I just made this with substitutions. I didn't have beef gelatin, so I used Knox, and I didn't have whey protein powder so I used egg white protein powder. The batter was thinner and I thought about adding extra Knox to make it thicker, but I stuck to the recipe this time. I had a blowout where a little of the batter erupted over the side through the top. I think next time I will use parchment paper to put a taller barrier around the loaf pan. Seriously though, it worked and it was quick and easy. I enjoyed a piece of the bread with butter and sugar free strawberry jam. This one's a keeper for me. Can't wait for dinner now.

You guys might look into the Mediterranean-Keto diet since that seems to be getting popular right now. The reason you tap the cake pan is to make cake denser and concentrate the flavor, but with bread you don't want that, you want air bubbles and a light texture.

I’m doing Maria Emmerich’s protein sparing chewy bread right now and I honestly can’t believe it. The only change I made is to toss in a little active yeast for flavor. The texture is LIKE BREAD and it smells like it too. And it’s just protein basically.
Me too! I make her bread twice a week. I subbed the gelatin for Greek yogurt (Two Good brand in plain flavor - great macros) and I love it! I was getting hard bits in the bread with the gelatin. I also add a tablespoon of ACV to get a bready flavor.
To tell the truth, this is exactly the same ingredients I use when I make my Chaffles, except sometimes I use a keto chow packet instead of the isopure if I want to give it a different flavor. My Recipe makes about 8 chaffles,.it is 4 eggs, 4oz cream cheese, 2 Tablespoons Butter, a teaspoon baking soda, and a scoop of protein powder or the keto chow.
Katherine Michelle has a keto site with a recipe for egg loaf which is a substitute for French toast that is so awesome - only thing I do different is that I add a few drops of the only stevia I’ll use - NOW Better Stevia, maple flavor and French vanilla. This bread has similar ingredients. And yes it’s an amazing French toast - even my non keto children requested me to frequently make it. The trick to hers is that the slices are pan sautéed after the loaf was baked.

The protein powder that you used can be substituted one to one for wheat flour ( or so I have been told)- I have used it in part substitution , with good results, but never have I used it completely - it did work with using King Arthur Keto Flour blend for a pound cake...

Carnivore is NO-carb as in meats, animal products: cheese, milk, eggs, heavy cream. I think you meant low carb: Keto, Atkins. They made carnivore bread but the addition of the other ingredients is not carnivore (lettuce, tomato, truffle mayo), Lakanto syrup is also not carnivore.

This looks like a great idea. I think this would be awesome as a Marquis sandwich. (Toasted on the stove in butter, fried eggs, a little flavored mustard or mayo, bacon or ham. Some people add homemade marmalade on it or strawberry no matter its great.)

I just made this bread yesterday..turned out great…I like it in a sandwich and French toast was delightful…by itself not so much, but well worth it. My husband even ate a sandwich out of it today and liked it. I think it,would also make a great keto pizza crust.

We are not keto friendly in the Mediterranean, we eat pasta , couscous, legumes.... Those are an important parts in our diet.

Mix the cinnamon batter into the bread batter then pan fry that in butter and top with syrup
