I’ve been making sour kraut for years. It’s delish. My favorite video of yours is the fermented onions! I ate the whole first jar I made with thyme in a week and then I did red onions (you liked them best) with fennel. Divine!!!!

FYI, Running hot water over the side of the lid will help expand the lid and make it easier to open.

I finally broke down and gave kraut my first try, I'm on day 5 with a 2 qt batch with the easy fermenter lid. Ph this am was 4.23 with the digital meter. I just tried to make sauerkraut for the first time. I took one bite and turned into Lot's wife! Too much sea salt! I think that I will cut the cabbage much finer next time. No problems with mold though. Any suggestions would be welcome. Dan in Colorado.

Just a quick question. I watched your video about the differences between pickling and fermenting. Would I be right in thinking if a UA-camr does a pickling video and says "It will keep in the fridge for two weeks!". They have not taken the sterilization process seriously and are best avoided?
Can we use celtic salt for fermenting?
