      @@TomFooleryTheAustere Greek food fighs for the nr1 spot of the world in the worlds 50 best cuisines of World Taste Atlas 2022 and 2023 onwards. Thailand is pretty nice in the list too. I would still regard it as a good cuisine.

    The finest Greek dish of all is the Stifado. It works perfectly with game meat as well. I've made it with Venison, Elk and Bison meat. Personally, I've never cooked with Shallots, I use Vidalia onions in this recipe. Next time I'll try the Shallots. Your dish looked amazing.

    Hi Dimitra, I made the stew last night and slightly modified the recipe by keeping the chuck whole and increasing the cooking time. The flavour of the meat and the aromatics and the tomato gravy were just unbelievable. And the shallots added the nicest sweetest taste to the dish. The recipe is easy to follow and is a 10/10 on the tasty scale! Thank you for sharing this with us!

    I lived in Xania, Crete in the early 70s, I would go to a taverna called Kanouria on the waterfront. The made the best stifada you could imagine and served it with a bottle of Domestica wine. I'll try this recipe.

    Hi, Dimitra. How would you feel about marinading the beef in red wine, and keeping it in the fridge overnight ? Is this something you would do ? I think the meat would be tenderised and the sauce enhanced. Just a thought. Your recipe is a good one.

    3:11 If you are browning your meat why put the lid back on? All that steam stops the browning process. Same outcome as over-crowding.

    which cut of beef works the best for this dish? Also, can i substitute shallots with red onions, as that many shallots will cost a fortune here :P

    • @DimitrasDishes
      @DimitrasDishes  8 років тому

      chuck is my favorite cut for this dish. You may substitute any small onions. If you will be using large onions I recommend cutting them in 4 chunks, keeping them from separating, and roasting them until caramelized with some olive oil and salt. Just add them to the stew at the very end. When the meat is completely cooked. Enjoy!

    Can I just cut up sweet onions and use

    • @DimitrasDishes
      @DimitrasDishes  8 років тому

      I highly recommend using some type of small onion like shallot or pearl onions. If they are difficult to find then cut up a sweet onion into 4 chunks. Try not to separate the chunks. Drizzle some oil over them and broil them on a tray in your oven until golden and soft. Cook the stew for 1 and 1/2-2 hours or until it is thick and the meat has completely cooked and softened. Add the roasted onions in the end. Shake the pot to incorporate them. Let me know how it turns out.
