To reassure new canners who may not be able to budget in an AA, honestly, a Presto and AA canners have the exact same end results. Set jars processed in each one next to each other and you won’t know which jar was done in which canner, they have the same with taste and texture of the food processed in both canners. I always suggest to those with budget limits to get a Presto and then buy as many jars and lids as they can, especially with the shortages we have experienced in the last few years (Superb lids are excellent, heavy duty, and made in the USA!). Prestos are also passed down generations. I have 3 AA and 2 Prestos and also don’t find the AA “no seal” to be any advantage at all. The AA still require the rims to be greased up or the lid won’t seal and I find the lids sometimes finicky and just more work to do all the tightening than it is to just put on the Presto. I have a 25+ year old Presto still going strong with the original seal, but I do have extra seals on hand if needed. The weight of the AA’s is now a actual concern as I get older (I hate to admit that! 😉). With all that considered, I feel it’s really just personal preference on which canner a person chooses. I use my Prestos way more than the AA, they are just easier to use. I also now use only the weighted regulators (jiggler) and no babysitting the gauge. This can be doen with both the AA and Presto. The presto has the 3 piece weight. But for big canning batches, the AA is the way to go. They make some LARGE canners, ours are too big to set of the stove so must be used outside on a propane burner. It sure is nice to do big batches all at once when you need to. Thank you for your video, it’s so nice to have ready made meals on the shelf. I thinks it’s especially important these days as weather and other issues seem to be happening more frequently. It’s an important skill to share with others.
I have the Instant Pot Max and absolutely LOVE it! I have pressured canned for years in the presto canner and what a pain it was. With the IP Max there is hardly any fuss! However, it only does pints, which for me and my husband is perfect.
I love my Presto canner. I got it at a flea market and just had to buy a new rubber gasket and got a weighted gauge. Cost about half of what it would have new.
After purchasing two Prestos, both of which still work well, I got fed up with replacing gaskets, often even after testing before a new canning session when they appeared to be okay and then began spewing steam when the actual canning session began. I donated both to charity and purchased an All American ending that anxiety permanently. When I purchased the first Presto I had never even heard of the All American but if I had, I think I would have done more research and just bit the bullet and saved up for it. This is my canner for life; no electronics to fail at any point and no gaskets to fail at the moment they are needed. Also, I purchased the 930 allowing me to can 14 quarts at a time saving tons of extra work and time on large batch canning. No Presto or other electronic device will handle a double rack of quarts. Time is money and life is short, so cutting a 6 hour process in half is significant, leaving time to perform other duties elsewhere.
I am a seasoned canner over 50 years. What I’ve always taught and told new canners, respect for the process! This is not something you can skip steps and time. The beauty of canning in a pressure canner, is you can completely clean your kitchen while watching the canner! Thank you for teaching and encouraging new canners.
This was by far one of the best videos on canning, especially for a beginner, as you not only demonstrated each step clearly, you explained the purpose of each step, ie, why headspace is important, wiping the rims, etc. I began my pressure canner journey spring of last year. Honestly folks, just read your approved Ball or USDA guides carefully, watch a video such as this one, have all of your supplies clean and ready and take your time. Don't rush or skip steps. This will build your confidence and ensure you have safe food for you and your family. Plus, it is a real good feeling of accomplishment to see the resulsts of your work all lined up on the shelf! I'm always late to the party these days. No canning for me this year. I'm recovering from surgery and radiation therapy and still in the "What's next?" phase of life. Annoying but being able to watch this helps fill that void and lets me set goals for not long from now. I have a couple of canners. My first, from my youth, is a Presto but it is so tall and I am so short that I just wasn't able to make it work. BUT miracle of miracles, I needed an easier way to get on the table for radiation and found a step thingey that is only 3 ½" tall. And now it will be a blessing in the kitchen. If I step up on it, I can reach into the canner to place jars and see the water level. O happy day!! Excited for when I am back in the game. Love all my canners but being able to do double layers is a game changer. My favorite is the AA because of not needing a gasket should that ever become an issue. It did not have a weighted gauge. I missed hearing the reassuring jiggle so I got one from the AA people. Very nice. Great video.

There are so many unsafe canning videos being posted on You Tube, it's refreshing to see the care you take to explain the process accurately. Tasty looking meals, too! 😊
I do however think it's a good idea to ask oneself, safe according to who? The USDA or actual science? The WORLD outside of the US can things very differently to USDA "approved" recipes and methods and are tested as safe too. And the USDA have been known to be wrong at times due to letting students perform the testing. And haven't ran any tests since the 70's. A lot has happened since, and there's European source's that test today. So if safety is a priority (which it of course should be) I'd update my scientific knowledge and contemporary tests elsewhere and not just the USDA's old recommendations. It's not rebel at all to keep updated.
I watch several women from Eastern Europe, Russia, India, Turkey ECT and have canned many items in their ways and have had no problems. I like the idea of having multiple ways of preserving food these days.
I love your idea of pressure canning jars of water first until the "sweet spot" is found. I have had my pressure canner for over a year but have been too intimated to dive in. I will use this tip in order to get comfortable with my canner first! Great video, thanks!
Plus, you're supposed to have a gallon of water, per person, in a household, per day, stored up; in case of an emergency, where you lose electric, for several days, and your water pump runs on electric, or for emergencies that contaminate the ground water we drink, for those on a well.

You are correct about add the spices later when you open jar. I found that out with cayenne added to tomato bisque soup. Yikes it got hot. I love my electric Presto pressure/water bath canner. I don’t do huge batches and this is perfect for us. I had the microwave over the stove and out it went- always in the way. Love the idea of make ahead meals! Thank you. Currently into soup bricks for freezer. When summer is busy those quick meals are handy! Or anytime as sometimes cooking is a drag for me anyways. Very good how you showed ALL the important processes before adding lid. Good Job!🎉 One thing I want to mention about cleaning lids. Do not scratch the coating as it will cause the lid to corrode. Nice that you mentioned how you will use the end product. I’ve seen siphoning on other canned goods, it must be the length of time in those type of canners. I had a bit on one batch of tomatoes in my electric, but I think I should have waited to remove them a bit longer even though there is a built in cool down time.
I found out that garlic becomes amplified also in canning and definitely in freezing meals. So I do add chilies, peppers, black pepper, capers, etc at half batch in the jar and then add more when I dump it into a pan. I just never know how hot or strong certain spices will get in the canning process. It also depends if the spice is fat soluble or water soluble - look up what spices are fat soluble if you have a more fat in the recipe or are using a fatty cut of meat.
I have the NESCO electric canners and it is perfect for me. A lot of ladies as they get older have a hard time making large batches and hard to lug around a giant metal canner in the stove.
Made all 4 of these recipes one day last week. They turned out beautiful. Doing a freezer clean out as half a beef coming soon. Really great and easy recipes. Can't wait for more!

I used presto pressure cooker for yrs. I have an all american 921 for the last ten yrs. I love it! I have been canning for 45 yrs and I still follow safe canning recipes.

This video popped up as a suggestion and I am so glad it did! I have a new (well, I bought it 2 years ago as a "backup" for the one I had) AA 921 still in the box. The pressure canner that I have been using is no longer made and the gasket is stretched and dried out. Part of that *could be that I let it sit in the box for 5 years because I was intimidated by it! But after watching a couple of canning videos, I took the plunge and never looked back! I chose the AA 921 because so many you tubers back then seemed to prefer them. Plus, they were so much cheaper and easier to find. Anyway, I plan on unboxing it here in the next few days so I can can some "on sale" chicken breasts and beef roasts. So, this video was perfect timing! Thank you for sharing your recipes. I’ve canned garden produce for years but never prepared meals. Love this idea. I’ve used Presto canner for years with no problems. I also got a canning book from our county extension office. The are a great resource.

Great video! Thank you for your clear communication. The only thing I didn't hear you mention is that everyone needs to know their elevation to know their correct canning pressure. You stated that you use 10 psi, and mine is 12 psi because of my location. You made quick work of that!

Those look like great recipes! I haven't done much prepared meal canning so far, but I think I need to give it a try. RE: the siphoning -- When I open the canner, I usually prop the lid over it so that it cools off a little more slowly, and wait more like 20-30 minutes or more before taking the jars out. It seems to minimize the siphoning to give the cool-down process a bit longer.

The All American canner is without a doubt the best on the market. I purchased the 921 model in 2015 for $209.99. I actually bought two at the same time and gave one to my son because he loves to can as much as I do. I thought that was a lot of money then but now they are $419.95 so I am very thankful I bought mine when I did. It has never given me a moment of trouble and I don't expect any in the future. After a very long day of running errands, I am about to get a jar of my canned beef tips and make a delicious meal for my family. Canning meals is the best decision I have made! Yours look amazing! I have not made pulled pork but that is coming soon! I have found that if I leave the jars in the canner for about 30 minutes after the pressure is at zero, I have never had any syphoning whatsoever.

I have two AA 921’s and I bought first one basing on my microwave overhead too. I’ve since remodeled kitchen and no longer have to worry about headspace but bought 2nd identical one. I got to thinking that the 921 is easier for me to handle than an even taller one.

I have done the same thing with canning multiple different like-type items when I just have small batches and they all have the same canning pressure and time. Otherwise, these would take forever to get done in separate batches. Great job and excellent explanations for the newbies!

My pressure canner (Presto) came as a dial gauge only, but I found that the manufacturer made a weighted rocker for it and since getting that it is so much easier/less stressful to use! I'm seriously considering an electric pressure canner for small batch/leftovers.
@@seedandsparrowhomestead Ladies, I would humbly suggest you watch Leisa Sutton's video called, "You're Not Going To Like What I'm Going To Say", where she discusses the topic of electric canners. Just like you, she is a stickler for safe canning.
I suggest checking out rose red homestead who actually scientifically tested multiple of electric canners and definitely practice safe canning. I think that’s a true good place to start with research as she truly do her research and through with her processes. Some of them she tested failed and some failed in certain situations but doesn’t write off new inventions because they deemed them unsafe without proper testing and research of the product. I truly love her channel.

I'm glad you are gaining confidence in getting started pressure canning. Please be sure that you use a pressure canner not a pressure cooker to can your food. They are not the same appliance. Pressure cookers are not made to be used as a pressure canner as It's not able to be regulated correctly for the canning time required. Thus using a pressure cooker for pressure canning can make the food unsafe as all the air might not be removed from the jars if canning is attempted in only a pressure cooker.

Yesterday I made the chicken recipe and the beef recipe and used my all American canner for the first time❤ the first run. I didn’t have the lid quite even enough all the way around and it wouldn’t build the steam I needed😢… so after a frustrating couple of hours wasted ,I waited until I could remove the lid to check the water level -(which was fine )-and my husband helped me even the lid all the way around and that seemed to do the trick! I have about the same level in my jars that you do a little over half probably 2/3 ??- 33:36 you mentioned siphoning. I was thinking that the potatoes cooking probably absorbed that amount of liquid?? Regardless, it sounds like you did the research and they are safe to shelve, so I appreciate the comment at the end 👍🏻

Hi! I wanted to get back to you on this. We enjoyed them all! The stroganoff was probably our least favorite but I’d still make it again. Pot roast was great, chicken and gravy was great and the pork was delicious, I did add additional bbq sauce to it though!

I too have a microwave above my stove. I have an AA931. I just pull the stove out using the oven door. It slides out easily. Then I can use the front burner and the microwave if needed. I can double stack with mine.
Wow -thank you for this video! I have never canned and just learned you can process meat meals in a jar. I live on the west coast and I don't know anyone who cans but I remember my mother canned some fruit once and without a pressure cooker. Thank you for your explanation of this process. I will buy the Ball book to learn more about this process. I meal prep and use my freezer but this is a fantastic alternative to that given that this would be great when there is a power outage, etc. Any suggestions on a smaller pressure cooker for a smaller kitchen?

You can save a lot of time by not bothering to measure & mix in a bowl. Just divide the amount of each ingredient by however many jars you’re doing (2 qt or 4 pint) then just evenly distribute ingredients into the jars. So 1/2 cup of celery per qt. Just dump straight into the jar, do that for all ingredients. Then your liquid of choice to headspace line. De bubble, more liquid if necessary to ensure proper headspace. Wipe rim, lid, ring… into the canner.
A lot of people, like you and I apparently, are ok with vague instructions like that, but you know there are people that are like “I need proper measurements for each ingredient!” And they are rabid about it. B8t I agree with you. 100%.

Separate jars in The same canner load? You can, but if one gets processed for a longer time you must process both at the longer time.

I love your idea of pressure canning jars of water first until the "sweet spot" is found. I have had my pressure canner for over a year but have been too intimated to dive in. I will use this tip in order to get comfortable with my canner first! Great video, thanks!

I did dry beans. I thought that would be good to start with and if it failed I could freeze them.
You are correct about add the spices later when you open jar. I found that out with cayenne added to tomato bisque soup. Yikes it got hot.
I love my electric Presto pressure/water bath canner. I don’t do huge batches and this is perfect for us.
I had the microwave over the stove and out it went- always in the way.

Currently into soup bricks for freezer. When summer is busy those quick meals are handy! Or anytime as sometimes cooking is a drag for me anyways.

One thing I want to mention about cleaning lids. Do not scratch the coating as it will cause the lid to corrode.

I’ve seen siphoning on other canned goods, it must be the length of time in those type of canners. I had a bit on one batch of tomatoes in my electric, but I think I should have waited to remove them a bit longer even though there is a built in cool down time.
I found out that garlic becomes amplified also in canning and definitely in freezing meals. So I do add chilies, peppers, black pepper, capers, etc at half batch in the jar and then add more when I dump it into a pan. I just never know how hot or strong certain spices will get in the canning process. It also depends if the spice is fat soluble or water soluble - look up what spices are fat soluble if you have a more fat in the recipe or are using a fatty cut of meat.
I have the NESCO electric canners and it is perfect for me. A lot of ladies as they get older have a hard time making large batches and hard to lug around a giant metal canner in the stove.
Made all 4 of these recipes one day last week. They turned out beautiful. Doing a freezer clean out as half a beef coming soon. Really great and easy recipes. Can't wait for more!

I really like the idea of making multiple recipes in one canner load. We can try it to see if we like it, but this will also allow me to quickly stock my parents’ pantry quickly with a variety of ready to eat meals. Such a wonderful idea!

Heather A little bit of information when canning with a microwave over your stove open the door of the microwave when your canner is letting off steam This will save your door on the microwave Your door will become warped This happened to me Had to buy a new one Once the steaming is done and you put your gauge on the canner you can close the door Just a suggestion
This video popped up as a suggestion and I am so glad it did! I have a new (well, I bought it 2 years ago as a "backup" for the one I had) AA 921 still in the box. The pressure canner that I have been using is no longer made and the gasket is stretched and dried out. Part of that *could be that I let it sit in the box for 5 years because I was intimidated by it! But after watching a couple of canning videos, I took the plunge and never looked back! I chose the AA 921 because so many you tubers back then seemed to prefer them. Plus, they were so much cheaper and easier to find. Anyway, I plan on unboxing it here in the next few days so I can can some "on sale" chicken breasts and beef roasts. So, this video was perfect timing! Thank you for sharing your recipes. I’ve canned garden produce for years but never prepared meals. Love this idea. I’ve used Presto canner for years with no problems. I also got a canning book from our county extension office. The are a great resource.

Those look like great recipes! I haven't done much prepared meal canning so far, but I think I need to give it a try. RE: the siphoning -- When I open the canner, I usually prop the lid over it so that it cools off a little more slowly, and wait more like 20-30 minutes or more before taking the jars out. It seems to minimize the siphoning to give the cool-down process a bit longer.

The All American canner is without a doubt the best on the market. I purchased the 921 model in 2015 for $209.99. I actually bought two at the same time and gave one to my son because he loves to can as much as I do. I thought that was a lot of money then but now they are $419.95 so I am very thankful I bought mine when I did. It has never given me a moment of trouble and I don't expect any in the future. After a very long day of running errands, I am about to get a jar of my canned beef tips and make a delicious meal for my family. Canning meals is the best decision I have made! Yours look amazing! I have not made pulled pork but that is coming soon! I have found that if I leave the jars in the canner for about 30 minutes after the pressure is at zero, I have never had any syphoning whatsoever.

I bought my AA 921 around same time. Foreseeing the insane price increases, I bought a second 921 last year and paid over $300. Glad I did!
I have two AA 921’s and I bought first one basing on my microwave overhead too. I’ve since remodeled kitchen and no longer have to worry about headspace but bought 2nd identical one. I got to thinking that the 921 is easier for me to handle than an even taller one.

I have done the same thing with canning multiple different like-type items when I just have small batches and they all have the same canning pressure and time. Otherwise, these would take forever to get done in separate batches. Great job and excellent explanations for the newbies!

My pressure canner (Presto) came as a dial gauge only, but I found that the manufacturer made a weighted rocker for it and since getting that it is so much easier/less stressful to use! I'm seriously considering an electric pressure canner for small batch/leftovers.

@@seedandsparrowhomestead Ladies, I would humbly suggest you watch Leisa Sutton's video called, "You're Not Going To Like What I'm Going To Say", where she discusses the topic of electric canners. Just like you, she is a stickler for safe canning.
I suggest checking out rose red homestead who actually scientifically tested multiple of electric canners and definitely practice safe canning. I think that’s a true good place to start with research as she truly do her research and through with her processes. Some of them she tested failed and some failed in certain situations but doesn’t write off new inventions because they deemed them unsafe without proper testing and research of the product. I truly love her channel.

I'm glad you are gaining confidence in getting started pressure canning. Please be sure that you use a pressure canner not a pressure cooker to can your food. They are not the same appliance. Pressure cookers are not made to be used as a pressure canner as It's not able to be regulated correctly for the canning time required. Thus using a pressure cooker for pressure canning can make the food unsafe as all the air might not be removed from the jars if canning is attempted in only a pressure cooker.

Yesterday I made the chicken recipe and the beef recipe and used my all American canner for the first time❤ the first run. I didn’t have the lid quite even enough all the way around and it wouldn’t build the steam I needed😢… so after a frustrating couple of hours wasted ,I waited until I could remove the lid to check the water level -(which was fine )-and my husband helped me even the lid all the way around and that seemed to do the trick!
I have about the same level in my jars that you do a little over half probably 2/3 ??- 33:36 you mentioned siphoning. I was thinking that the potatoes cooking probably absorbed that amount of liquid??
Regardless, it sounds like you did the research and they are safe to shelve, so I appreciate the comment at the end 👍🏻

Hi! I wanted to get back to you on this. We enjoyed them all! The stroganoff was probably our least favorite but I’d still make it again. Pot roast was great, chicken and gravy was great and the pork was delicious, I did add additional bbq sauce to it though!

i have both a Presto and an AA 941. I prefer the AA for big jobs but I love my presto too. we call my AA "The Beast" bc it's HUGE
And yes in the 941 you can stack quarts! But BOY you better have a power burner

I too have a microwave above my stove. I have an AA931. I just pull the stove out using the oven door. It slides out easily. Then I can use the front burner and the microwave if needed. I can double stack with mine.

I live on the west coast and I don't know anyone who cans but I remember my mother canned some fruit once and without a pressure cooker. Thank you for your explanation of this process. I will buy the Ball book to learn more about this process. I meal prep and use my freezer but this is a fantastic alternative to that given that this would be great when there is a power outage, etc. Any suggestions on a smaller pressure cooker for a smaller kitchen?

You can save a lot of time by not bothering to measure & mix in a bowl. Just divide the amount of each ingredient by however many jars you’re doing (2 qt or 4 pint) then just evenly distribute ingredients into the jars. So 1/2 cup of celery per qt. Just dump straight into the jar, do that for all ingredients. Then your liquid of choice to headspace line. De bubble, more liquid if necessary to ensure proper headspace. Wipe rim, lid, ring… into the canner.
A lot of people, like you and I apparently, are ok with vague instructions like that, but you know there are people that are like “I need proper measurements for each ingredient!”
And they are rabid about it. B8t I agree with you. 100%.
I typically do, but I like to go 💯 by the book when instructing to avoid confusion and it recommended mixing ahead. ☺️❤️
