Chef(s), very nice recipe, looks delicious, I was going to ask what type of mushroom but to large variety. In U.S. from rural Kentucky our chickens are normally twice this size so I'm going to need 2 chickens there as I'm 6-0 tall & 200 pounds with big appetite. We forage for mushrooms so their free, the most prized are morels & not easy to find, also puffballs which are the size of a soccer ball but easy to find but have to dice them. You have to know what you are looking for as some mushrooms are toxic
