Southwest Ranch & Quinoa Salad | How I Lost 30 Pounds in 90 Days | Vegan Nutritarian Salad Recipe

  • So many requests for more big salads, Ranch dressing, and southwest flavors -- this recipe combines ALL those requests into one huge vegan, nutritarian salad. The quinoa salad can be made days ahead of time for a grab and go lunch salad solution. If you're sticking with "component meal prep" like I talked about previously, this whole salad will come together in less than 15 minutes! The dressing will keep fresh in an air tight container for at least 4-5 days.
    Ranch Dressing (recipe from Hello Nutritarian hellonutritarian.com/no-oil-t...) -- makes 6 servings (each serving ~1/3 cup)
    14 oz package firm tofu
    1/2 cup water, divided
    3 tbsp nutritional yeast
    2 tbsp lemon juice
    3 tbsp fresh curly parsley, finely chopped (sub 1 1/2 tbsp dried)
    1 1/2 tbsp fresh dill, finely chopped (sub 3/4 tbsp dried)
    1 1/2 tbsp fresh chives, finely chopped (sub 3/4 tbsp dried)
    1 tsp onion powder
    1 tsp garlic powder
    For Southwest Ranch, add 1-2 TBSP Taco Seasoning
    Taco Seasoning Recipe:
    4 tablespoon chili powder
    3  teaspoons ground cumin
    2 teaspoon black pepper
    2 teaspoon smoked paprika
    1 teaspoon garlic powder
    1 teaspoon onion powder
    1 teaspoon crushed red pepper flakes
    1 teaspoon dried oregano
    Quinoa Salad Topping - 6 servings
    1 Cup raw quinoa, prepare to pkg directions
    2 cans black beans
    2 cups corn
    2 cups bell peppers
    1 cup cherry tomatoes
    1/4 cup red onion
    2 jalapeños
    zest of 2 limes
    juice of 1 lemon
    2 TBSP taco seasoning
    6 clam shells of salad greens (I like baby kale)
    3 ripe avocados (half per serving)

      @@christinek22 It's the Breville Boss. They've discontinued it and replaced with The Super Q blender. It looks like the same thing, but a differently shaped jug. I'm very happy with mine -- I've had it since 2015 and haven't had any issues.

    Honestly would have never thought of the tofu in the dressing! I've used tofu in smoothies for creaminess and it works there. You have become my salad go-to!

    Hi, Geoffrey. This recipe is fantastic! My husband can't have Quinoa, it just doesn't agree with him, so I think I'll substitute millet in this recipe. I didn't know you could eat tofu without cooking it. Your sauce seems like a game changer to avoid vegan mayo based sauces and still get that creamy texture.

      You can just leave out the parsley if you don't like the taste. I used curly here which is a bit more mild than Italian parsley.

    This looks so yummy! I was surprised that you didn't use a silken tofu for the dressing; however, yours turned out so nice and creamy even with regular firm tofu. That is great to know, as I rarely remember to buy the silken. Thank you for these recipes! 🌱

      When I first started all of this these types of ingredients seemed so weird. Now I am 3 years in and traditional American diet foods are seeming weird to me. It's all what you get used to, so just try different things out and see what you like!

      It’s been a while since I read “Eat to Live” so I don’t remember the exact reason quitting coffee was recommended. I think caffeine can cause hormone and energy swings making it harder to stick to an eating plan. I’ve since resumed drinking coffee though.

    I wonder if you could come up with anything like the Wilted Salad. The dressing is hot because you heat it up on the stove. But it's bacon - and that doesn't fit this eating lifestyle. But some warm dressings would be a great thing for variety and cold evenings. love all you have been doing ❤️

    I have been watching your lost 30 pounds in 90 days videos. I want to say thank you for opening up recipes that are easy to prepare. I wanted to ask that in your 90 days journey, did you vary your salads? Or did you stick to the same salad twice a day for 90 days?

      During the original 90 days I ate basically the same salad twice every day. If I wasn't using the ginger-miso hummus, I used either salsa or plain citrus juice or plain red wine / balsamic vinegar. I didn't find it to be too repetitive, but now that I'm making all these new types of salads, it's definitely more exciting and easier to stick with 😅

    I just started Eat to live exactly 1 week ago after watching one of your older videos!! Must say I am doing amazing however I had no idea how badly I would miss salt!       Getting used to not adding salt takes time, but it definitely gets easier! It takes a few weeks for a taste bud "reset" since most prepared foods have so much added sugar, salt, etc.

    Holy dill, Batman! I'm def using half the dill next time and I added the paprika from the linked recipe as well as her amount of black pepper. I won't make that mistake again (because I'm def making it again). Still edible though. I'll try adding the taco seasoning when I do the sw bowl tomorrow.

    I'm wondering if you eat things like a tofu scramble? If so, I'd really be interested in seeing how you make it. Also, I started to cut up my greens like you suggested and it makes them so much easier to eat.

      I've used tofu as a topping on grain bowls and for this dressing, but aside from that it's not something I generally buy. I still eat eggs sometimes, so if I want a breakfast scramble, I just go for real eggs. Glad you're enjoying the cut up greens! So much easier to eat that way 😄

    I’m always interested in sodium counts and serving sizes. Serving size is vital with counts. Of course taco seasoning mixes such as you made are the easiest to customize just by omitting salt but other ingredients such as canned beans, olives, pickles, sambal oelek or sriracha are very high in sodium too.

      I’m a sodium counter too. I feel like people don’t really consider sodium. Since paying attention, I have learned it is added to almost eeevvvverreryyyything.

    I made this dressing it’s so good. I didn’t make the southwestern yet.
    The biggest problem with being oil free is the dressings.
    I can’t stick to a wfpb oil free when everything tastes bland or terrible😭

    Great recipes Geoffrey! I prefer to avoid tofu because it is estrogenic. What other option would you recommend in replacement of tofu?

      I think soaking cashews in water and then blending will be the best alternative to tofu. White beans may work, but I suspect the bean flavor will come through a bit.

      I love cashew cream as a salad dressing and then I thin it out with water and just use a couple of tablespoons with my salad to keep the fat low. One recipe I really enjoy is not even a salad dressing one, though I modified it to be, and it is from Yeung Man Cooking's UA-cam video on Ultimate Vegan Nachos and it is the cheese sauce recipe and i just leave out the oil and add a bit more water to thin it out to a dressing consistency. You can also add lime or lemon juice to it or even apple cider vinegar for a bit of tang.

    Enjoying your videos, Geoffrey. I've made this salad and the other Southwest salad. Love the creamy dressing, but is a bit bland to me. I guess you left salt out for added healthiness and sodium reduction? I've been putting jarred "sweet n hot" peppers in mine to give it some pizazz. A salad with curry might be good.

    I just tried making the chickpea/cilantro/lime dressing and to be honest, I just discovered I do NOT like cilantro lol. I need to keep trying your recipes to find my golden ticket dressing. These look good, I love a creamy dressing.

      Oh no! Cilantro is definitely NOT for everyone. I made an avocado pesto sauce that might be a nice salad dressing actually. It's really thick and creamy.

      White beans or soaked cashews would work well here. Cashews have a more neutral flavor (imo), but white beans will keep the nutritional more in-line with the original recipe (lower calorie and fat, higher protein).

      My blender is from 2015 and they don't make it anymore. The new model that replaced it has a redesigned jug that's less square and comes with a single-serve jug, too.       Brewer's yeast would work, but it's slightly more bitter vs nutty like nutritional yeast. The only other thing would be actual Parmesan (or a processed vegan faux-Parm alternative).

    Salad greens looks dry. How do you get your salad greens dry or water free as possible? I've gotten to a point where I want salad greens dry minimal wter no water. Help.

      The baby greens I buy are triple-washed and hydroponically grown, so I don't pre-wash before eating. I have a salad spinner, but it just can't get the baby greens dry enough for my liking. If you salad spin and then pat them try with an absorbent lint-free towel you'll get 90% or more of the water off.

      Exactly -- each serving is a 5oz clamshell of salad greens. The goal with the "Eat to Live" approach is to eat as much veg as you need to stay full. I.e.: if you ever feel hungry you'd eat a bigger salad at your next meal.

      I just made the green chickpea/cilantro/lime salad dressing he showed and I didn’t care for it at alllll. I don’t think I’m a fan of cilantro.

I just ordered the yeast powder...... hoping to find a couple dressings I enjoy because I will avoid salad all together if I don’t have a dressing I love.       I think the chickpea flavor might come through too much vs the blank canvas of tofu. That said, it’ll probably still taste good!

    Can you please help in making a good Caesar salad and making a good Caesar salad dressing is the key ! There are so many recipes out there it’s overwhelming and most of them use raw eggs ! Yuck 🤢 Thank you for all your great recipes!

      Yes! I will make a healthy Caesar salad video soon. I have one made with cashews, roasted garlic, and nutritional yeast -- it tastes pretty close to the real deal, but without the oil and eggs.

    Hi Geoffrey! Congrats on your weight loss. I love the salad recipes you put up. they aren't boring! My favorite salads are chicken caesar salad and the quesadilla salad from Chili's. Neither are very healthy. I am a type 2 diabetic and starting a weight loss journey myself. Any chance you could come up with healthy versions?
