HOW TO MAKE ELDERBERRY FLOWER HONEY: Ride Horses and Love Life!

  • Summer is drifting in, sweet and warm, the air perfumed with wildflowers. It's hard not to spend every waking second out in the wilds, foraging, riding horses and making things from the bounty. I asked Storm if she would like to come along to forage Elderberry blossoms with me, and since she never misses an opportunity to ride her trusty horse Bjørn, she happily said yes.
    Bjørn is a young Norwegian Fjord horse, full of love and life, a strong and willing companion and friend. The two of them together warm my heart. There is no love like the love between a little girl and her horse.
    I've been foraging for elderberries my whole life, they are a very giving tree, both with plentiful berries and blossoms. Honey infused with the blossoms and pollen has a rich, floral flavor and is a wonderful tonic against allergies and colds.
    It's almost too much to believe, the beauty and bounty of the earth. May we raise children to treasure the splendor and natural gifts of this planet and never take her for granted. And remind ourselves to do the same.

    Iris, have you ever thought about having an all women’s riding and outdoor skills camp? My wife has been researching some horseback camps, and it seems you have the skills and mindset to put on an amazing and empowering experience.

      I so miss our elderberry tree that mom used up make chili out of the berries. I’m gonna have to find me some elderberry flowers though. God’s best

    Beautiful video♥️ do you add the elder flowers to the honey for the flavor or does it have another purpose?

      They give the honey a really nice floral flavor, but the pollen is full of micronutrients and seems to help with allergies and stuff too. We had a friends kid up last summer who was really allergic to horses and I gave her a spoonful of the elder-honey a couple of times a day and she hardly had any trouble at all riding horses every day.
