  • Resepi Pes Asam Pedas Meraung
    Bahan-bahannya:
    3 genggam cili kering (dipotong dan di rebus 15 minit dan toskan airnya)
    3 biji bawang besar* (dipotong kiub kecil)
    6 ulas bawang putih*
    2 inci halia* (dipotong kecil)
    2 inci kunyit hidup* (dipotong kecil)
    1/2 kiub pati ikan bilis*
    1 inci belacan*
    1 sb biji lada hitam* (boleh kurangkan kepada 1 st kalau pedas)
    200ml air*
    1/2 st garam
    1/2 sb gula
    1/4 st serbuk perasa (sebarang jenama cth knorr atau maggi)
    100ml air bancuhan 1sb asam jawa
    3 batang serai diketuk
    1 sb rempah halba
    1/2 cawan - 1 cawan minyak masak (bergantung kepada kuantiti bahan kisar)
    Caranya:
    Kisar halus bahan bertanda *. Panaskan kuali dan tuangkan minyak masak. Masukkan rempah halba dan tumis sebentar sehingga wangi. Kemudian masukkan semua bahan kisar dan tumis sehingga pecah minyak. Kemudian masukkan gula, garam, dan serai. Kacau sebati sehingga pecah minyak. Kemudian masukkan air asam jawa. Kecilkan api dapur dan biar sehingga pes asam pedas pekat dan masak. Sekiranya anda menggunakan kuali non stick, biarkan lebih lama sehingga benar2 pekat. Sekiranya anda menggunakan kuali biasa, pastikan kacau pes selalu supaya tidak hangit di dasarnya. Tidak perlu tambah perasa buat masa ini. Tutup api dan biarkan pes sejuk sebelum dipindahkan ke dalam bekas simpanan yang sesuai. Simpan di dalam peti beku sekiranya anda ingin simpan lebih lama. Sekiranya anda ingin memasak, pindahkan pes dari peti beku ke bahagian chiller beberapa jam sebelum memasak. Contohnya nak masak tengahari, pindahkan awal pagi.     Bahan-bahannya:
    1 mangkuk daging rebus dipotong kiub (rebus 30 minit dan toskan airnya)
    2 senduk PES ASAM PEDAS MERAUNG
    5 biji sayur bendi (dipotong 2)
    1 biji tomato (dipotong 8)
    2 tangkai daun kesum
    250ml/1 mangkuk air
    Sedikit Garam dan Serbuk Perasa
    Caranya:
    Panaskan kuali dan tumiskan 2 senduk PES ASAM PEDAS MERAUNG. Kemudian masukkan semua bahan kecuali air dan gaul sebati. Kemudian masukkan air dan didihkan sehingga Sayur Bendi empuk/lembut. Perasakan dengan serbuk perasa dan garam jika perlu. Siap untuk dihidang. Portion lauk ni untuk makan 4 orang.

    Roaring Spicy Acid Paste Recipe
    Ingredients:
    3 handfuls of dried chillies (cut and boiled for 15 minutes and drain the water)
    3 large onions* (cut into small cubes)
    6 cloves garlic*
    2 inches of ginger* (cut small)
    2 inches of live turmeric* (cut small)
    1/2 cube anchovy starch*
    1 inch belacan*
    1 tbsp black peppercorns* (can be reduced to 1 st if spicy)
    200ml water*
    1/2 st salt
    1/2 tbsp sugar
    1/4 st seasoning powder (any brand eg knorr or maggi)
    100ml of water mixed with 1 tbsp Javanese acid
    3 lemongrass stalks are tapped
    1 tbsp halba spice
    1/2 cup - 1 cup cooking oil (depending on the quantity of ground ingredients)
    Here's how:
    Fine grind of ingredients marked *. Heat a frying pan and pour in the cooking oil. Add the halba spices and sauté for a while until fragrant. Then add all the ground ingredients and sauté until the oil breaks. Then add sugar, salt, and lemongrass. Stir well until the oil breaks. Then add tamarind juice. Reduce the heat and let the spicy sour paste thicken and cook. If you use a non -stick pan, leave it longer until it is completely thick. If you are using a regular pan, be sure to stir the paste often so that it does not overheat at the base. No need to add seasoning at this time. Turn off the heat and let the paste cool before transferring to a suitable storage container. Store in the freezer if you want to keep it longer. If you want to cook, transfer the paste from the freezer to the chiller section a few hours before cooking. For example, to cook lunch, move early in the morning.     Ingredients:
    1 bowl of boiled meat cut into cubes (boil 30 minutes and drain the water)
    2 tablespoons PES ASAM PEDAS MERAUNG
    5 okra seeds (cut into 2)
    1 tomato seed (cut into 8)
    2 stalks of kesum leaves
    250ml/1 bowl of water
    A little Salt and Seasoning Powder
    Here's how:
    Heat a frying pan and sauté 2 tablespoons of PES ASAM PEDAS MERAUNG. Then add all ingredients except water and mix well. Then add water and boil until the Okra is soft. Season with seasoning powder and salt if necessary. Ready to serve. Portion of this side dish to eat 4 people.
