    Makes 1 12-cup bundt cake (20 slices)
    Bundt Cake
    2 ¾ cups (415 g) all-purpose flour
    ¾ cup (150 g) granulated sugar
    2 ¾ tsp (8.5 g) baking powder, divided
    1 tsp (5 g) baking soda
    1 tsp (3 g) ground cinnamon
    1 tsp (3 g) ground ginger
    ½ tsp (2.5 g) salt
    2 cups (500 mL) pure pumpkin puree
    1 cup (250 mL) buttermilk, divided
    1 cup (200 g) packed light brown sugar
    2 large eggs
    ¼ cup (60 mL) vegetable oil
    ½ cup (60 g) cocoa powder, sifted
    Butterscotch Glaze
    ¼ cup (60 g) unsalted butter
    1/3 cup (70 g) packed dark brown sugar
    2-3 Tbsp (30-45 mL) milk
    1 cup (130 g) icing sugar, sifted
    1 tsp (5 mL) vanilla extract
    1. Preheat the oven to 350 F (180 C) and grease a 12-cup (3 L) bundt pan.
    2. Sift the flour, granulated sugar, 2 ½ tsp (7.5 g) of the baking powder, baking soda, cinnamon, ginger and salt into a large mixing bowl.
    3. In a separate bowl, whisk the pumpkin puree, ¾ cup (175 mL) of the buttermilk, brown sugar, eggs and oil and add this to the dry mixture, whisking until smooth. Divide the batter in half and add the cocoa powder, remaining ¼ cup of buttermilk and ¼ tsp (1 g) of baking powder into one bowl until evenly combined.
    4. Dollop alternating large spoonfuls of pumpkin and chocolate batter into the pan, until both batters are used up. Use a skewer to swirl the batter a little bit. Bake the bundt cake for 60-75 minutes, until a tester inserted in the centre of the cake comes out clean. Cool the bundt cake for 30 minutes in the pan and then tip it out onto a rack to cool completely.
    5. For the glaze, melt the butter and cook it until it browns, about 2 minutes. Strain the particles out and place the browned butter in a clean pot and add the brown sugar and 2 Tbsp (30 mL) of the milk and bring to a full boil while stirring. Pour this over the icing sugar in a bowl, add the vanilla and stir until cooled enough to be glaze consistency - if it seems too thick, you can add the remaining 1 Tbsp (15 mL ) of milk, a little at a time, until you get the right consistency (it should be somewhat fluid but not runny.) Pour this overtop of the bundt so that it drips partway downs the sides. Leave the glaze to set for an hour before slicing.
    The bundt will keep for 3 days, well-wrapped.

    Thank you so much for this recipe! I just made it and it was one of the most moist and delicious cakes I’ve had. And I’m not just saying that. It was a hit with the whole household. I made a double batch of the sauce and added 2 tbsp of bourbon into it and just wow. Haha.

    Thank you for this recipe. My husband and I, we love this cake. I have already baked this cake very often - from the pumpkins we grow in our garden. The cake is delicious. But I must confess that I leave out the glaze.

    I have always loved Bundt Cake. My Momma always bakes the best bundt. I don't know what it is about it. I cannot narrow it down to why I love Bundt Cake. Any variety there are so many to choose from. They are always moist and delicious. I don't remember having a dry or flavourless bundt cake. And I have enjoyed so many of them.

    I made this cake the day before the thanks giving. It was beautiful and has risen a Lot! I had no issues with the butterscotch either. But, i think the cake got a bit dry... It was delicious, but a bit dry...

    I made this with my own roasted pumpkin puree as we can't buy that here. Didn't have time to make the frosting but will next time, as it's really nice. I used the groves in my bundt pan to seperate the batter and did 3 layers so got a good swirl naturally.

      There are some silicone bundt pans. I have a gorgeous swirling vortex bundt pan from nordicware that I had the hardest time with because of the thing ridges. Finally a friend showed me that instead of using a nonstick spray giving it a very generous coating of butter then flouring it thoroughly, making sure not to miss a single speck, and it did the trick. But it’ll still taste just as good in a basic loaf pan. :)

    Hi Anna, I made this without the glaze and it came out beautifully. However, the cake lacked in taste. I was short on the pumpkin, i.e. 420 g instead of the 500 g. Could this have been the culprit? Thanks, Luise

      It's part of it, but omitting the glaze with also decrease the overall flavor of the dish.

      Hi Luise and Anna, I just made this cake and followed the recipe. I have to start by saying what a brilliant teacher Anna has been walking me through techniques and the science behind baking! Luise, I agree with you that I find this cake to lack flavor. I have made a buttermilk lemon cake and don’t enjoy the density of the cakes but for this cake my question to Anna is if using butter instead of vegetable oil and milk instead of buttermilk with tweaking the cinnamon and ginger would keep the cake balanced? Thanks again!

    Hi Anna, love your recipes! I was wondering if adding a teaspoon of coffee powder to the chocolate portion of the cake would be a good idea? And maybe even a mixture of pumpkin and roasted yams/sweet potatoes for the pumpkin portion? Let me know what you think :)

      Mixing the pumpkin with the sweet potato is a great idea! As for the coffee, why don't you experiment and let us know how it turns out! :)

      @@ohyum Hi Anna. On another note, I found your recipe here (www.foodnetwork.ca/recipe/pumpkin-chocolate-bundt-cake/19346/) and it has a really low rating (2.7/5) with over 700 rates. I'm wondering if this is an error? I don't believe your recipes would result is such low ratings...
