Yolk - 3
Sugar - 2/3 cups
Corn starch - 2 tbsp
Vanilla extract - optional
Dough
Bread flour - 350 gr
Milk - 160 ml
Sugar - 45 gr
Yeast - 8 gr
Sugar - 10 gr add to milk and yeast
Salt - 3 gr
Melted butter - 45 ml
Egg - 1 large

but I am curious if we can knead by hand for both recipe. If we do knead by hand how long should we do it?
Also if I run out of bread flour can I use AP flour for both recipes? Any thoughts on this would be great?

All purpose will do but not as great. Hand kneading varies in time depending on how strong you are but best advice would be to match the consistency of the dough to the video. 😉

Hi Aimee. Thank you for this recipe. I tried it the first time and it’s perfect! I am curious about the custard. Have you tried it with condense milk? And if yes. What’s the ratio like? I am attempting Bánh mi Que with custard filling I had in San Jose yearssss ago. I remember the custard has a different aroma and thicker than this recipe call for so I am thinking about making it using your recipes.

Hi Aimee! May I ask what brand of flour you use? They always come out so perfect. I think the brand I use are not as good as yours.
I use King Arthur bread flour 12.7% protein.

Yes you can freeze them. Store them in the fridge, pop them into the oven to retoast.
