    I find myself missing a lot of noodle dishes I had easy access to before I moved, so videos like this are a godsend, helping me to be able to eat things I enjoy but can't find in my region ♥

      I know sometimes it can be hard to find ingredients that are only produced locally, what I normally do is to find a closest substitute ..cheers🙂 thank you - Shan

    Excellent job Shan Shan on your second show for Chongqing Spicy Noodles. I was wondering about chicken power or powder, what is it and where would I go to find it? Thxs!

      John C chicken power is basically concentrated powder from chicken broth, it's used to give your dish savory taste! It's a better version of MSG( if you dont like MSG, you can skip it )You can find it at Lee Lee's market.

    holy crap i love that you build the soup right in the bowl and don't have to slow cook for a billion hours. if I want to add beef... should I pan fry before? or put it in raw and just let it cook right in the soup bowl?

      U may want to pan fry the beef thoroughly before adding it to the soup. Just the broth alone is not gonna be enough to cook raw beef in the bowl. I have more recipes on my tik tok if u have tik tok. It's called cookingwithshanshan.

      Kale Girl A good substitute will be chicken broth,which is what chicken powder supposedly made of ..or u can use mushrooms sauce instead.🙂

      你好!这些食材都可以到华人超市买到的,辣椒的话,可以随自己的口味来做,买老干妈也行,或者自己爱吃的任何辣椒都可以。谢谢:)~

    你应该用油溅干辣椒做的辣椒油 而不是辣椒酱 味道完全不一样 辣度也不同 会影响最终味道和香味 还有除了凉面我好像没有吃过放糖的小面

      还有最好是用菜油来溅海椒油 猪油烟点 只有100多度 烧热了容易产生致癌物质 菜油可以到230多度 猪油可以最后放 用面汤或者高汤烫化 外面面馆都是楞个弄得

      Carl Lee 谢谢你的这些意见,其实我也明白。只是我在美国真的还没有看到过菜油在卖,并且猪油也只能自己提前弄,比较麻烦一点。我做的这个版本算是稍微简单一点的,适合大众家庭吧,因为一般的家庭也不会花这么多时间去做个面条。 🙂

      菜油在美国好像叫canola oil 我听说是超市有卖的 主要这名字太扯了

    Fine dried noodles?No,never use it.Outside the Chongqing of China, you can buy the lamian(ramen) noodles to do it.And I suggest you do not add too many water in the sauce.

      Thank you for your comment. I didn't have ramen available to cook at the time, however dried noodles are easy to access in my area. In terms of amount of water to use for the noodles, some may like it with more broth, some may like it dry.Cheers!

      Thank you for the comment. The recipe I used here is how I remember my family cook this dish in the house, it may be slightly different from authentic Chongqing noodles recipe. But I am open to all suggestions.:) What is your way of cooking this dish?

    Hate it when they use chicken/beef powder seasoning ... MSG is not good for our health

      Jp A I know and I agree, unfortunately, most Asian food require chicken powder😂 But you can simply skip it if u like ✌🏼

      Not all asian cuisines use chicken powder. Only the chinese use it. Japanese and Koreans may use it in restaurants, but not in homecook meals. Chinese need to learn how to bring out flavors without artificial ingredients.

      MSG is really not a problem.The science has been done over and over again and the only ones who continue to warn that it's bad for your health are pseudoscientific fear mongers.

      Furthermore, it's common sense. MSG is used all over Asia and has been for decades. If MSG was bad for your health people in Asia would show elevated cancer rates or symptoms of other diseases, that could be traced to MSG. There's no evidence for this. MSG is safe, it couldn't be clearer at this point.
      That said, basically whenever a recipe says use chicken powder it can be easily replaced by chicken broth that you can make yourself. That even gives a deeper, more subtle flavor. It just requires a bit more work.

      Kale Girl hmm so are you telling me that Chinese cooking flavors only come from MSG, as if other ingredients (garlic, ginger, etc) are just there to look pretty ? Quit with your generalization. Go eat your hamburgers and hot dogs, I’m sure they are full of nutrients and free of chemicals (hah!).

      Fun fact No.1: MSG is probably the safest industrialized food additives of all. It's safe even for very large quantity of consumption.
      Fun fact No.2: Even Michelin starred restaurent use chicken powder to cook steaks. It's much easier to control the saltiness this way.
