    Previously I did a video on how to make tapioca boba pearls at home and some have been telling me that their dough end up becoming too stick and could not work on the dough to roll them. So just recently I've got some extra time and thought that I should improve the recipe to make it failsafe, so anyone can make it at home with ease.
    And this time, even better, I am sharing the recipe for boba pearls that are made with fresh fruits!

    Here in Brazil, we call ir 'sagu' . We can buy it at the supermarket (little dry balls) we usually cook with wine or grape juice (but you can make with other things like pineapple or pears). It's a very common dessert. You should try it with your homemade 'sagu'.

      I think we do have “sagu” that you mentioned over here, and we call them “sago”. Sago is different than boba pearls, in terms of texture, boba pearls is a lot of chewier than sago. In our region, sago is mostly used to make coconut milk infused dessert/drinks.

      You can try to make one with sweetened condensed milk as well.

    I tried this recipe and it was really good! So.. what I did: I did a mango/raspberry flavour which turned out pretty well and so I only did 2 cups and it was a lot since I am only one person. So I pureed my fruit, and made the pearls and then I took out the dough (I would recommend that you have more tapioca flour/starch on hand because I definitely needed more than the recipe said). Then I split the dough into quarters, and then the quarters in half, meaning that I would have about 130 pearls in total and I guess that equals 2 cups. What I noticed was that the dough was kind of cracking, but it was still soft. I was really worried at this point, but if it happens to you, do not worry! Thankfully when I cooked it, the looked normal and nothing split up or broke. I cooked it for 10 mins and cooled it. I did 2 batches because I was worried that some of it would dry out when I made the dough. I recommend that you do 2 batches and that will also give you a LOT of time to clean. I made a pretty big mess even though I prepared everything. Clean up as you go! You HAVE to braise it because that it where the flavours come in. WIthout it, the pearls taste flavourless. If you don't want to do this part, you can just soak it in brown sugar and maple syrup or honey to get the original flavour of boba pearls. I braised it for about 15 mins and then put the pearls in another bowl and put the bowl in the refrigerator to cool down. Some good drinks to go with it is milk, lemonade, or tea (I made orange pekoe which has a very similar taste to the tea you get when you drink pearl milk tea drink). I think that it was a bit sweet and that it would be better if I added less sugar. Overall, I loved this and I will be making it again! Also, it is VERY time consuming, but I takes about an hour to make.

    @Ethan Love your recipes. I have a friend who wanted to try putting gummy bears in his tea, so I think mixed fruit-flavored boba would be a hit!

    Hi, it looks great!! Can I use corn starch if I don't have tapioca flour? And...on your vebsite in recepe you use "cups", but how much grams(or ml) it is? And if juce is really sweet, I still need to use sugar and water?

      Hey, you can only use tapioca flour to achieve this texture.
      The recipe is based on ratio, hence I uses cup.
      If the juice is already sweet, maybe you can adjust your the water amount.

    Tryed these bud they are chewy, while here at the Lokal shops the have Tapoica ball as they call them that are juicy when they pop the have a very thin skin.. Seems here they sell something totally different as bubble thea...

    Hey Ethan, Thank you for both videos.
    Does adding floor by folding it into the dough not affect the taste of the Boba pearls? I was told my pearls where starchy tasting because I did not cook them long enough. Thank you.

      Hey!
      I did not encounter the starchy taste issue. Since it is first boiled then braised again, should be fully cooked.

      Maybe the uncooked pearls were a little bigger and needed to cook longer? Or the proportions were off. Disclaimer-I haven’t tried the recipe yet, so I’m just shooting off ideas! 😜

    Hi. Do these have same texture as pearls in regular bubble tea(boba)? I've been trying to find vegan fruit gummy recipes that do not use agar powder(i hate texture of agar...) i like very chewy bouncy texture whereas agar gummies don't have that consistency... and i feel like this can be the right alternative. Thank you so much for the video btw.

      Hey! Yes they do have the same chewy texture as the regular pearls. You can adjust the texture with the amount of time braising them. The longer u braise em, the softer they become. You will need to try to find out on this.

      You could, but the flavor leach away.

    can you mix fruits? ie, can you put two different kinds of fruit in one boba?

      Yes, but make sure the fruits are the same kind (citrus, berries, etc) but i think lemon and blueberry would taste good ;)

    This video is helpful but how come this time you dont knead the dough? Will this affect the chewiness of the boba? Thanks!

      They have the same chewiness texture.
      I found out that you only needed to knead or fold in the flour if they doesn’t come together as one piece.
      So this recipe, they will usually come out wet and stick during cooking then I added more flour to in (to lower the moisture content) and fold all the flour in. Then transfer to a working station and coat it with more flour to prevent it from stick onto our hands.

      @@3thanwong How would much brown sugar would I add if I were just doing brown sugar boba? The same as the previous video but just skip the kneading?

      Same amount of brown sugar.
      As for the flour part, keep 1/2 cup to mix in at the end when they reach the sticky consistency.

    How long can you keep these home made pearls??

      Ive heard that freezing it can last 3 weeks to 4 months, but never more than that. I keep mine for a month and make sure it doesnt get wet while frozen

      After u roll them into pearls coated in flour.
      U can freeze them, in this stage, they can be kept for months.
      Anytime when u wanna use them,
      Simply boil them at full boil then braise them.

    HOW LONG CAN YOU STORE THE BOBA PEARL AFTER IT WAS COOKED incase there excess on what it was consumed.

      Uncookea boba pearls can be freeze for months. Cooked boba pearls can last probably 5 days in the fridge
