to remove the aluminum foil and dip the entire lollipop in the warm sauce.
    Continue cooking the lollipops for 30 minutes until the glaze is set. You'll want to keep an eye on it, to prevent the glaze from burning. The final temperature should be 175 when you pull the legs off the pit.

      I just did... I go back to whenever if it's what I'm looking to cook to see what everyone does to get there and cherry pick the recipes here and there to get the results I would like. Sometimes I just follow the recipe as is.

    I don't know why your not getting the continued thank you's you deserve for this video in 2018. I started smoking 35 years ago with an old freezer that I gutted and made into a smoker because that's all I knew how to do. I'll bet there's a heck of allot of us that started that way. Now I'm 61 years old. We moved and have DSL internet. Just discovered you in July 2018. Thank you much. I'll never be a competition guy, but now I might be a hero in my family circle.     I made these lollipops for Super Bowl party. I followed your recipe and instructions and they turned out perfect. Never made these before so I was a little nervous. I got so many compliments. I made 24 and they were gone in 30 minutes. I also made your smoked party wing recipe yesterday and they were also great. Thanks for your great recipes.       Though that cant be bad, you end up blocking the chicken from absorbing that beautiful smoke. Maybe wrap the bones in bacon so the juices drip down on the meat

    Just got your package today; the BBQ run, and your sauce, your store doesn't sell your AP spice but this weekend I'm doing a BBQ for about 30 people, and I'm going to make these.     Just made these on my Traeger, holy sweet jesus did they ever turn out. The prep is a bit tedious but the results are unreal. Great beer drinking 2 bite appetizer; tender, moist and smoky. Well worth the effort, thanks Mac!!!

    I used this recipe and they turned out fantastic. I did about 18, and it took a long time to prep. Those tendons are tricky and slippery, and sometimes the small bone does not want to break off near its base. I think the work was worth it, as I hate those dangling tendons on regular drumsticks.

    Another awesome recipe, this is the best BBQ channel online!
    Few French cuisine tricks: If you take that rag and grab the tendons, you should be able to pull them out entirely instead of just cutting them off. That way it won't end up in the final product at all for easier eating. Another presentation thing would be to cut the knuckle of (which is easy with a big knife after cooking).

    You are "The" BBQ pit master! Love all of your work and sauces. Keep the videos coming I'll try them all! I failed so many ribs and chicken and sadly my thanksgiving turkey, about sold me smoker and gave up. Then I found your channel and work and you gave me new hope and after buying your products and recipes on here it's turning around. I'm going to need to order your large size bags of season and gallon of sauce. After making the lollipops I had to use the whole 12 oz bottle to heat it up and then I couldn't use the rest.     I am a new subscriber and I do love the videos I have seen so far and I am hoping there will be plenty more to watch frequently , the only thing I would say and I am not trying to be rude is that , everyone seems to make videos with smokers and other things but ALWAYS neglect that a lot of people just have gas grills / common bbq's and we need to know the temperature to hold / use and time frame for our bbq and not just ... how many coals to use or what time on the smoker etc . We need the conversion of the temps and times for our gas grill and if there is a way to smoke and such on the gas grill adding that info helps , other than that ... LOVE the work you do brother .. great ideas , methods , skill , ingredients etc.

      Everything is better with butter. It's commonly used for smoking thighs, but no FoodTuber except Mr. Reed seems to do that step for the lollipops. That's why he's so awesome.

    I ordered bunch of seasoning and sauce. every time we have someone over they want to know how to get there bbq this good so I give them some of each now I have to order some more. The legs look great maybe I will do some this weekend while I still have some seasoning and sauce left.
