They look awesome. I usually use shredded braised chuck roast too but don't dip the tortillas in sauce before putting in skillet, will try that....thanks!
Looks delicious, but further browning of the chuck roast would develop a much stronger Umami flavor. It can't be done @ 2 minutes per side. Take it to a much darker brown and your taste buds will explode!
We have made these for years, we call them Tijuana tacos. We add little yellow peppers about seven of them while the roast is simmering just for a little heat.
