Thank you for this. Cucumber salad is not something most people think of bringing to a BBQ or to a party when asked to 'bring a dish'. I reckon if I brought this to a summer pool party it would go down a treat, especially with roast chicken leftovers, baby potatoes and that sort of thing. I cook mostly Korean and Japanese food at home but I'm open to trying more Chinese cooking as you see Chinese influence everywhere. I'm planning a trip to Ishigaki later this year...so long as China leave Taiwan alone for the foreseeable future (Ishigaki is part of the Okinawan islands but is geographically far closer to Taiwan than it is to the main body of Japan). What a turbulent time, we had it so good before the woke madness, the Big Tech/AI landscape and of course, Covid and didn't realise it. Travelling is so precious to me, here's hoping. Hope the rest of the decade is a good one for you too with much adventure and security in equal proportion. 😄🤝🗺🛫🍜💖

I've made this a half-dozen times now. It's very good and very easy to make. I did make a few changes to the sauce, I like spicy so I doubled the chili oil, then added a half-tsp of Red Boat fish sauce and the same of sesame oil.

Love smashed cucumbers salad, definitely top two salads in my book. The other is hot and sour cabbage, a recipe I wished I had learned from the chef where I used to be a hostess. I am going to try Daddy Lau’s version for sure.
I made this salad and it was delicious. It was also tasty the next day, nicely marinated. I actually put it on a bed of lettuce and tomato and it makes a really nice tossed salad. Great recipe, thanks Mr. Lau!

Answering questions from viewers is a great addition which i have not seen on other channels. The greatest thing, though, is letting us virtually hang out with your beautiful family. I planted some white cucumbers again this year. I pick them when they are pickling size (about tip of your finger to your thumb). If they get big the skin is tough and the seeds get bitter. I dice them up with tomatoes and some mozzarella cheese and Spanish olive oil. It makes a great summer salad.

My favorite way to do this is with lao gan ma (mash the black beans roughly) sweet chili sauce, soy sauce, garlic and vinegar. (Sometimes sesame oil if I feel like it) DELICIOUS! 😊

Oh. My. Goodness!!! I love cucumbers. And this recipe has moved to the top of my list of favorites (and there are MANY). It's light, salty, sweet, tangy, refreshing. My first time doing smashed cukes tho. I didn't have any chili oil, but I did have some Hot Sesame Oil that I bought at an Oriental Market and it was perfect I think. This was so good, I ate the test batch, and had to make another for the meal. My only question is how long does this keep in the fridge if I want to make a double amount?
I really liked how your dad showed his techniques for prepping. My grandmother cooked for a living and started teaching my siblings and I how to cook when we were in elementary school. While stationed in South Korea twice I'd eat in local restaurants where I could sit and watch the cooks' techniques. Sometimes my wife will watch me prepare food and ask where did I learn how to do certain things. Between my grandmother, friends on active duty who were cooks, watching cooks in South Korea and cooking shows that aren't competition shows I can come up with something to eat that might surprise whomever I'm cooking for and sometimes myself.
My aunt says cantonese people has a saying that means the longer the pieces, the longer the life. So because of that, we cut our veggies longer for a longer life
