  • We are thankful for the opportunity to present this to you. Definitely something original for us. Not used to dealing with something that feels this grand. It was great to explore this option. It will be interesting to see how you implement it. I do believe razors and knives used for fish are probably the best option. Normally, it could feel like a luxury item.     good video. keep it up.
    What I've read several times now is that everything from/above 8k only really makes sense and can only achieve its full potential if you use an angle-controlled system with pressure control. This is the only way to ensure that you hit the cutting bevel at all times, which is quite narrow/small with such high grain sizes.

    I watched and listened to the video a couple times to get a better understanding of the point of it. I come from straight razors and also have a collection of Japanese and German knives. I love sharpening things and sharpening is a hobby I do. Sharpening a chef’s knife to 30k makes as much sense as sharpening an axe to 8k. If you’re going to go through the trouble of polishing shirogami white #1 to 30k wouldn’t it have made sense to test the previously confirmed sub 100 on the edge tester for comparison to the 30k edge instead of fumbling around with a piece of paper at the end and saying “oh yeah!”

    Why shouldn't you do edge leading strokes on stones finer than 8000?

      Dr. Vadim‘s book, knife grinders, book about deburring the edge, states that when the Blade is so fine, but it’s half the thickness of the human hair that pushing the blades edge into the stone will cause you to wrinkle the edge

      Also, there's a possibility of the knife digging into the stone & ruining the surface😢

      No. And I don't need to cite some fraud so called doctor or his book to know that. Just basic critical thinking. I would argue it's the opposite. the whole idea of finishing stones is that they not only do not generate burrs, but they remove them where they do exist. That's the whole idea. In Japan they do the exact opposite of what you suggest.

    10000k is good but with a 30000 you can refresh razors each time and maintain the level of sharpness! But it means you have mastered the technique with a 10000k. Few people realise how much time it will take🎉 IT TAKES years and big skills!🎉

    I have the Shapton Pro 30k and following that finishing with .025 micron polycrystalline diamond on either nanocloth or kangaroo leather the edge is absolutely terrifying.

      Does absolutely nothing other than increase in polish. I'd bet money I can get a better edge with nothing more than a single sheet of 80 grit dollar store sandpaper. If you want something that actually makes sense to use for general use on general knives, something in the range of 6 um and 3 um is a good starting point. Yes with low alloy and carbon steels you can use stuff like half a micron and still get some practical effect but that is because those steels have very little abrasion resistance and are extremely fine in grain structure. Basic carbon steel like Japanese white steels will start to dull by abrasion as soon as you use them to cut anything. Heck 30 seconds in lemon juice will destroy the edge of a white steel blade.

      @@leswindon You'd be surprised. Merely adjusting the direction you grind can give different results. Anything from a "toothy" edge to a very smooth refined edge, not by changing abrasive but just changing your technique. And yes the first example i gave is extreme but it's also very realistic.
      Also I don't use whiting hair as test for any knives aside from straight razors. If a kitchen knife can blow through a free hanging paper towel, the soft kind like the name brand, that has no grain direction, and blow through it like it doesn't exist then you know the edge is as keen as it ever needs to be, and you know it's apexed correctly. and yes, I can easily get results like this on basic chromium steels usng nothing not one sheet of cheap sandpaper and few seconds of stropping to tidy up. it's all about technique and practice.

      @@TimJohnson-x1o Not hair whittling like you said but I did the Murray Carter sharpen on a cinderblock and strop on cardboard and was able to get it to peel some hair off my arm.

    Just a thought, maybe lapping film on a supper flat machined bar. 3m makes lapping films that go all the way up to .1um that would be perfect to flatten this stone

    Ohh, this is new to me
    I can see another whetstone war, suehiro 20k, shapton glass 30k and this new nanohone 30k...
    Dont try and tell me you haven't already started planning it. That would be ludicrous
    I just got the zdp bunka black set you reviewed ages ago, I'm working that one up towards my suehiro 20k today and tomorrow maybe..(bit busy)

      @@nadm Well, the law of attraction isn't difficult to learn, it just takes time to learn the nuances of it. Its just hard to apply at times. The biggest hold up is usually limiting belief systems.

    I'd bet you $300 a 12k naniwa super stone is better. all around. I've tested everything on the market. Not this stone, which is certainly made by shapton, but I have tested the shaptons. Naniwa costs about $60 for a 20 mm 12k ss. as long as oyu avoid overpriced sharpening and knife retailers. $60 vs $300 and the Naniwa delivers vastly better results across a wider range of use cases.

      I like the 12k Superstone very cost effective,my fav stone for the price is the Sigma Power 13k,.75 micron $115 bucks

      Hap Stanley was the original designer for Shapton. He left them because of their in accuracy over grading. They tend to grade their things higher than they are. A 1000 grit stone probably works like a 700 or an 800. These are not made by Sharpton. He is in very tight control of his product. I need to apologize for taking so long.
