Nice work. I think the high chromium is getting embedded in the surface of the stone probably more than hard steel. I probably would have started at 400 or even 200 with high chromium stainless.

Definitely would start at a lower grit, IMO.
Isn’t it amazing how you feel after sharpening, have only done a few knives, but it is very soothing and satisfying, I am 68 and wish I would have gotten into this years ago. Great video again, hope you took your medicine

As a former distributor of Nanohone, I was told by Hap that he puts the maximum amount of AO in his stones, thus causing quick cutting but also quick loading of the stone as well. I hope this helps with your understanding of that line of stones. BTW love your videos!! 👏🤙
Thank you. That's awesome that you work for him. I don't know if you saw his comment. I put it at the top. He thought that if I use a lower grit at first, it would take care of some of the heavy work, and therefore there would be less load on the stones.
Ask him how different they are from shapton glass. Far as I can tell they are 99+% identical products, minus the packaging.

@@TylrVncnt Yeah. I have the 200 grit nanohone I got recently to try it. I have a set of the sg, 500, 1k, 4k, 8k. The nanohone is clearly a complete system, a "premium home use" system, which is exactly what the shapton glass is, both using nearly identical idk.. form factors in terms of thinner non-colored stones on thin backing plate, and both being clearly white alumina abrasives in splash and go stone with extremely similar binding. The nanohone seems like a premium tweak to the shapton glass stones. They're not very different at all. Other products like the shapton pro, naniwa pro/chosera, or other products are all much more different than the shapton glass is to the nanohone. If someone didn't already have anything and they didn't care much about prices, the nanohone would a really good choice. For the average user it's hard to argue it's justifiable over shapton glass. For 99.9% of people my suggestion is to get what shapton suggests, 500, 2k Two of the best stones I've ever tried and I've tried a lot.

Chromium carbides probably can be sharpenend without cBN and such , so ZDP-189 is the perfect example :)

Nice job! You make some of the same lip movements l do while sharpening, so now l don't feel like such an oddity lol. I haven't sharpened ZDP myself yet, but what you experienced here seems in line with what others have told me about it. Also, l didn't realize how sexy that Tokushu strop is. I'll definitely be adding one to my order next time l buy anything from them. Never mind that l already have 4 large paddle strops. You can never have too many!

There is no need to use diamond/CNB for the ZDP189. Common alumina stone is for this steel good enough.
High chromium steels have bit gooey sharpening feel. So pronnes for clogging your stones is typical for these steels.

I had no problems. I mean it was just another day at work. I didn't feel like I had to press hard or anything. Chromium is definitely different than vanadium.
Hi Greg, I think the mikro burr comes from the high end PM-Steel. For me it's look like even ZDP-189 is not too difficult to sharpen. Good to know.
Yes, sir, everything we read is that it just basically pills itself off. It was cool to figure it out.
The idea that ZDP is hard to sharpen is a forum myth like everything else everyone in knife land seems to blindly repeat without actually knowing or testing for themselves. For it's given level of edge performance ZDP is by far the easiest steel to sharpen. Thats how it was designed intentionally, with no vanadium carbides. So it can be sharpened on regular whetstones unlike say 10v or whatever. ZDP also takes an extremely fine edge very easily, it deburs very very easily. It's very nice and easy to get it super sharp. The thing is most people absolutely suck at sharpening period. Which is where a lot of myths comes from in general.
@@jeffhicks8428 thing that I like right now is the nuance of lightly rubbing the stone with the side of the Apex. I’m very much into rubbing away the grooves and scratches from the previous stone. It doesn’t take a lot of pressure for the higher walls of the scratches to fall over or rip away. This gives a good knife feel. I’m also working on soft strapping motions on the stone after strapping on leather. I wanna make sure that the leather didn’t roll the edge so I want to realign by just a couple of strokes, on the 10K. I’m just trying to see what that I’ll do.

I'm sorry we actually didn't have them this week. We have them now. We made up for it with the toilet paper. Very hard to cut.

We could've. Sometimes the problem is you're just checking one little tiny microscopic area of the Blade. We could've got it. I think it's booked for itself.
I find that my nanohome stones load up, regardless of the steel (e.g., I just worked on a stainless clad, white #1).

Yeah i saw. I’m no expert (so it could be a user issue) but that’s my experience. They still do a good job but I have to clean them a lot, which I find a bit annoying.
CBN can be in stones down to 1 micron or less. Not on plates but definitely in a resin bond type stones.

Not sure who has CBN in >1 micron but from what I know with resin bonded diamond stones that Venev has done they were having issues in the 1 micron and under grit because once the diamonds got to that small of a size they started to clump together and caused inconsistent polishing and sharpening results leading to scratch patterns that are more like 3 to 5 microns or even greater, it's why if you look at Venev stones on the current market they only go to 2 to 3 micron(1200F) grit while they figure out how to deal with the clumping issue
@@bowow0807 I’m aware of that issue because Scott Gunn figured out how to deal with that in his diamond emulsion by deionizing the diamonds, so they’ll spread out when you apply them to leather. I don’t know how you would do it when you’re putting it in resin or electroplating.
@@nadm Yeah, it's why Venev took the 2000F (~1 micron) grit stone off the market and are reworking their methods and formula from last I heard.
Though granted in terms of purely sharpening 2-3 micron grits on a stone is already plenty then move on to strops and compounds if you're going any lower(though I know the straight razor community would lynch me if the purists heard that haha). Polishing is a different beast altogether, especially traditional japanese whetstone polishing

Maybe saying 1 micron or less is a stretch but Practical Sharpening has done CBN resin stones down to 1-2 if memory serves me.

@@dimmacommunication In my experience, and that's all I can speak on as I am not a scientist or metallurgist or anything. it depends on the grit. Anything beyond the sharpening grits you will want to use diamond. Also in general you will want to use a lower grit than you think. Just like with carbon steels you can get away with using higher grits, with "HR" steels you want to use lower grits than you'd think. 500 grit shapton glass is a fine choice. If you want to finish at 3k or above, I'd suggest using diamond compounds on wood or getting something like a naniwa diamond stone.
Is this as great as something like super blue? Debating on a knife made out of this. A petty.
Super blue is easy to sharpen and it's my favorite. This is something you will not sharpen very much so if it's on how often do you want to do it. This can be considered brittle but I haven't had that problem. You just have to get a sharp. Normally comes very sharp and you won't have to do anything to it for a while. They're also usually very expensive.
@@nadm thanks. I ended.up buying a Masakage ko-bunka super blue steel. I feel like I spent too much. I also bought a Yoshihiro 240mm gyuto that seems way too big for my kitchen. Might try to sell it somehow.

Yes! I was a lot heavier and it really aggravated my asthma. We’ve lost over 55 pounds since this video. I also didn’t know it but I was suffering heavily from a drug that had massive side effects. I’ve been doing great since I dropped that particular scription medication. We’re also very much relaxed now when we do the show. Our lives. I appreciate your concern but luckily we have gotten it handled since then.

Polymonic and polyanomic stones are perfect for anything over 65hRC. Chromium will not plug these stones. Molybdenum is the only thing that ever seems to stick.
