    My mother was from Lebanon and I can remember when she made the Lebanese mountain bread she would get so excited watching the loaf puff up. These breads were baked in the oven and my maternal grandma would use a wooden paddle to reach in and remove the bread. I'm old now but these memories are still fresh in my mind and heart.

      By the way, these can also be made in a preheated 450 °F oven. Just place the pitas on baking trays lined with parchment and sprinkled with some semolina flour. Bake them until they balloon and serve! They take 2-3 minutes in the oven :)

      I lived in Beirut in the early 70's. I remember the bread being so delicious. First time I ate Arabic bread I loved it. My memory of mountain bread was paper thin and folded in squares. I miss all of it the food and the people.

    I made this pita bread yesterday. One word to say, WOW!!!! It was spectacular! I used a cast iron griddle! Every bread formed a pocket. The inside was so fluffy. My son, who is not a big on eating bread, had two breads! I am telling everyone, you have to try this bread using Dimitra's method. I also made my ketogenic pita bread recipe with your method, and it turned out the best ever! I used to make it in the oven! Will never do it my old way again. I will use the Dimitra way. You rock, Dimitra! Thanks a million!

    I have tried different pita recipes, all disasters, I was giving up until I stumbled on this one. This recipe was perfect, fluffy and delicious! I just couldn’t believe when they puffed up. Love it love it love it!

    Did this recipe for my second time today. They puffed up! They didn’t my first time. But after I listened in the video when she said you have to add a lot of flour I understood why. If you don’t then little wholes will form from dough sticking to table or rolling pin and release steam unable to puff during baking. Also, roll out evenly applying a light/medium pressure to rolling pin. Don’t press hard and don’t roll out to thin. Keep trying! I love Demitra’s recipes :)

    This recipe for pittas is simply THE BEST! I'm using it to make them several times a week, and not one has failed to puff up beautifully. If they have a fault it's that they are so more-ish that we can't stop eating them! Thank you!

    This is the best recipe I have tried, thank you! I did 300grms whole wheat the rest AP. Heat was medium high, I have a convection stove. So wonderful! You are my hero!

    I am HEAVILY pregnant (due in 3 days!) and made these with a fresh batch of your hummus recipe...sprinkled with a healthy amount of sumac and drizzled with olive oil. Now the problem is I’m wondering what everyone else is going to eat...😊

    Seriously appreciated the real time in showing how to cook the pita . To many videos shows speed up the showing how they puff then people think that's the way it should happen but not so. Your a good instructor .

    Dimitra I love this video. I have been following your channel for about 2 years and I can confidently say: the production value of this video is just stunning. Beginning with your introduction music. I am over the top in love with it. I have never been to Greece (I'm an ignorant American) so the music you provide (in my mind) tingles my senses and gets me in the mood for an exotic culinary excursion. And then the recipes you teach us are so exciting (minus anything eggplant) and delicious. I very much like your channel and wish your the highest success. Keep it up.

    I made you Tzaziki Sauce, then yesterday made your Gyro Meat recipe (no salt), and then this Pita Bread.....omg....my husband asked me to marry him....again....lol.
    The meal is well worth the time & effort. Thank you.
    Oh....I also made your Spinopita (sp) down with the Phyllo dough.....but I added cooked Chicken & garlic & a pinch of Cumin., and omg....that was awesome! I am a gourmet chef, who cooks a lot if Italian, And Ian & Indian dishes....and always wanted to master Greek cooking....so, thank you! You should write a Greek Gourmet Recipe Book. I'd buy it!
    I make a "Greek Omelet" that is huge and sell those, on order. Lots of Feta....lol.

    Thank you sooo much! The result was puffy and soft! I’ve watched so many recipes for pita bread but this one is the best. I watched this yesterday and tried it today. Most of the bread were successfully puffed. The first two were failed.
    The only thing I adjusted was the second proofing, I did it before rolling them because I don’t have enough space to lay the rolled doughs. I rolled right before I tossed them into the pan.

      My first two didn’t puff up. I think I didn’t give it enough time to proof the second time and when I roll out the dough one side was not smooth which means when I put it on the pan the air leak our before it puff out. The rest came out better because I gave time for proofing and I make sure both sides are smooth before I place on the pan.

    8 August 2024. I made these today after searching for a recipe for pitta pockets. They were so so easy to make and was so happy with the result. My husband loved them so much he ate 2 straight from being cooked. These will replace the naan bread that I have been making and can’t wait to try them to mop up the curry sauce. They turned out so soft and fluffy.

    Thank You! I followed your instructions as best I could. I was SUCCESSFUL 😃 11/13 Puffed Up. I only had 2 that didn’t and I learned there’s a little finesse in helping the whole piece fluff up. I was oddly satisfying ❤

    Dimitra, I made these yesterday. The first two didn't puff up, but when they were cool I used a sharp knife to cut in half and to start opening them up. It worked great. Thank you for this. They are the best pita breads-very tasty and soft.

    I am fan of mediterranean cuisine and living on the pacific coast of Mexico. Its kind of hard to find some of the ingredients but managed to make this bread, my daughters love it. Thanks for sharing.

    Follow up. I have made this recipe a few times now and every time it is perfect. Her fry pan method has been a revelation. I made a half batch this morning while the wife got ready for work so she could have a seafood salad pocket for lunch. So good it's almost a sin. Almost.

    These were just gobbled up by my family for dinner! Finally a soft pita recipe!!!! These actually worked definitely make them if you’re considering it. All of mine puffed😁 Only a few leaked but I put my spatula on it as instructed and to my excitement they puffed. Super soft and tender, plus the bottoms held together while eating 💕! Thank you for this recipe. All other pita recipe I’ve tried are hard and struggle to puff. These worked in the first try. Blessings to you all! Happy eating 🍽 😊

    I started making pita at home in May of 2021 after retirement. Watching lots of different UA-cam videos and quite a few mess ups for different reasons, I found your 2 videos on making pita and bam I got it 😃 I can do them on a cast iron griddle, in the oven, toaster oven, and even the air fryer. The air fryer method is great! Anyway, at least 1 side of my pitas seems a little flatter/thinner all the time. Just the other day I mentioned to my husband that on the 30 minute proof after rolling out that I thought the flatter side was the side I rolled and it wasn't...the side I rolled was also the top side under the towel during proofing and was the fluffier side lol my husband said " well why don't you flip them half way through so they proof 15 minutes on each side. " I did that and they're fluffy on both sides now lol we enjoy 😋 them even more now. Thanks for all your great videos Dimitra.

    I’m crazy about pita pockets,when I was living in Egypt ,I eat it everyday with hummus,oh my gosh heaven !!!It is good along with any dish!I couldn’t make it,if I make it I’m afraid I won’t be able to get that magical bubble ,you made everything looks like so easy 👍🏻👍🏻👍🏻I don’t have your talent!

    Followed your recipe for this, the beef gyro meat, and the tzatziki sauce. It turned out to be the best gyros I have ever had (and I’ve been to Greece and Turkey).

    I've made flour tortillas in a cast iron skillet and will definitely try your pita recipe (I love pita bread). I am very blessed that I have my parents three cast iron skillets. They are at least 60 years old (the skillets, not my parents, LOL) They have literally become almost non stick over the years because they took care of them very well (I was always told not to use soap or scouring pads on it, but only a little water if necessary and then wipe them out with paper towels. (don't worry, when you heat that skillet up next time, any germs will be destroyed. ) Thanks so much for your wonderful videos. I had put most cooking aside for the last couple of years, but am looking to start back and will use some of your recipes. I have made spanikopita (in culinary school) but we had to make them into triangles which was a pain. I love the way you make it in a half sheet pan and while we only used ricotta cheese, the feta will surely make them super delicious (I love feta). Again, thank you for your videos and the time you take to make them. Greek food is one of my favorites. Good wishes to you!

    I've been making pita bread for yeas, I've used every recipe out there, theses hands down the best pits bread and so easy to do. Dimetra, you are so right you'll never make another after making this. For me, my two hints are don't roll it too thin, and gently use the spatula as shown to help with the puffing. These were perfect and delicious!

    I am so proud of myself lol and happy that You have taught me the proper way of making flat bread. We wanted taco's for our supper last night. So around 2 pm I did the step by step instructions my first one was a bust the pan wasnt hot enough so my fault the rest of them puffed up perfectly I was very happy. We stuffed our pita pockets with the standard taco stuff. I think these are the best taco's I have ever had. My son said we should always do then like this I agree. The left over pockets made wonder bacon and eggs sandwiches this morning. You gave me a new skill I thank You My Family thanks You.     Wow, you're the woman! I made this recipe today and it came out great. I am from Houston , originally, married a military man, so that took us to several different states. After his retirement we moved back to Houston/Pearland. Last year we left Pearland moved to Amarillo, TX to live a quiet lifestyle. OMG this place is so left behind, it's horrible. The restaurants are the worst and we been around. We have to cook a lot to enjoy good meals. Your videos are life savers.

    I have to let you know...First...these Pitas are AMAZING!!! I am also using this recipe for ENGLISH MUFFINS!! I just don't flatten them with the rolling pin, I just flatten the ball with my hands and keep them about 3 1/2 inch diameter. They have to cook a bit longer because of the thickness, but they come out AMAZING! Wanted you to know!!

    On regular pan do you add oil or butter before putting in the dough?

    I just tried making arabic flat bread the other day and it was a fail! I’m in culinary school, and we made the exact thing at school and it worked! I tried it at home and it just didn’t work out. We took woks and flipped them upside down on our flame stoves and cooked the bread that way!
    I’m going to try your recipe soon and pray it works. Mine turned out so crunchy and hard at home.. I’ll give your recipe and method a go (in the oven) and see where it gets me! I’m also not the greatest baker, so.. there’s that! 😅

      MARIAM: this is a great recipe that Dimitra offers and demonstrates each step at a time. Be patient and follow her directions and your pocket pitas will turn out beautifully. Mine did the very first time and I'm hardly a baker! GOOD LUCK !!
