Canning Veva’s Pickled Beet Recipe-THE BEST PICKLED BEETS!!

  • My 86 year mom brought me this recipe last year when she visited. Her Pickled Beets were always my favorite. Perfect as a snack or with dinner! My favorite was pickled beets with her homemade hamburger gravy and mashed potatoes! So simple but so good! If you like pickled beets you need to try this easy, simple recipe! Canning is fun and easy and I take you through step by step
    Veva’s Pickled Beet Recipe
    3 qts peeled, cooked small beets. May half or quarter
    Brine
    2 cups sugar
    3.5 cups vinegar
    1.5 cups water
    1.5 tsp salt
    Into cloth bag put-
    1 Tab pickling spice
    2 bay leaves crumbled
    1/2 tsp fry mustard
    4 or 5 whole cloves
    1/3 cup horseradish
    Combine all ingredients and bring to boil. Summer for 15 minutes
    Pack beets in hot jars and add brine to 1/2 inch headspace. Debubble and adjust headspace. Wipe edges of jar and add lids
    Process in boiling hiit water bath for 30 minutes.
    Let the jars set on your pantry shelf for a couple weeks. The beets taste better the longer they sit.

    Renee, thanks for sharing your mom's beet recipe. I have never heard of adding horseradish in pickled beets, but that sounds good.😊

    I just made this recipe but sadly I did not have any horseradish on hand. I used the beet water that I cooked the beets in in place of water in the brine

      I am always worried I didn’t clean my beets well enough!😂. It isn’t a lot of horseradish so I am sure they will still be yummy!

    I prefer to no use any sweetener at all. How do I adjust the recipe for that ? They look great by the way. Thank you

      The sugar is for flavor, not safety so you could cut back. They will be very “tart” with no sugar. Add an equal about of vinegar and water to make more brine. Thank you.

    Please give details if you've done something in advance. How long did you cook your beets in order to get the skins to peel off easily?

      It depends on the size of the beets. I cook until a knife slides in easily to the center. It averages 20-25 minutes less if small

    I’m wondering about safety, I’d like to omit the salt and most spices, and use only clove and cinnamon. Would that still be safe, also could I use a little less vinegar?

      You can change the dry spices and it will be safe but not the vinegar

    I am a sometimes successful 75 year old city gardner. I love pickled beets. Thank you so much for this recipe. ❤️ When I Grow the beets and harvest them or find beets at a price I’ll pay for them I’ll use your recipe. I will use gloves for this job though😅
    I will use gloves for taking off the peels and cutting them up.
    Do your hands get stained a nice purple color? How do you get rid of the color on your hands if they get stained purple? Thanks for showing us how and including your moms recipe. I hope to use it this year, when beets come in. How wide is your metal bowl at the top. There are lots of different sizes to those bowls and I want one the same size you use. Thank you. So are you going to make another batch of these.= 12 pints for you this coming year- 1 pint a month?

      I am definitely making them this year. I usually give some away to family. I like to have a minimum of 8 jars. More is always good! lol. My hands didn’t stay purple. I used some Dawn dish soap and it came off pretty easy! I’m not good with gloves. I will have to watch to see what bowl I used and report back lol. I love this recipe so much!     I love pickled beets as well. Hum, I like the idea of horseradish. I think I’ll try your recipe with a few jars next year.

    Love pickled beets would of never thought of putting horse radish in it..Love horse radish🐴🐴

      @@pikecreekfarm me too! I definitely need more. I planted seeds and nothing ever came up and I think it’s to late for a fall beets in NJ. I’m not sure. I’ll have to look that up again lol
