Wonderful. After watching this video i have made this two times for us and one for a party. For the party we used pita pockets. A great hit. I love sumac and i also love having the leftover onion infused olive oil in the fridge to use for other things.my EXVirgin olive oil is fro Nudo in Italy. We love it. I have adopted a tree in a grove every year for many years now and they send me all the produce from my” tree.

Musakhan is a traditional Palestinian food, onions cooked totally with olive oil and spread on special kind of bread then top the bread with the cooked chicken and broiled one bread at a time or two. SO good.

My mom and dad always made this with homemade bread (circular size, about 1/3” thick and 8-10” round). The chicken was bone-in and roasted, and sat on top of the bread. This is the new (faster/easier) method: rolling the chicken up in filo dough.

Sumac is a plant that's Native American. It's sad that people here don't know about it but people halfway around the world use it all the time. Let's start using foods Native to the Americas like sumac, soursop, dragon fruit, guava, wild rice, etc.

I gather and process my own Sumac berries. That way I don't have the bitterness from the ground seeds inside. The stuff you get from the store is the whole berry/seed ground together.

I made this using egg roll wrappers in the air fryer. Really good! The onion-infused oil is pure magic.

I have also seen recipes of Musakhan where the flat bread is soaked with chicken stock and then you put the onion and chicken and broil it.
