I made this with paneer cheese (Indian cottage cheese) and since paneer is drier the bread came out really well with lots of lift. I halved and baked in a small 4x4 pan. Terrific!

I used beef jerky and paneer cheese ground in my blender, rather than cottage cheese and pork rinds. I made half a batch and baked for one hour, ten minutes. Absolutely perfect, will use for cheese sandwiches and what we call in Scotland Square Slice sausage. Can’t thank you enough, great addition to my Keto/ carnivore lifestyle.

Another thing is not to measure dry ingredients in a liquid measuring cup. One cup of liquid it’s not the same between the two measuring containers. Again, I’ve worked with bakers for many many years and this is just the way it is. But yours looked to turn out great so there’s that
Wonderful, love your videos Nili... fyi... if you crush up your parchment then flatten it back out before you use it in your pan, it conforms very well to any pan or baking dish. Your method works great for bread, but for some other things, you can use a smaller piece of parchment with my method sometimes. Have a great day~

Maybe try farmers cheese. It is like cottage cheese, but much dryer. Someone else on Courtney's recipe video said she used 4 oz cream cheese instead of butter (less oily) and added 1TSP baking powder to recipe. Can try experimenting with psyillum husk powder to make it more "bready".
After watching your video, I am thinking that a person could add the flavorings of French toast to the batter and then fried in the pan like you did and then have it basically be French toast without having to dip. Add butter, syrup, powdered sweetener, etc and enjoy.
Add a dash of vanilla, a pinch of nutmeg, a healthy sprinkle of cinnamon and-hold on- a tbsp of real maple syrup. (Wont kill you) Make bacon and/or sausage to roll up for a great breakfast. Yum. Then, all the egg taste will fit in nicely. Or make it plain, whip up hollandaise and Canadian bacon....ok a few more egg yokes won't hurt. Voila!
Could you do a combination of the whipped egg whites with this recipe? I love the egg white bread recipe with butter powder, heavy whip powder and yeast. I wonder if a bit of whipped whites would lighten up this recipe? However, it is an alternative and probably great for satsity.
Note: As a chemist with over 30 years of lab experience... make sure your scale allows you to read negative numbers below a factory set limit before you zero it out. Many do not, and then you have to zero the scale, weigh the full container, taking note of the weight and then calculate what the reading will be when you remove the amount you need. Many times over the decades I have seen chemists try the weighing trick only to find out that the when the number goes too far below zero, it stops giving an actual reading.

Looks super yummy! 😋 Pork rind bread is the only bread I make now bcuz it's the bomb! But I never tried with cheese, so I'll do that with the cottage cheese next! 😋 But I put baking soda in mine, that makes it more bready.
I made this bread today...I did three things differently from the original recipe so I am going to call the failure definitely my fault. I used the cream cheese because I had no cottage cheese, I added 1/2 tsp of baking powder and watched two videos where the people added all of it to one pan even though the recipe calls for 2- 9x5 loaf pans. It rose about 6 inches above the top of the pan and I baked for 1 hour and 10 minutes. By the time I pulled it out and put it on the rack to cool, it instantly fell...really fell. It was not done and I know there is no way double the amount in the pan could have gotten baked in that time plus the heaviness of the bread caused the crash. I hate that I wasted 12 high-dollar eggs and a chunk of cream cheese and it's not fit to eat. I would like to salvage it by heating it up on the stove and using it for french toast. I'm not giving up, just discouraged right now. This recipe states to use 2 pans and I will be doing that from now on.

I have seen another UA-camr come up with his version, just hoping that you can come up with the clean version of bread. It is an animal product. I think some people avoid it because it has a lot more carbs than hard cheese. And some of us avoid dairy, it just depends what your body can tolerate. 😁

Tried it and came out looking terrific until it collapsed. Did not like the ingredients in the cottage cheese (too many "gums") so I used ricotta. So, the bread tasted a bit eggy as ricotta has very little taste...should have added some tastier cheese. Thanks for sharing this recipe.
My ladies are bored since we still have too much snow to let them out. They are eating their own eggs and only do that in spring. But I just bought a roll-away nest box. TAKE THAT ladies! They will feel spoiled with a new nesting box and I will get eggs again.

1 and 1/2 cups of cottage cheese weighs 12oz so that's how much I weighted out. If I were measuring something else I would have used the correct weight for whatever it was. Is there a problem?

Air seal the pork rinds in between 2 sheets of paper towel in a vac bag ie foodsaver 12 hours before using it as flour to remove the oils

I’ll add, to get it more bread like, air fry at 400’ for about 10 minutes to dry it out. Otherwise yes in the pan is like French toast! ❤

I’m so lucky as I live in the UK. We can buy 12 eggs for £1, so they’re actually the cheapest thing to eat in Britain.

To save $, I bought a huge tub of uncooked pork rinds and air fry 1/4 cup as I need them. It makes about 1/2 to 3/4 cup pork rinds crumbs.

I tried and wasn’t worth the effort, in my opinion! Texture was very much still the same :)

One cube of butter is a quarter pound, but it is 8 tablespoons and that equals a half cup.

Agree. Not sure where/why the cottage cheese was added. I don’t recall seeing it the recipe she replicated.
I would add baking powder.
This is a Carnivore bread and most wouldn't consider that carnivore. But it works for keto.

To be carnivore, at least 70% of ones diet is meat. Baking powder is not keto, high fat and moderate protein is.

12 Oz by weight isn't the same as 1.5 cups
