We divide our gastronomy in 3 main branches related to the 3 big regions we have, Costa ,sierra y selva (coast, mountain and jungle). You have tasted the sea food from the coast, you still have so many dishes to taste in the coast and the other 2 big branches!...... keep it up on videos, i hope u enjoy more of our food

"Red Lobster" here in the states doesn't even come close to that SUPER DELICIOUS food. And is way more expensive! Last time I ate at Red Lobster I had to use my magnifying glass to find the food!!! The portions keep getting smaller by the minute 😔 How I miss my AMAZING Peruvian food 😢 😞 😫 😭

Just to let you know, you didnt tried any CEVICHE here, even if you mentioned it many times. Here you tried a TIRADITO, yes it looks like a Cebiche, but you can consider it another dish. Tiradito had different varities according the color sauce, with Rocoto (red) with Aceituna (purple) with Ají Amarillo (the yellow one you tried) etc. The main difference between Cebiche and Tiradito is the Cebiche doesnt use any extra sauce, is just marinated sea products. The origin of these dishes are not directly related with japanese influence. I mean is not that simple, Ceviche is a plate that begins with the CARAL CULTURE, 3000 years before Christ (oldest culture at all America Continent) , at that time , we didnt got the Lemons, those arrived much later with Spain. SO the first proto ceviche were marinated With a fruit called TUMBO. Then this recipe passed trough other cultures until Incas times. Then with Spain arriving, the recipe were evolving with new products. Later With the JAPAN influence and techniques, the dish just evolved one more step, closer to the recipe nowdays. Take notice of this, At Perú GASTRONOMY TRADITION is all about EVOLVING and SHARE, in the search for the perfect mix of flavors. Is NOT about found a lot of tasty ingredients and put them together, so Even Now Ceviche is still evolving this way. As an example, Nowdays many cheffs are adding a soft glazing to the sweet potatoes at the ceviche to found the perfect combination with the spicyness of the plate. And this is something new, maybe just around 10 or 15 years ago.
Peruvian food has a quite varieties of ingredients depending of the regions in Peru personally i like ceviche del mar or sea ceviche which is made of raw fresh boneless red cod fish especially being extracted or fished on the sea and ready to be pealed off its skin and have the typical white colour to be cured in cubes by lemon marinated and left for up to 2 hours for better cooked accompany by a bit of popcorn cooked yam and a bit of spicy chili peppers and a bit of lettuces and ready to eat enjoyed folks from Vancouver Canada
La Mar is a Michlin star ⭐ restaurant it's a bit more money than others in Lima it's $$$$ if you look at Google but... Boast some excellent food I'm leaving Thanksgiving night headed back there 3rd time within a year
