I just made my cheesecake in my Instant Pot, and I made this fabulous Lemon Curd in the microwave! It only took 2 1/2 minutes in MY microwave with me stirring after each minute and then just 30 seconds more. BOTH CAME OUT PERFECT! Thank you Laura!!!!

The only tweak i had to make was i from the U.K. and struggle with cup measurements so i converted to grams & millilitres, so all good.

It took around three and a half minutes for it to thicken while stirring every minute. After three and a half minutes the mixture was not able to go a full minute because it was starting to overflow. My microwave is an 1100 Watt Sharp Carousel. At a certain point, you might want to stop and stir every 30 seconds. My lemon curd turned out great, and I made her cream puffs last night!

Longer than two weeks I’d say. I made her regular lemon curd recipe like 2 1/2-3 weeks ago, and it is still just as good and just as fresh!
