    does the type of sugar matters? i can’t get the dark brown sugar and used brown sugar (in per piece form) instead, which i melt 50g sugar in 70ml water. the tapioca starch immediately turned hard after i poured in the melted sugar. it doesn’t give me the kind of texture as the video 😩

    I think this is how they do it in xing fu tang I saw a vid and then it looks similar
    Btw, HALPH whenever I make the dough,the starch is always making the dough clump and then when it’s finish cooking, it has raw starch in it did I do anything wrong?

      Ms Josie , you can fix it by simply putting back the dough to the pan and add 1~2 tsp of hot water ( low heat ) and cook it again until you see sticky part of the dough and knead it again. I hope this helps.

    Every time I try to make them, I get like small clumps of tapioca (from the first tbs to make it get thick) That doesn't want to get into the dough.. How do I fix this?

      It's ok if there's clumps because we will add the rest of the starch and knead . I think your dough was too dry , maybe you boiled the water and sugar for long time and the heat was too high that liquid evaporated. How to fix: put 1-2 tsp of water(or more) in the pan (low heat) and add in the dough and stir until you see sticky forms and remove from heat and knead it again until you make a nice dough.       Dave Nintendo oh then you need to wait for the water to boil you can’t put them in when its heating up because it dissolved faster then it cooks and if you did put it in when it was heated then turn the heat up

    i’ve tried to make this about 4 times and for some reason when i added the 1 tbsp of tapioca starch the brown sugar thing never thickens. what am i doing wrong?

      it maybe helpful to dissolve the 1tbsp of tapioca starch with some of the brown sugar water in another bowl;
      use a laddle take some of the brown sugar water out of the pot into another clean small bowl, add your 1tbsp tapioca and stir it till its not clumpy, add the mixture from ur little bowl into the hot bubbling brown sugar water and cook until it thickens

      You probably have to let it sit also so it can dry and thicken that’s how sugar works and so the moisture can evaporate idk I’m not a scientist

      @Heeelen93, if you have many experience using oven in drying , why not. In this video I let the pearls rest for an hour to dry and roll the pearls with the hands to maintain the round shape of the pearls. Thank you .

      Try to make this recipe
      1/2 tapioca starch
      1/3 hot boiling water (it needs to be really hot)
      Boil it for 15 mins
      Add some sugar
      And let it sit for 5 mins
      Then you rinse it with cold water, and your done.

    My freezer is drawer built … and I don’t think I can put a whole pan in the freezer :( may I know is it alright to skip that step and put it in a container first before putting it into the freezer ?

    How long can you freeze these for?
    I made a large amount and stored them in a closed container at room temp - and they got moldy after a week :( totally my fault - I thought I read somewhere that they can be stored in room temp as long as they are in an airtight container. But if I freeze these they would be good for theoretically months? Also is the texture different when freezing?

      Hello! I do not recommend room temperature because it is not safe . I recommend to freeze it with freezer bags or closed container and it’ll be safe for months. If you use food saver , it will last half a year or more. The taste and texture are still the same. Thank very much for watching my video.

      I ended up ordering tapioca flour and tapioca starch. I heard they were the same, but I'm going to try them both and see if there's any difference. Haha!
      I'm also going to try both dark brown sugar and Golden and see what they are like.

      @sunnytae , my instruction in the video is low heat. Once it's starts to boil add 1 tbsp of tapioca starch and stir for 1 minute or less then off the heat. add the rest of the tapioca starch.

      It is the same tapioca flour and tapioca starch are the exact same just in America they call it starch. For example cornstarch and cornflour in America they call it cornstarch if they are making oobleck and in England they call it cornflour to make oobleck and they have the exact same results.     Every time I do this, my dough is crumbly. The one time i thought i succeeded, the circular pearls flattens out and looks like clear flat tofu skin thay wouldn't cook all the way through. Any recommendations on how to fix?

      hAnNa MiNzツ when you said turn on the captions I immediately knew you were talking about Nino hahah. Though to be fair I also tried his recipe and got a weird crumbly dough. The boba turned out fine after I cooked it anyways, but it was extremely difficult to shape the pearls. Not sure what I did wrong either but I saw another commenter saying it could depend on the type of tapioca starch you are using

      I kneaded the dough for three hours and the results stayed the same. I firmly do not recommend this video for you. Even through this process, I tried adding water back into the dough to wet it a bit for a better consistency as suggested by another viewer; however, when I put the pearls into the boiling pan they flattened out completely. I tasted one right after and the tapioca “pearl” more like flattened ball was still full of starch. The recipe is false and frustrates me because they automatically assume how and when we should cook the dough mixture. Maybe the problem relies on the beginning if I continued to leave it on the heat. Overall try Ninos Home recipe but I can’t say I have tried it. ;( overall don’t recommend this recipe since I did it four attempts and kneaded it for hours. Really a waste of time

      No, I solved the problem. I tried cooking the sugar both briefly and also to a boil. It makes no difference.
      I found out that there are more than one type of tapioca starch. I had to have someone who reads Chinese to translate the labels for me, but there’s sticky and non-sticky versions that nobody seems to mention. The sticky version is the only one that works.

      the only tapioca starch they sell where i live is the glutinous type. i think the non sticky one may have been similar to corn starch

    Mine will get into a dry dough. If i try to kneed it, it will break. I cannot roll a normal dough. It has dry pieces and little hard sugary pieces in it. What do i do wrong?

      I think your fire was too high or you boiled the water and sugar for long that liquid evaporated and that you have a dry dough. You can fix it by putting 2 tsp of water or more ( low fire ) on the pan and cook the dough again and knead the dough again . I hope this helps . Thank you.

      @Dalia Mikhail , I cooked it more than 30 minutes but still hard and raw inside and not chewy. It tastes a little sweet but not like when you use tapioca starch it tastes so good.

    Ok I am doing something wrong - I've tried this a few times and my tapioca starch keeps coming out as a liquid solid, its not doughy ... its like hard but not quite liquid and liquid enough it wont keep it's shape and falls through my fingers but it doesn't stick to me ... its weird - what am i doing wrong here?

      Add 1 tbsp of tapioca starch into the sugar mixture and stir until the mixture is a little bit sticky( about 1 minute)then add the remaining tapioca starch and knead the dough.       Add 1~2 tsp of water on the pan where you cooked your Tapioca dough (low heat) and cook it again until water is gone or evaporated then knead it gain.       Go try it after COVID is over ( go Taiwan) the pearls have a chewy texture kinda like gummies and it has a sweet brown sugar taste to it . If u dun like milk, there are some non milk options just say black tea with pearls and no milk hope this helped
