I have a number of knit tank tops and crop tops mostly in merino sock yarn and honestly they are very breathable and perfect even in humid, hot weather. The wool is moisture wicking as opposed to moisture absorbing like cotton. Stick with fingering or at most sport weight wool and you'll be fine.
