This TikTok was making the rounds, I'm an absolute sucker for pancakes and when they're vegan AND they've got protein I'm INNN. Now, not totally sure how the tofu is going to come into play, but they looked too good not to try.

Thanks for watching, pals. Pancakes can always make every day batter- better. NAME YA FAVORITE PANCAKE TOPPING (mine are banana pancakes or berries) Also lmk if there are any other recipes I should try!
A few tips (with love):
Whole Foods has silken tofu (the TJs one you’re using is like a medium firm). Blending flour can make it gummy. I’d blend the tofu and add it with the rest of the wet to the dry for the fluffiest texture. Loving the protein vids!! 💜
I was noticing the tofu too. Silken tofu also had a lot less tofu flavor than other kinds which helps it work with sweet recipes for me
Tip: liquids are still best measured in a measuring cup, unless theyre water. ml on a scale essentially reads like grams and assumes any liquid will have the same density as water, so more viscous liquids, like milks, may not read as reliably.
Yes the ml setting is useless IMO, it's just accurate for water. Better ti Stick with grams with everything liquido or not and it Will Always be accurate no matter the density.
This is a VERY welcome tip, thank you so much
I was typing up something like this and then saw you mentioned it already. If its water, then 1g = 1mL, so you can do it by weight. In this case I think it was only off by a few grams here and there per 100mL so not a big deal. Figuring out the weight is helpful though if you want to track things like protein because its so much more accurate than using volume measurement, more so for solid things than liquids.
Or if you have a proper european reicipie the will give you the liquids in gramm. So you can online one scale for All of it.
And there are a few scales that can keep a few kg so you can put the Blender right on it and Do not have to clean a Transfer medium
Please Merle, never stop doing these videos
Don't worry dear, as a European, I feel the same anger when I see a recipe with your "cup" measurement :"DDDDDD
understandable! we're creatures of habit!
I really like to see you enjoy yourself tweeking recipes 😂 I suggest trying Pick up Limes’ “High protein vegan pancakes”, they are also made with tofu and are sooo good. I can’t find silken Tofu where I live so I use firm tofu and they turn out fantastic!
You getting mad at the cabinet for being open made me cry laugh- just the range of emotions in such a short time 😆
It’s a tough switch to grams but it makes baking more consistent and reliable! I hate seeing cups now on recipes lol.
Whatever you do US do not change.😂 Here in UK we ‘changed’ to metric many, many years ago so all that happened was they changed the labels. A 1lb pot of jam (jelly in US) became 454g. Incidentally France metric since Napoleon still has poides (pounds)
As asian . I hate cup 😢😢😢😢
The brilliant thing about weighing ingredients is that you can add them straight to your bowl (as long as you are careful and not heavy handed) or in this case straight to your blender and save some washing up. Ml (millilitres) is a volume measure not a weight one, so 1 US cup is 240mls so you can still use cups if you want.
Yay, a new Merle video! 🥳Love these vids
your tasty pancake recipe is still my go to!!! its perfect!!
I've never made vegan pancakes, but they are also good with bananas and oats. I've also used peanut butter powder.
I think peanut powder is my next move for pancakes
That was a fun pancake video. Laughing and getting hungry at the same time. Will have to search out your base pancake recipe. Ours are pretty good but sounds like yours might be even better. Either way it’s gonna be a pancake weekend over here.
Haha hilarious video thank you for sharing your rendition! 😆
Glad you enjoyed it!
I totally understand as a metric user, when i see ounces or cups or whatever i get soo confused and often have google how much it is
Yes to buttermilk and letting the batter sit for at least 10 minutes, especially if you are doing gluten free. Or use yogurt instead of buttermilk, that also gives the extra kick. The custardy texture looks interesting, will have to try them to see if I like it.
These look awesome!! I dont know what happened... maybe its in the water or something, but I've also been hyper focused on protein haha
We're also both on a workout grind these days! Makes sense!!
Baldur's Gate 3 and Pancakes 🥞 Merle is living her best life ❤
omg Merle I never thought you'd be into twenty one pilots! I pretty much stopped listening to them for a while but the new singles got me so hyped up for the new album. I loooove next semester!!
Hear me out: PROTEIN POWDER PANCAKES ARE BOMB!!!
Here's how I make mine (yields 2 servings):
- 100 g flour
- 40 g vanilla protein powder (I use VEGA)
- 1 tbsp baking powder
- 1/2 tsp salt
- 2 tbsp maple syrup
- 1 cup of water
You absolutely do not need the vinegar, these pancakes are SUPER fluffy just like this. I like to add chocolate chips to mine and top them with warm strawberries (simply microwave frozen strawberries).
It's one of my favorite breakfasts ever! So so SOOOOOO good!
I also have Backslide stuck in my head alternating with Espresso 😂
So much energy in this video, Merle. Is it the fitness, the protein, or have you been drinking coffee?
The thrill of pancakes for lunch!
Merle, if you want to make it more proteic you could mix one scoop of protein powder with some plant milk until you reach the consistency you wish for, and spread this cream on top of the pancakes. It's so good :)
Brilliant!
Oh Merle you are too funny ahaha 😂😂. I love that you didn't give up haha. Also nothing makes me happier than to hear you prefer the grams and ML, it really is the superior and better way of measuring. The Celsius and metric systems are just so much better, like you said, they just make sense. I wish you Americans would just get on board and make your lives easier haha. 🎉💗✌️
Can't wait for the next one ❤❤❤.
Yay, its my girl Merle!
I wonder if you can take your recipe (the one with the protein powder), and do baked pancakes instead of on the stove top.
Somebody is a GENIUS
Yeah I’ve seen people make a tray in the oven and then cut them out like…..a pan cake. Woah :) Might have to try some day.
I decided to try these out as waffles and it works pretty well!
Oh nice! I'm glad you liked it!!!
Keep going with the Veagan High protein recipes YEEEES!
Glad you like em!
Milliliters is a measurement of volume, so it shouldn’t be measured with a scale. And that Trader Joe’s tofu isn’t silken tofu
me every day all day: not knowing if the words that come out of my mouth make any sense at all but them making sense in my mind
so happy there's other people feeling the same way 😅💛
2:00 It’s ok because I get that same twinge when I click on a recipe and it’s in cups and ounces
I'm sure!
In my experience, if you do the protein powder thing to non vegan pancakes they also fall apart like that! Can't wait to finally try a good vegan recipe!
Will you do a review of protein pancake mixes like Lakanto birch benders etc but making them Vegan?
this is a vvvv good idea
@@MerleONeal ahah they are few and far between:)
Love it! What protein powder are you using?
Garden of Life!
@@MerleONeal tysm!
Can you do a vegan protein powder ranking video??
Yes, metric is so good... BUT, F > C, at least for weather -- 1-100 covers most temperatures (and 50 is pretty mid).
Great video :)
YAY!! It's Merle Girl day!!!!
YES!!!! I feel much the same about the metric system. I totally agree it's way better and more precise, but it's definitely an adjustment (I hate it too hahahaha). However, I don't understand Celsius v Fahrenheit. Fahrenheit is SO much more precise. So, take THAT Europe hahahha. LOVE your channel so much!
Bahahaa shots fired at celsius! I know nothing about the precision of either but I'm here for the drama
zero is freezing , ten is cold , twenty is warm and thirty is hot , it just makes so much more sense lol , and i mean it's not just Europe , but the most part of the world use Celsius
I have tofu to use up I’m totally trying this
I wonder if your version would work as a sheet pan pancake? No flipping and baking might work?
As much as it pains me to correct you... you don't have the best vegan pancake recipe. You have THE BEST pancake recipe, PERIOD! It's the only recipe we use for pancakes. ❤
Isn't milliliters a volume measurement (as opposed to weight)? I'm American too, so I could be wrong, but I think you measure the liquid part in a measuring cup and weigh the solids using grams.
I’m addicted to high protein pancakes! But in my version I just use the protein powder, as tofu is a bit pricey where I live, and I never had any issues! dunno what happened there tho
for some reason anytime I use protein powder it compromises the structure of the pancake... so weird
@@MerleONeal maybe it's an interaction with the milk perhaps? I never use milk because plant based milks where i live are expensive (three cheers for the third world! yay) so the water + oil + pea protein powder already produces the milky texture i'm seeking.
Have we seen the Merle recipe? I really want to know that one now!
My Fluffiest Vegan Pancake recipe is on this channel!! Should be able to search it :)
@@MerleONeal I probably watched it. Sigh. Thanks for the reminder!
Wouldn't doing it in the blender overwork the pancake batter?
link to your best pancake recipe?!
I'm german and a trained chef. I love the cup measurements 😂
It's after 9pm...what am I contemplating making? You guessed it lol
9pm is actually prime pancake time
How much protein powder did you use?
Do you think this batter will work in a waffle iron?
Asking because i really don't know, can you use metal utensils on those pans?
It's a cast iron! so it's good to go :)
Love the new 21 pilots song
YES
Can I use silken tofu? I have some in a tetra pack that needs to be used up.
You're actually supposed to use silken tofu!! haha So it's definitely a good idea
I think you should try some recipes from plantbasedRD
I love their stuff so that's a great idea
❤❤❤❤❤
Hear me out, mix the protein powder with some peanut butter and plant milk and you've got a delicious topping for the pancakes instead of wasting it in the batter😀
Ngl this vid was sweet 😉
Correct me if I’m wrong but she probably doesn’t ask for “buttermilk” because there’s no baking soda in the recipe so while it probably will add flavor it won’t help it rise more because this recipe is using baking powder. Buttermilk and baking powder will not have the same rising effect as buttermilk and baking soda.
i don't think what you used is SILKEN TOFU-
silken tofu is a lot smoother and kinda jiggly? quite watery too?
its not!! but it worked when I added a lil more liquid
@@MerleONeal ah :)>
also try making something with lemon and cacao
I've never had pancakes made with tofu, however I do think that the gumminess you got from her recipe is from the gluten being overworked in the blender. Speaking from experience, overmixed batter leads to that gummy texture (even from hand mixed). If you don't like the gumminess *and* want to stick with the blended method, maybe try a gluten free flour mix instead!
Good note!!
yummy protein pancakes!
Yessss we love pancakes ❤
we sure doooo
I think the first batch fell apart because there was not enough gluten. Eggs are what keep traditional pancakes together. For vegan pancakes the gluten does that and by replacing some of the flour with protein powder the gluten content went down
And too much liquid I guest
You should never replace more than 1/3 of the flour with protein powder if you don’t want to mess with the consistency, sticking to this rule has been crucial for me :)
btw if you wanna bump up the protein in something like pancakes, you could always make a sauce/topping by mixing protein powder with plant milk and keeping it on the thicker side. I’ve done it before and it’s super yummy if you have a good protein powder
SMARTTTT
Well, you kinda made Austrian Kaiserschmarrn with how your version turned out. Add some applesauce, powdered sugar and you got yourself Kaiserschmarrn! 😅
I wonder if your higher-protein pancakes would hold together if you used bread flour instead of all-purpose flour? Maybe after you added the protein powder, the pancakes didn't have enough gluten to hold their shape?
We make like a protein powder w soy/oat milk to make a cream to put on our oatmeal...and that made me think to mix w peanut butter for a topping...JK you just said that
You can still use protein powder just don't cut the flour.
Is that not just regular tofu?
I dont understand what youre saying, soaken tofu? Silken tofu?
Trader Joe’s doesn’t sell silken tofu. You’ll know it’s silken when it’s a custard texture straight out of the container 👍
TOP MENTIONED
FYI ml and g weigh the same on a scale.
Do you think you could use the same recipe in a waffle iron? 🤔
probably!
Make it dairy free does a fluffy protein pancake recipe which are amaaaazing, using protein powder not tofu. Highly recommend to try them.
Definitely skipping adding the protein powder to the pancakes and then just drink a protein shake with them. That way it doesn't muck up the recipe.
Yeah that's absolutely the way forward
protein powder pancakes are so annoying lol, the batter needs to be thick and you have to cook them really low and slow. different protein powders cook differently so it takes a lot of testing to find the right way to make them with the protein powder you have unless you can find a recipe someone made and posted with that specific powder already. tofu pancakes seem so much easier so i'll try this recipe!
vvvvvv good to know
Merle are you ok??
Well we know pancakes are always bad the first time
Unless I missed it she never actually gave the quantity of soy milk just the extra 150 ml
Just added the recipe to the description!
@@MerleONeal Thank you so much!
2 much chaos
Never
the singing is really annoying btw lol
