My favorite way to get beets ready to peel is in the oven (400 degrees). I put them in a roasting pan with a half inch of water, cover tightly with foil and roast for about 20 minutes. Turn oven off, let rest for 20 minutes then remove from oven and let cool until you can handle them. So easy.
I was lucky this fall to find beets on sale at a local grocer for 49 cents a pound one week, and they all the size of a plum or smaller! At least half were golfball sized. So tender and easy to cook and peel. I was able to can 12 pints of whole baby beets, 10 pints quarted and another 6 pints sliced. Then I went back for another 12 pounds for plain pressure canned. I'm set!😊

I plant the clyndri beets because they cook quicker. I plant in kids swimming pools since I am unable to plant a big garden. I am 80 so now planting this way and in buckets is how I roll. Thank you for all you do, you are amazing.
I have lots of pickled beets on the shelf.. absolutely love them.. I also did a case of plain beets for my mom, she like them plain and then makes them into Harvard beets.. We grow beets- but, they don’t reach maturity. I follow mom’s procedure and tie all the spices into a piece of cheesecloth. Pickled beets in a sandwich 😊

So a lady only processed her for 15 minutes. I have never processed pickled beets for 15 minutes. We lived in Idaho and I always did them longer. Now that I’m in Florida I will do them for 30 minutes

I canned pickled beets yesterday. We grew them and every year they do better. For Easter I have taken over making pickled eggs that my grandmother used to make. They are my Dad's favorite.
I don’t have a problem with the skins on beets. I put them in a pot fill with water to cover. Bring to a boil and cook until a knife inserted into the beets come out easily. They peel very easily. Sorry they were a problem today. Also if the beets aren’t cleaned very well they will taste like dirt. Love all you do. Thank you.

I used the boiled egg method and put the beets in ice water and the skins just slipped off. Then I put each beet in a 'french-fry' cutter and it slide them right through like soft butter. Then stuffed them in jars and pressure canned them (after adding the vinegar and salt and sugar solution) for 30 minutes. I don't eat them so had to rely on husband to taste test. He said they tasted 'just like store bought' - so it was a success!

I love making and canning pickled beets every year from our garden beets. I try to pick small ones to leave whole. It's a very old recipe from my best friends mother-in-law. Only use vinegar, water, sugar, ginger, salt and everyone loves them. I don't like the Ball recipe but love my steam canner.

I watched a youtube video that explained how to use the freeze dryer to vacuum steal quart jars with mason lids. take the inside unit out and put the jars in ready to seal with rings on loose and use the vacuum function by itself. can do six jars at a time.

Since they were already cooked, I’m assuming she lowered the processing time to 10 minutes in the water bath. I do see USDA says 30 minutes. Your thoughts?

I know a lot of people that recan things. I would so I didn't lose all that paste or if u don't have room in ur freezer for that much. I would add I believe its one teaspoon of lemon juice to the jars before canning. Good luck.

One of the things we have found is if you are canning commercially canned foods (tomatoes, carrots, corn...) the possibility is that they will become mushy and the texture and taste will be different that if you use fresh from the beginning. Thanks for watching our channel. Jim

We recently had some solar activity that triggered an aurora borealis type event from solar corona eruptions that could be seen at many locations worldwide. I am wondering if the low pH of the brine penetrates the beets during processing to lower its pH, or how does that work? I notice that some salsa Ingredients have a pH above 4.6. Does acidification lower the pH of those foods during processing making them safe?
Red beets lose color whether or not they are boiled with the stem. That said, there is a big difference in color after they’re canned. When I boil them without the stem, after a few months, they look “anemic” in the jar. They taste the same but my pickles aren’t as pretty.
Question: is this a recipe and then you steam them or is it just a recipe and then you steam them? I’m not seeing a lot of good reviews on this book for canning. I trust what you do though. Thank you.

We were not able to replicate those results and abandoned freeze drier vacuum sealing. Jim

I love them that way as well. Once you get the skins off they are very easy to pressure can without pickling.

That is a great idea. I have toyed with a few ideas on how best to do that. I will add that idea to my growing list for future videos.

I love pickled beets, but no one else does. Could you make this in half-pint jars?
Yes but be sure to process them for the same amount of time as pints.
I am wondering if the low pH of the brine penetrates the beets during processing to lower its pH, or how does that work? I notice that some salsa Ingredients have a pH above 4.6. Does acidification lower the pH of those foods during processing making them safe?
Red beets lose color whether or not they are boiled with the stem. That said, there is a big difference in color after they’re canned. When I boil them without the stem, after a few months, they look “anemic” in the jar. They taste the same but my pickles aren’t as pretty.

After cooking the beets dump the hot beets in ice water for a few min. The skins will slide off.
