I must be candid here and simply say that I'm most impressed by that line up of ttukbaegi on the grill; the fierce bubbling liquid never even comes close to spilling over. It looks great! When I get a piping hot little onsen of broth going like that it always bubbles over so I have to stand by the hob on sentry duty to make sure no messy spillage occurs (due to my epic last minute saves which involve either 1) lifting it off the hob temporarily, 2) turning the burner's heat down to very low for a second, 3) blowing on it frantically or most commonly 4) all of the above. These bowls look absolutely delicious and perfectly served. That broth has an almost gravy-like consistency, a bit like Japanese tsukemen dipping broth as opposed to watered down ramen broth. I'd love to try the soup in this video. 😋🍜
I've been looking to buy ginseng to make this chicken, but it is very hard to find or very expensive. I wonder if I brewed some ginseng tea and added it to the broth while cooking the chicken if it would give me enough flavor (?)
Go to resto who sell this food, just enjoy, this food literally mean Ginseng soup. They Will not tell to outsiders, as secret recipe keep gen to gen only
@@sejasdeasotador it’s mulberry wood bark, licorice sticks and cordycep mushroom tops. I used to work at a Korean restaurant in Manhattan in the summers when I was home from college; with this same exact, almost identical set up.

@@wandatherranova4258 I don't think you watched carefully... at 6:55 they pour in a slurry mixture to make it thicker. Rice would not make the soup look like that and spices do not release that much starch. Even more, the rice was inside the chicken and the spices were in the soup, all cooked before they added the white mixture. So no, the rice and spices did not do that to the soup...

A slurry- is a combination of starch (usually cornstarch, flour, potato starch or arrowroot) and cold water which is mixed together and used to thicken a soup or sauce. I know what I said, thanks. Extra starch isn't even healthy. I can only imagine enjoying that in a loaded potato soup, and the potato would just give it a natural thickness. What they're doing in the video is super unnecessary and I like my herbal chicken soups clear and refreshing.

It’s used to thicken the broth. My guess is corn starch or potato starch.

Its not slurry, the soup was boiled with rice and spices inside and it thickened by the starch.
