I mean to be fair, he does it more like a magician, most of his moves dont work if people dont allow it.
Look at who he's pickpocketing. You could ask for their wallet in a firm tone and they'd throw in their car keys for free.

There were 2 pens, 2 $100 bills, and an extra refill for the pen. He never showed Matt the open wallet before the trick and never touched him again after he got the pen from the other guy. And no one rolls a bill into a pen without anyone seeing it. That part was like a stacked deck magic trick. Otherwise, he has great skills.

I think the hosts are all in on it. Notice they were only interested in how he got the watch, when the money in the pen would have been the most interesting thing to see.
The pen-money- wallet is a set up, he got double pen and double cash thats why he wanted them to have them on them. So the wallet was from the beginning containing the pen and money.
