I know I’m usually pretty hard on you about Joel, but I’m gonna be very sincere when I say that you guys have raised an amazing daughter. She is a symbol to me of all that’s good in America. All your kids are great, but come on she stands alone is the only girl in a family full of boys. Lily, you are amazing and you make this show that much better.

Used tack is great for growing kids. Small saddles can be found in really good shape (especially with the local horse show community) and most parents make sure tack is cared for well in the interest of reselling when their child outgrows the small saddle. My boys both rode in a Pessoa 14” “pony saddle” that was resold for the same amount for which we bought it when they graduated to bigger tack with no problem. Smart plan!
Years ago people cooked smoked pigs feet in pots of beans soup. In the late 1940s, all of 1950s, and early 1960s when I was growing up, things were still tight from WW2 and this was a way to save money and give flavor to food.
I did that for potato & leak soup in 70’s & 80’s trotters give an awesome taste to the soup. 🍜
My dad still makes the best beans with the ham hock !!

A childhood story about pig's feet. I'm in my 60's now and I'm guessing when I was 4 or 5 my parents went to a little local tavern to eat pickled pigs feet along with their PBR. I would go with them and sit in the kitchen with the cook while they had their pig feet and beer from their favorite local pub. This tavern sold pickled pigs feet, pickled eggs, and pickled bologna in gallon jars so our fridge always had at least one of the three in it. Thank you so much for bringing my childhood memories to light again. PS - The big fat cook would cook me anything I wanted to eat while in the kitchen with her so I loved going to Barringers Tavern in Garfield Park with my parent.

I am the oldest of Nine children and I learned real quick that whenever there was a jar of PICKLED PIGS FEET in the refrigerator, my Mama was expecting another baby!! I have eat those feet pickled snd nonpickled and I will say this: If that is all you could have to eat, you will not starve. They are actually very good for you. So, you did good Justin! Yayeeeeee for Lily Bug getting her Pony Horse! I am proud of all those boys that get out there every single day and work helping their buddies out! What a great bunch of kids!
We grew up eating pickled pig feet & ears . I still love them ! The ones they sell in the stores are yuck compared to them .

I love watching your videos, I love pigs feet I boil 10 minutes and take out clean again ,and cook been sup with vegetable and spices for about 2 ours or so ,but I put new water for sup , is so good Brenda

Better if you add salt, pepper, garlic onion, bell peppers, dried chili peppers and about a 1/4 cup of vinegar. Cook until tender, but not off the bones.

The skin is the best part on pig feet, being mexican we eat them in a soup dish called posole consisting of pork, pork feet, hominy, tons of onions, garlic and dryed chili peppers for color and taste. I would highly reccomend you asking one of the workers remodeling your home for their wifes recipe

One of Dad's favorite things used to be pickled pigs feet....lol, and head cheese. He came from Kansas and was born 1920. My personal favorite is the neck bones, especially smoked. I'd rather use them for cooking beans than ham hocks.

Hello. I've never written anything here before because I mostly learn from you, but this time I can give something from myself. In my country (Poland), jelly made from these legs was eaten, called studzielina. The legs were boiled with the meat and then poured into bowls. The collagen found in the legs turned into gelatin, which turned the broth into jelly after cooling.
Ingredients:
3 pork legs
1 pork shank
500 g ribs
300 g ham
1 carrot
1 parsley
5 cloves of garlic
1 bay leaf
2 grains of allspice
5 black peppercorns
salt and ground pepper to taste
Place the meat and legs in a large pot and pour water about 2 cm above the surface of the meat. Place the pot on a medium burner and bring the broth to a boil. Reduce the heat, partially cover the pot with a lid and cook the meat for about 20 minutes. We make sure that no piece of meat remains above the surface of the broth for longer. After 2.5 - 3 hours, when the meat is almost soft, salt it (about 2 flat tablespoons), add peeled carrot and parsley, bay leaf, allspice and peppercorns. Continue cooking the meat for about 60 minutes. A few minutes before the end of cooking, add peeled garlic cloves. When the meat is completely soft and falls off the bone, turn off the gas, add 1 teaspoon of ground pepper, mix and set aside to cool slightly.
Remove the meat from the broth, strain the broth and save it.
Remove the meat from the bones and skin, mince it and cut it into small pieces. Place on plates or bowls. The layer of meat should be about 2 cm thick, but do not pat it down thoroughly so that the broth can easily fill all the gaps. Using a ladle, take the broth and pour it over the meat to a height of no more than 1 cm above the surface of the meat. Sprinkle the top with pepper. Depending on how fatty the pieces of meat were and whether the broth was lapped from the top or the bottom, such a layer of fat will later form on the surface of the well. When the meat covered with broth is completely cool, put it in the refrigerator at least overnight. After setting, pour a little vinegar over the portion to taste.

In Puerto Rico we make Garbanzo beans with pig feet stew that will blow your socks off. Search online for a recipe. You can use a pressure cooker to shorten the cooking time. You get this rich silky collagen from the trotters, Exquisite!!

I sure hope your pony turns out well for Lilly. She is going to be a great horsewoman. Hope he gets to be outside instead of that dark stall, he will get agitated if left in there a lot. Horses need company, even if it's sheep or cows.
If the horse has foot problems being stalled is a bad idea...

I grew up eating pigs feet. My great grandparents were pig farmers in their youth. My great grandmother boiled the pigs feet and seasoned them with salt and sage. We would splash a little apple cider vinegar on them in the bowl. They are delicious with a little cornbread too but I know your family is gluten free.
I’m spaniard and we use to eat every part of pigs. It’s very famous our “jamón ibérico” but in the case of pig’s feet we have a delicious “manitas de cerdo”. I know you can speak a few spanish words, here are two more.

My father used to eat pickled pigs feet. His parents were born in Poland but they moved to Pennsylvania in the early 1900's. So the recipe might be Pennsylvania Dutch. My mom used to make homemade spaghetti sauce and she would cook pigs feet in it. I used to like the taste but was a little wigged out when I would find an occasional pig knuckle she missed when removing the bones from the sauce.
My in laws made pickled pigs feet and it was surprisingly good. My father in law made head cheese. Every part was utilized at butchering time! You used to be able to buy picketed pigs feet in a commercially canned home in a glass jar. Haven’t looked for many years so I’ll have to check. Lived with them when I was 19 and husband in military. Every winter the made buckwheat pancakes with a workinb batter they would save to make next batch. Similar to sourdough!

Actually it's super common to eat pig feet here in spain. We also eat ears, tails, intestines even the brain 😬 and we make a sausage like thing with the blood and fat it's called "Morcilla". There is a common saying that sais "Del cerdo gustan hasta los andares" meaning that we eat as much as we can from the pig 😂
My grandparents made Pickled Pigs Feet and they were delicious!!! The only thing they didnt cook was the intestines. They did clean them multiple times and use them for stuffing sausages. So mostly used everything.
I didn’t know about head cheese and hadn’t an interest either. You taught me on a video I was astounded, can’t wait to try it 😮
It's amazing how well you're family minimized and adapted to the small farm house, where Lily started her cooking channel and that is the most beautiful pecan pie I have ever seen. I got tears when you said she is getting her horse; my 4 yard chickens just started laying eggs and when I recover from knee surgery, this past Tuesday, I will build a mini mobile coup from your design and get more birds. The paint ball adventure is something the kids will remember forever, great to see Bri's daughter and Ben's boys participate. My gun battles were with M-16, M-60 and 50 cal. go Navy Seabee's!

So nice to see that you ate the pig feet, I eat it cold with mustard and pickled beets. I really love it. Specially around Christmas. My mom used to make pea soup with pork knuckle in the autumn. SO good. Can use salted or smoked pork knuckle.

Love watching your journey. Just a FYI personally i have purchased many saddles new and used. always have your daughter sit in first a couple times for comfort and fit any saddle used or new before you purchase. I love my leather saddles but they are heavy. I understand wanting leather really I do. But for just simple short riding around the farm the little light weight nylon saddles are wonderful. Save your leather for long rides, showes etc. Just a thought.

Hey Mr. Rhodes. My Mexican grandmother would make tamales from the pig head. She would boil it with garlic, onion and salt. The fatty meatty parts of the pig have the best taste in tamales. We would mix a red chili sauce with the meat then add this to the corn masa. We also add pig feet to menudo. Menudo is cow stomach (tripe) and hominy .One can also add pigs feet to the menudo but I think the name changes to pazole. Two dishes you should try. YUUUUM! God bless.

My grandmother made the best pickled trotters ever! Lungs or "lights" (the slang they were called back then) went in our livermush along with the kidneys and the "other" parts. Edited to add I ate the feet as a kid and loved them, the tendons, fat, skin, and cartilage all combine for textures and flavor. Maybe an acquired thing but give it time.
My parents were from Alabama and Georgia, I grew up eating pig feet….that’s some good eating! ❤

We did chicken feet one year because we are wanting to utilize everything we harvest on the farm. IT was a lot of work yet delicious and so good for you with the collagen . I would think the same with the trotters.. We processed two suckling pigs this week for the first time and on the smoker now. Cow hoof soup is pretty good and good for you too. Idk what all goes into it because my friend from Belize is the one that makes it but it has a whole lot of turmeric

I'm from Mississippi. We eat them all the time. Try it on the grill, the first bowl to half done, and wrap it in foil to get it done. Then, open the foil, put BQ sauce on it, and brown it. It is the best way to eat.

I have a great recipe for braised trotters. here it is braised them in stock for 3 hours with carrots, onion, and celery. then pull all the meat off the bones. then finely mince the skins and fold that back in to the meat. then mix it was Dijon mustard shallots and chopped parsley, and one egg and some bread crumbs. Form in to cakes and then pan fry. let me tell you it is so good.
I grew up in New Zealand and have childhood memories of eating pigs trotters, as we would call them. They were a treat and us kids would be sitting around the table after eating them having so much fun seeing how our fingers would stick together because of the gelatine that would come out of the trotters as we ate them. Priceless memories.
I use to love pickled pigs feet! When I was 8 years old they use to sell them in the stores around us and my aunt would buy them for me. Nobody else would eat them but I loved them something that used to be so nasty full of dirt and everything else could be so delicious. I wouldn’t starve if that is all we had to eat I would.

When you put a huge amount of the minerals mix in I yelled “No!” It is pretty strong and not really meant to pour in a cooking pot. I was surprised it didn’t ruin the meat.

My Mom loved pigs feet, pickled or boiled in salt water. She didn’t boil them down like you did though. They were still intact. I can remember watching her eating them and relishing every bite. It’s like she was bringing back her childhood memories while eating them. I could never get past the texture; just enjoyed watching her.

I use smoked hocks to season beans and cabbage. Not always easy to find here in N Florida. Nothing better for flavor.
