I love that I can hear your internal struggle with wanting to remain an artist and having to accept peoples constant demand for content has changed the art world as a whole. I'm glad I'm not the only one. Being a photographer isn't enough for them anymore. The constant need for their next dopamine hit has impacted so much. I'm happy you managed to turn your niche into the reels format so successfully. I guess it made sense since your photography style was cinematic to begin with, and cinematic will naturally suit a video format. However I feel that most Instagram photographers will struggle with it, myself included. I'm a hobby architecture photographer and I'm finding it hard to come up with a creative way to turn my content into reels.
Yep it ended up really suiting me. Could always do photos synced to a beat, made a video about it about a month ago. Although admittedly those aren't as fun, at least they work.

Bare in mind that iPhone is currently the leading market on video department. Don't expect your budget/midrange android phone can match the quality of an iPhone. With that said, doesn't mean your video will look bad. It just doesn't look as great and easy to edit like an iPhone

But how do you change/regulate the ISO on the i Phone Camera? I found out how to change the exposure but not how to change the iso. Also I don’t know how to control the shutter speed. I have an I phone 13 pro

You can do everything with the phone and capcut. Not sure if you saw, the course is updated now and contains parts about filming with proper cameras too but its not necessary, its always more about what you film and not the tools used.
