Lady Pamela, you broke a record. I found you yesterday, subscribed, and *binged*! I don't do that - ever, because the time to do so is just not available, or so I tell myself. Ha! Watched you late into the night. My itty bitty grandma from Ohio used to say "Lord willing and the creek don't rise," which was passed down to me by my mother and her two sisters. I say it and it makes me smile as wide as can be every time I hear you say it. As I posted yesterday, you are just one, long, warm grandma hug. PS - if you get the chance, pick up some Harissa. It's a Moroccan hot paste I became addicted to way back when. Absolutely delicious. If you love Gochujang, you'll love Harissa.

Love the salad. I sliced the cucumber in half. Scooped out the seeds. Then cut the thin slices. It will last longer.

    Looks good, Ms. Pam!
Love your nail polish, and how it highlights your ferocious knife skills. If I tried that, I'm afraid I'd be taking (another) $400 ambulance ride to the hospital - and it's only 5 blocks away 😕.
Hoping you have a blessed, Happy Mother's Day, and that the family treats you like the queen you are!

Im a part korean and love to make this. You can salt the cucumbers and rinse to dehydrate them. I think that way makes it a little too salty so i like to actually put mine in cheese cloth and squeeze the water out of the cucumbers. ❤❤❤
Also, the juice the cucumbers makes is so so good mixed with white rice ❤

Happy mothers day. This looks delicious I am definitely going to try this. I also wanted to share a summer salad with you.
Cut up a small seedless watermelon into bite size cubes. Cut up a bunch of spring onions use the green and white into 1/4" slices. Cut up mint and basil leaves into small pieces. Crumble a 1/2 lbs. of feta. You can add a sliced cucumber if you like. You can also add sliced olives if you like. Toss to mix all together.
The vignette is a balsamic one.
2/3 cup of vegetable oil whatever you like.
    1/2 cup of balsamic vinegar
1 tablespoon of mustard i like horseradish mustard but you can use whatever one you like.
1 teaspoon of onion and garlic powder.
    Salt and pepper to taste.
Wisk until well combined pour over salad toss to combine.
The cucumber, basil and olives are optional. You can add a couple teaspoons of sesame oil. You can also add a 1/4 cup of sesame seeds to the salad.
As you see this is totally a customized salad that you can make your own. This salad hits all of your taste buds at one time.
Spicy from the horseradish, sweet from the watermelon, salty from the feta and umami from the balsamic vinegar.
I hope you try this and enjoy it
so refreshing in the summer heat.
