The Cinnamon Roll Coffee Cake with No Coffee

- Mrs B has been a bit under the weather recently, so when she spotted a recipe for a Cinnamon Bun Coffee Cake online, I had no choice but to make it for her. But wait, there's a twist! Did you know that American coffee cake recipes don't actually have coffee in them?! I'm sure some of you might prove me wrong, but this fact has totally blown my mind, and Mrs B's too!

Now this video is a bit different from my usual as I went totally out of my comfort zone by filming at a different time of day. So I decided to give you folks a bit of an insight into my daily life - my morning routine, how I film and all that. Ingredients
For the cake batter
375g plain flour
200g granulated sugar
4 tsp baking powder
1 tsp salt
360ml milk
2 eggs
2 tsp vanilla extract
115g unsalted butter
For the topping
115g unsalted butter
100g brown sugar
1 tsp salt
1 tbsp plain flour
3 tsp cinnamon
60g chopped pecans
For the frosting
105g cream cheese
35g icing sugar
1 tbsp milk
¼ tsp salt
Cinnamon Roll Coffee Cake Recipe
First up, we’re going to make the cake batter so you need to mix together the milk (the recipe specifies full fat which I rarely get, but I do enjoy from time to time!), eggs and vanilla extract - and don’t worry folks, I’ve got a video in the works all about homemade vanilla extract!
In another bowl, mix the plain flour, sugar and baking powder. This recipe has a surprising amount of baking powder but apparently gives it more of a “cake like texture” as opposed to a bread texture that you get with yeast which is sometimes used.
Now it’s time for the dry to meet the wet ingredients - pour the vanillary, eggy, milky combo into the flour mixture and the butter which wants to be melted in the microwave so it just pours in. Whisk these together, then use this chance to preheat the oven to 180C (350F) for 25-30 minutes.
While things are heating up, we’re going to make the cinnamon pecan topping which gets hidden in the middle and bunged on the top too. In a bowl, mix the light brown sugar, cinnamon and flour (which I imagine thickens the mixture slightly) then add the chopped pecans and the softened butter. Now we need to give this a quick whizz around in the microwave for 30 seconds.
Now let’s build this cinnamon roll cake! Pour half the cake batter into the bottom of a greased baking dish. Okay, so at this point I decided to add a splash of coffee just to a little section to see how it would work - feel free to do this too, or leave it out as the real recipe says! Now take the filling and put that over the whole layer. Time for the next layer, pour the rest of the cake mixture on top and scatter the rest of the cinnamon filling over that one. Swirl the topping into the batter then pop into the preheated oven for 25-30 minutes.
Once you take it out of the oven, leave it to cool in the dish while you make the cream cheese frosting. Pop the icing sugar, cream cheese and milk into a bowl and mix together. Again, I took a tiny bit to one side and added a smidge of coffee, just to see what it would be like, which I used to top the side of the cake where I’d swirled in a bit of coffee.
Finally, drizzle the frosting all over the cake, slice up and serve!

You'll generally get a stronger hit of cinnamon if you don't swirl the top layer, but let it stay on top and get a little bit crunchy, like a strudel topping.
Brits have had tea cakes for ages... They don't have tea in them... Why is coffee cake so hard for you to grasp...

Canadian here. Coffee cake here rarely if ever contains coffee.. like everything you have read it's a cake that you eat with coffee or tea. Having said that there are always things out that that break the "rules" so I am sure that there are some coffee cakes out there that do have coffee but they would generally be very rare and not what the typical American (or Canadian) would be expecting if you handed them a slice.
Back when I was around 10, I found a recipe for a sour scream coffee cake that I wanted to make for my mother for Mother's Day. I assumed since it had no coffee in the recipe that it meant to be eaten WITH coffee. I only just NOW learned that other places where coffee cake exists are made with coffee.

I personally think those giving you flak for wanting a different look to the videos or for wanting to have your two hands free to work at all time need to get a reality check, but that’s my opinion. You do you. I’ll still watch you.

mostly (yes, in the u s of a) when coffee is used, especially when you are not supposed to, it's dry instant coffee, perhaps espresso

As much as I love the classic style I think the Cam style has merit. I enjoyed the wider view and can only imagine how much that allows for more freedom in everyday life for the Barry family.

A coffee cake is like a teacake. They're both just a cake you eat alongside a cup of tea/coffee for morning or afternoon tea. Often quite mildly flavoured with vanilla or apple or cinnamon etc.
I will stand by my Grandmother's coffeecake, made with sour cream and layered with a pecan/cinnamon streusel.
Only in the US! To others coffee cake has coffee in it!!

Another thing that irritates me about Americans is that they have a coriander plant and get coriander seeds from it, but the leaves they call cilantro? The leaves are coriander, as in the name of the plant and the seeds.

I was definitely feeling frustrated for him that there were some people that weren't being so gracious about the changes. It was taking me time to get used to it as a long time viewer (but that's on me since I'm terrible with change🫣) but that's life and it's frustrating that some people wouldn't just roll with it and let him try something new.
I think what I found best about these "old school" videos is that it felt personal, like I was with you rather than you talking to some camera person. I understand the difference and enjoy either, but really just believe that personal and "I'm with you" is what UA-cam is all about.

I have never heard of a cream cheese frosting or fruit on American coffee cake. The cake is usually topped with a cinnamon/brown sugar/flour/butter mixture, which is slightly crunchy. Makes a nice texture variation.
Barry, take care of yourself and your family first and foremost. I haven’t been a subscriber for long, but I’ve watched so many videos and enjoyed them and laughed and learned a lot.
Additionally: I had a similar reaction when I first learned about and made British Coffee and Walnut cake. So delicious.
I've watched a lot of big UA-camrs over the years, particularly in the art community and the main thing I've noticed is that when you're having fun, it always comes across in videos. Have fun playing around with formats and see what feels right to you. 😊

Barry - Good for you with whatever you decide to do re: the channel going forward. Mate, I watch it for "Barry" and the extended cast and the recipes more than anything else. Yes, I'm use to a house style, but I'm sticking around whatever! Some "BarryCam" is fun as it's kinda traditional, but you got to watch your back! What I do know is that if it stops being fun for you, it will end up not being fun for us. As we say in Wales, Pob lwc!

Coffee cake is a basic quick bread like cake with cinnamon and streusel topping, sometimes with nuts, apples or other fruit. It’s intended to be eaten with a cup of coffee in much the same way you Brits have “tea cakes” which do not contain tea. American housewives used to have neighbors over for coffee in the morning, which popularized the recipe. My mother made her coffee cake (apple sour cream coffee cake) in an angel food cake pan. It sold well at school or Girl Scout bake sales. The only foods I use coffee in are Texas red chili and at times I will make coffee granita (a coffee ice, lovely served with a spoonful of whipped cream). I’m intrigued that you & Mrs B met working at a Girl Scout camp. I would love for you two to do a video giving us the details of that.

I don't know if there's a difference between osteopaths in the US versus osteopaths in the UK, and I don't want to pry into your health, but since you've mentioned your back hurting and then going to the osteopath, I wanted to share that I went to one for awhile until I found out that though they can help your back pain in the short term, they can hurt it in the long term. I trust that you know what's best for you, but I also know that we can all be pulled in by those promising to fix our problems sometimes. If you haven't researched it, please do. You have given me so much joy over the last five years that I've been watching your videos and I only wish you the best.

The coffee cake I make in America uses a more dry crumbly cinnamon,pecan,sugar that is then mixed with melted butter layer in between and on top. This one looks gooey delicious too. I have to mix mine up with actual coffee now-cause if caffeine and sugar is wrong, I don’t won’t to be right!

Fun fact according to my mother: when you want cake to serve your neighbors or family but don’t have time to frost a cake, you make coffee cake. A casual one layer cake with a topping of some sort to “finish” it , but quicker to make than a frosted cake. Kudos 👏🏻 the layers, it looks beautiful. Well done!

I put coffee in my brownies and chocolate cakes, too. It’s also a nice addition to barbecue sauce and baked beans.
Of course -- because coffee makes the chocolate taste more chocolate. Found it interesting that apparently, according to Barry, it does the same thing to cinnamon.

I watch you because I like your style of cooking and learning and trying new things. I love the very home grown feel of your production. For me, the lighting was odd when “Cam” was there (nothing to do with him, but just denoting the time that I am referencing). It was, I don’t know, too dim/grim? It lacked that warm feeling the natural light gives. Also, the camera angles you use when solo-filming are much better. Maybe the next “Cam” can be there to assist and replicate that self-shot style to a larger degree?Just wanted to drop some more love for you and your channel! Take care, Barry!
Looks delicious, but I do love coffee flavoured cake too so I would also add coffee. You must make your videos as you want them, some people don’t like change, but as an artist you grow and develop, your personality is the reason you are popular, you will find a way forward
I hope you can get Cam back, or other Cam, the videos were so good, I appreciated the level of production and I couldn't for the life of me understand why so many complained about the change and ultimately led to Cam leaving, change is good, otherwise we stagnate or get complacent, all the best with what you choose to do going forward, I definitely would love to see the new style back, you did seem that much happier with someone else with you.

One of my most favorite things that my Grandma made was coffee cake! Cinnamon, sugary deliciousness! It also had this sort of crispy brown sugar crumble on top that was most delicious! I will have to try to dig out the recipe and see if it had coffee in it!

Everyone saying 'back to the old style' and that it's better, please keep in mind that single-handedly devising, producing, filming whilst creating, editing and post-production, as well as uploading and then monitoring feedback, all whilst trying to stick to a deadline and produce multiple videos a week, is so gruelling... A compromise of styles might be needed to take the load off a little. Content-creation seems so easy from the outside, but rememebr that TV show cooks have a huge production team. Take care Barry, we will still watch you regardless 🖤
I'm American, so I grew up with coffee cake that didn't have coffee in it. I didn't know that there was a style that had actual coffee in it until seeing this video and it sounds amazing.

It was rather stonking
Coffee cake in my midwestern childhood, never had coffee in it. It was made of the same ingredients you used, but the filling/ topping was not made with melted butter. The butter was room temp and was mixed into the cinnamon sugar and flour to create ‘streusel’ , a dry crumbly mixture. Which was put in the middle and on top. And it was not frosted. I haven’t had it in years, but I might make some now. The old way that I was taught.
We would always make a coffee cake with Bisquick (a pre-mixed baking mix sold by General Mills under its Betty Crocker brand, consisting of flour, shortening, salt, sugar and baking powder). They would usually have the recipie on the box. I have wonderful memories of eating it in Sunday mornings with the family.
Well that was a cute way for MrsB to give you a "honey do" for the next day. So funny being so literal has coffee in the name must have coffee in it. Enjoy MrsB

We love you Barry. Whatever you decide to do we will support you and it's ok to embrace change, also a side note that the Southern American style coffee cake typically doesn't even get frosted and is covered in a cinnamon sugar crumble. Honestly the easy way to find what a lot of southern Americans have grown up with is to purchase a coffee cake from Entenmann's. If you can get the shipped internationally that is, though I also suggest if you decide to do that to also get some chocolate frosted doughnuts from them, they are very unique in flavor and texture compared to a normal doughnut.

The best cake ever!
When I make coffee cake and want to add coffee to it, I use instant coffee and dissolve in just a couple tablespoons of hot water. Split between swirling in the batter and mixed in icing.
Coffee and walnut cake is one of my favourite cakes, and yes, it has coffee in it and coffee flavour icing

As a Canadian, growing up it was a trick cake. Kind of a "grown up" cake, like we wouldn't want it because it had coffee in it. But then we grew up and had our minds blown when we learned no, it doesn't have coffee, that's just the sneaky adult way to keep kids from eating your cake 😂

Our coffee cake in NL canada is also a sweet type of cake with cinnamon, and shortbread type crumble on top. Yum.
I love it when I discover differences between U.S. and Canada (e.g., milk in bags). Overall, we have so much in common. But Canada is more sensible in terms of government, has many fewer firearms (lucky you), and Canadians are often nicer (though not nicer than Minnesotans -- maybe the northern climes make for nicer people).
@@TamarLitvot I was in Minnesota once and it was like being in eastern Canada. Sweet people! The rest of the stars we went to weren't so kind. I think Florida and Texas were the worst. Tennessee was ok, but hot as heck (104 f in the shade), but a dry heat. We get that here, but it's very humid, 80% to 100% humidity, so it's like breathing in hot shower air. LOL. But ours only lasts about a month then we're back down in the 20s (68 to 77 f). We went in 89, and it was 7 of us in a van that only had two windows that opened. LOL. Not a fun trip for us younger people who had to sit in the back. LOL
@@LifeOfNigh We have a saying in the States -- "Minnesota Nice." We're not Minnesotans but ended up doing about 5 summer vacations in northern Minnesota and everyone was extremely nice. We loved it there.
I wonder if people in TX and FL were unfriendly because you were young folks in a beat-up van and might have been considered hippie-types (I'm an old faded hippie myself😂).
@@TamarLitvot no no. LOL. My sister and I, and my cousin were in the van with my parents and aunt and uncle. We were between 13 & 15. Us cousins were in the back of the van with no windows to open, sweating to death, lol, and the adults were up front enjoying the views. It's funny when mom talks about that 1 or 2 month trip through the states (I think it was one) she talks about stuff I don't even remember seeing. The only thing I remember really was our cruise to the Bahamas and Disney world, which I didn't like. Just not used to that many people in one place I think. The van wasn't a hippie type van. More of a traveling "van life" van, which back then didn't have windows the opened in the back. Just a vent on the roof that didn't do a thing. That and we had our hard top carrier over the vent. But I have to say, I didn't enjoy the states much. But again, I think it was just because it was so crowded. I grew up in Newfoundland, and the most populated place we had ever been at that time was Toronto, where I was born and traveled back to the year before our trip to the states. After that trip, we decided to stay away from the states and just stick to traveling across Canada. There's so much to see. I even did the train myself from Edmonton, alberta to Truro Nova scotia.that went through most provinces, and absolutely loved it. I've lived in most provinces at some point, non or the territories though. Now, my aunt and uncle who did that van trip with us, travel to Florida every January and come back in May, called snowbirds, and they love it. My parents love going on cruises. They're in their mid 70s now and have a European cruise trip planned for September, going to Paris, Italy, and a bunch of other ports. We all love to travel. But the US isn't on our list of favourite places to go unfortunately.

Love your country. We tried to get to PEI just before the pandemic, but we stupidly were traveling in September and PEI and Novia Scotia (both of which I'm dying to visit) were hit with a hurricane. I'd love to go to Newfoundland -- hey, is it pronounced newFOUNDland or NEWFoundland?

I have such fond memories of coffee cake. My grandma would make two large pans and we would share it among the whole family for an afternoon coffee/tea time! I think ill have to give this recipe a go!
This recipe does sound good we dont put pecans in our cinnamon rolls just cinnamon sugar with icing sugar. And its rolled. But this sounds so good and a good mix and even better with actual coffee u got something going on here! My mind is all over the place on what i could make!! Yum
So I think you should have a cooking with Cam segment whenever you feel like you need a little company while cooking. Either way I'll be watching, I can't eat most of the things you make because of migraine triggers but I love watching the videos😊

I have never heard of a coffee cake that didn't have coffee, maybe it's a regional thing. This would often be referred to as a cinnamon roll cake. The most common cakes served with coffee in my area are crumb cakes, or very basic white or yellow cake, not always frosted.
