Wow!! This recipe was easy and delicious. Made this last night for Canadian Thanksgiving weekend 🍁🇨🇦 here for my family. Only substitution was using graham crust instead of chocolate cookie crust. Already planning on making this again on request and at Christmas holidays.

Wow! Was this ever a huge hit at Thanksgiving this year! I was a little bit nervous making it... I was worried the crust would crumble once it was released from the springform pan but it held together beautifully. Many oohs and aahs and excitement from the Thanksgiving guests and there was almost nothing left by the end of the evening.

How can I prevent the crust from burning while ensuring the pumpkin pie bakes completely? Would wrapping the whole pan in foil help? Will it take longer to bake if that is so? Firstly, it was a lot of cookie crumbs for the crust so I suggest you dial the quantity down, or else it'll be thick and unpleasant to bite in. Secondly, my eggs were 60g each which turned out quite eggy and rubbery almost, especially the cheesecake layer even though I mixed everything by hand briefly so there wasn't much air being incorporated in the batter. Maybe it was just me so I wouldn't blame the recipe, but I'd love to hear out more about you guys who have given it a try!

I followed all directions but my crust came out bitter and hard. YIKES!!! Any suggestions? What chocolate cookie crumbs did you use?

Recipes are really only guidelines. You can substitute the chocolate for, perhaps, graham cracker or maybe animal crackers. Look for flavors that won't compete w/the pumpkin. I've never had chocolate with pumpkin, either, but it is interesting enough to maybe give it a try.
Yes.I was thinking maybe some type of graham cracker crust or a chopped nut with dates crust. I'm going to make a raw/no bake pumpkin pie one of these days (without dairy). I'm sticking more with the cleaner ingredients these days. I think I probably wouldn't even attempt this dessert without first being able to taste one someone else had made... and it would have to be the best tasting thing I'd ever put in my mouth for me to go to the trouble to make it considering it has so many rich ingredients.. @@janetmoore1124
